Corta la papaya en tres, dividir la fruta de esta forma nos facilitará el proceso de realización del dulce. Cuando las lechosas están verdes, suele brotar una especie de leche blanca. Baja la llama y continua con la cocción a fuego medio hasta que el papelón se derrita. Espera alrededor de 15 minutos. Revuelve un poco, de vez en vez, con un cucharon de madera. La idea es conseguir un almíbar oscuro a partir del papelón.. Con un colador de tela cuela el almíbar y coloca las tiras de lechosa dentro de otra olla. El almíbar debe alcanzar para cubrir todas las tiras. Cocina por hora y media con la olla tapada, revisando cada media hora. Ve removiendo un par de veces con cuidado de no romper los trozos de lechosa. Para saber si el dulce está listo recoge algo de líquido dentro del cazo con una cuchara de madera. Déja caer un poco, lentamente, y si el fluido parece un hilo delgado, el dulce está listo.
