In addition to being a source of protein for humans, meat foods are also products
contaminated with pathogenic microorganisms, given that, in Mexico, consumers of these
products generally buy them in markets or stores where they are not under hygienic
standards. Therefore, it has an important impact on the public health system. The objective
of this project was to investigate the presence of Salmonella spp in a sample of raw chicken
from the municipality of Cuernavaca, Morelos, obtained in a store where no standards are
applied that establish that the product is suitable for consumption, by means of
microbiological culture and biochemical tests. The methodology included the application of
NOM-210-SSA1-2014 based mainly on four successive stages, pre-enrichment stage,
selective enrichment; isolation in selective and differential culture media, and biochemical
identification and serological confirmation of the microorganisms, where at the end,
microscopic verification with Gram staining and identification with biochemical tests were
carried out. The results confirmed the presence of a significant variety of bacterial agents
involved in contamination in raw chicken, such as Salmonella spp. Based on the study, a
recommendation is made for the application of hygienic-sanitary and biosecurity norms in
order to offer healthy products for human consumption.
