Resumen
Abstract
This work exposes the microalgae production process and its application in various
products. Microalgae are of great relevance due to their components with beneficial
properties, playing a crucial role in nutrition and health. Scientific studies are carried out
to deepen our understanding. The bottom line is that incorporating a specific proportion
of microalgae into empanada dough results in improved flavor and ultimately health
benefits. This approach focuses on the search for sustainable and environmentally
friendly alternatives for the manufacture of personal hygiene products. The study
highlights the feasibility of producing Chlorella vulgaris biomass on a laboratory scale
using chitosan synthesized using the Acid-Base method. The results obtained
established a basis for future research on the use of microalgae as a renewable source,
which would contribute to the development of more sustainable and environmentally
friendly promising technologies.
