2. Una de las cosas que normalmente me preguntan cuando conozco gente de otros
países es qué bebidas alcohólicas tomamos en el Perú. Por eso esta semana les voy a
contar sobre los licores peruanos. El licor nacional del Perú es el pisco, el cual es
elaborado a partir de la uva. La elaboración de este licor empieza en marzo de cada
año cuando las uvas son cuidadosamente acopiadas en los viñedos de la costa
peruana. El pisco puede ser elaborado a partir de dos variedades de uva locales, la uva
quebranta y la uva Italia.
3. Existen cuatro variedades de pisco en el Perú, dependiendo de las uvas utilizadas para
la elaboración de este licor, así como también el proceso de destilación con el que se
lleva a cabo. Estas cuatro variedades son el pisco puro, mosto verde, acholado y
aromático. El pisco puro se caracteriza por su fina destilación y que se prepara de una
sola variedad de uva. El pisco mosto verde es elaborado por mostos frescos
incompletamente fermentados. El pisco acholado es el de mayor grado alcohólico y es
elaborado con diferentes variedades de uva. Este pisco es el que normalmente se usa
para la elaboración del pisco sour, bebida nacional peruana. Finalmente el pisco
aromático es el pisco elaborado de uvas pisqueras aromáticas.

1. One of the things people usually ask me when I meet people from other countries is what
are the alcoholic beverages we drink in Peru. So this week I'll tell you about Peruvian
liquors. The national liquor of Peru is the "pisco," which is made from grapes. The
development of the liquor starts in March each year when the grapes are carefully
stockpiled in the vineyards of the Peruvian coast. The "pisco" can be created from two
local grape varieties, "quebranta" grape and Italy grape.
2. There are four varieties of "pisco" in Peru, depending on the grapes used for the
preparation of this liquor, as well as the distillation process that takes place. These four
varieties are the pure "pisco," grape green, "acholado," and aromatic. Pure "pisco" is
characterized by fine distillation and is prepared from a single grape variety. The green
grape "pisco" is produced by fresh musts fermented incompletely. "Pisco acholado" is the
one with higher alcohol content and is made from different grape varieties. This "pisco" is
normally used for the production of pisco sour, Peru's national drink. Finally, the aromatic
"pisco" is made of aromatic "pisco" grapes.
3. Like "ceviche," "pisco" has also a special day set aside on the Peruvian calendar. In
1999, it was established as Peru "Pisco" Day, which is held the fourth Sunday of July.
Similarly, we also celebrate the Peruvian "Pisco" Sour Day every first Saturday of
February since 2004.

tour that will show you the vineyards, cellars, and their pisco. Some of the pisco tours are in
the coastal part of Lima, Chincha, Ica, Arequipa, Moquegua, and Tacna. I am sure you will
have a good time learning about this drink while tasting it.
