Food of the Rainforest
In Peru, you can distinguish three different regions, which are coast, highlands, and
rainforest. This time I will tell you a little about the cuisine of the rainforest region. In this
area you can find a variety of fauna that are consumed, including various types of meat such
as wild pig, worm or suri, armadillo, tortoise, tapir, and paiche, among others. One of the
most outstanding foods in this region is paiche, a fish that is characterized by its large size, is
the second largest fish in fresh water, and can weigh up to three hundred kilos and measure
up to 2.5 meters long .
Among the typical dishes of the rainforest include the "juane" and "tacacho" with cured meat.
The "juane" is a traditional dish eaten mainly in the festivities of San Juan, held in June. It is
prepared from rice, chicken, and eggs. These ingredients are then wrapped in a leaf of
"bijao," a leaf similar to the banana leaf, and once it is wrapped it is then boiled for about an
hour and a half.
The "tacacho" is fried bananas mashed with pork butter, and the cured meat is a salty meat
that is dried in the air. Both foods are served together, creating one of the most popular
dishes of the Peruvian jungle.
In the Peruvian rainforest you will not only find a variety of delicious foods that may be
unfamiliar to many of you but also discover one of the major natural regions of Peru.
