PRESENTACIÓN
Un aspecto menos difundido, pero que cobra cada vez mayor importancia en el
contexto actual de la salud global, es la relación entre la ganadería intensiva,
orientada a responder a una demanda de carne en continuo aumento, y el
riesgo de emergencia y propagación de enfermedades zoonóticas. Al mismo
tiempo, el uso abusivo de antibóticos en la cría de animales genera las
condiciones para el desarrollo de resistencia bacteriana; fenómeno que causa
miles de muertes al año.

aumentado significativamente, a nivel global y regional, la proporción de la población
que comienza a adoptar estas formas de alimentación. Esto ha generado una nueva
demanda en distintos ámbitos, como, por ejemplo, los mercados locales, que cada vez
incorporan más productos cien por ciento vegetales a su oferta habitual.
Los patrones alimentarios basados en plantas son adoptados cada vez por más
personas y también aparecen cada vez más en guías clínicas y posicionamientos
científicos. Al ser diferentes al patrón alimentario occidental habitual, el
acompañamiento y consejo profesional a estos consultantes se pueden presentar como
un desafío, que exige que los profesionales de la salud se formen y actualicen
específicamente en estos temas.
Asimismo, hoy estamos viviendo una era en que las enfermedades crónicas no
transmisibles son las primeras causas de mortalidad y morbilidad, cargando de manera
excesiva al sistema de salud y limitando el bienestar millones de personas, a pesar de
los avances científicos en los tratamiento farmacológicos y quirúrgicos de estas
patologías, generando un problema que no es sostenible en el tiempo con gastos
económicos cada vez mayores. En las últimas décadas, se ha desarrollado investigación
que demuestra que las intervenciones de los hábitos pueden ofrecer un tratamiento
eficaz para la prevención, el manejo y la reversión de estas enfermedades, por lo que es
fundamental que los profesionales de la salud conozcan y apliquen estas estrategias,
incluyendo la alimentación basada en plantas como una herramienta clave en la
mantención de la salud de las personas, el tratamiento eficaz de las enfermedades
crónicas no transmisibles, y la mitigación de la crisis climática actual.

International Board of Lifestyle Medicine (IBLM) del Colegio Americano de Medicina del
Estilo de Vida (ACLM por sus siglas en inglés). Fundadora y Presidenta de la Sociedad
Chilena de Medicina y Nutrición Preventiva (SOCHIMENUP) y miembra activa de la
Sociedad Chilena de Medicina del Estilo de Vida (SOCHIMEV). Directora y docente
principal del diplomado de “Alimentación basada en plantas en Medicina” de Escuela
Plantando Nutrición en Chile. Docente en pre y postgrado en diversos espacios de
formación profesional en nutrición basada en plantas y medicina del estilo de vida.
