Seliwanoff
Prueba de Seliwanoff
Los monosacáridos son glúcidos o
hidratos de carbono sencillos los cuales
están constituidos por una cadena de
cetonas o aldehídos

La prueba de Seliwanoff es una


reacción para diferenciar cetosas
de aldosas. Está basada en la
formación de furfural o derivados,
dando un color rojo intenso para
cetosas y rosa para aldosas.
Método práctico
Experimentación N° 1

Materiales:
- 2 ml de monosacárido
Experimentación
- 2 ml de reactivo de Seliwanoff
● Agregar los 2 ml de reactivo de
Seliwanoff a nuestro monosacárido.
● Colocar en baño maría por 5
minutos.
● Observar la reacción.

Experimentación N° 2

Materiales: Experimentación
- 1 ml de solución de fructosa ● Agregar los 3 gotas de reactivo de
- 1 ml de solución de glucosa Seliwanoff a cada una de las muestras.
- 1 ml de solución de sacarosa ● Colocar en baño maría por 5 minutos.
- 1 ml de solución de maltosa ● Observar la reacción.
- Reactivo de Seliwanoff.

LA ESPECTROSCOPIA FT-IR EN LA IDENTIFICACIÓN DE
POLISACÁRIDOS OBTENIDOS DE LOS FRUTOS DEL “NÍSPERO DE LA
SIERRA” Y DE LA “GRANADILLA”

La aplicación de la espectroscopia FT-IR en este


proyecto fue para determinar el nivel de metilación de
las pectinas(polisacaridos), que fueron extraídas de
frutos como el níspero y la granadilla, que a la vez se
hizo para determinar el grado de esterificación
metilica(GEM) , una vez que las muestras fueron
confirmadas sus espectros fueron comparados con dos
pectinas comerciales(cáscaras de cítricos,pulpa de
manzana).

Como se sabe el níspero se caracteriza por


tener una cubierta membranosa y la
granadilla tiene una característica
organoléptica por su valor nutritivo,además
se sabe que las pectinas se forman en la
pared primaria y en los tejidos
mesenquimaticos y parenquimáticos de
frutos y vegetales.

POLISACÁRIDO- PECTINA

La pectina es un esencial polisacárido lineal que está


constituida principalmente de unidades de D-ácido
galacturónico (GalA). Entre los cuales se encuentra los
ácidos uronicos , azúcares neutros.
