RESUMEN
ABSTRACT
In the characterization and processing of agricultural products, the moisture content
is one of the main physical characteristics to be determined, however, it normally
requires several hours to obtain the results. In this work, two techniques were
compared to determine the moisture content of apple, pea, cucumber, and spinach.
The so-called conventional technique here and the microwave oven technique.
Different powers were used in the microwave oven, a sample size of 10g and a
certain moisture content of the product from time to time until obtaining statistical
values equal to those found by the reference or conventional method. The real
possibility of using the microwave oven as a rapid method to determine the humidity
of apple, pea, cucumber, and spinach was verified. The results showed that there
was no difference between the applied techniques, suggesting the use of the
microwave oven for reasons related to exposure time, efficiency, and practicality in
determining the moisture content of agricultural products.

Las diferencias existentes y presentes dentro del método con estufa (directo) y
Balanza automática O’HAUS MB 45 (indirecto), se encuentran asociadas a
factores externos tales como la humedad relativa y la temperatura del ambiente,
ya que al encontrarse expuesto a este tipo de entornos alteran la medición en el
momento de tomar un valor real respecto a las muestras que son objeto de estudio
en el laboratorio; por tanto, podemos evidenciar que la diferencia está dada por
decimales entre los dos métodos de análisis.

Los granos contienen además agua líquida bajo tensión osmótica. Se trata
de agua solvente que retienen diferentes sustancias en las células del
material biológico; aparece débilmente adsorbida, cumple un papel biológico
y puede permitir las reacciones químicas (enzimáticas), además del
desarrollo de hongos; se elimina, en gran parte, con el secado.
