Scope:
Independent quality inspection of Pink Lady® apples at source pack house, cold storage at destination and pre-packers
at destination.
Purpose:
1. Ensure the quality of Pink Lady® apples conforms to the international quality specification.
2. Protect the Pink Lady® brand from poor quality stock by maintaining high quality standards.
3. Assist licensees in identifying non-conforming product and making corrective actions.
Inspection period:
The entire packing season, targeted to key periods for blush colour or eating quality:
Inspection frequency:
Total inspection number will be proportional to the volumes processed through each source pack house, cold
storage at destination and pre-packers at destination.
A minimum of 2 visits per facility will be compulsory with an approximate frequency of one visit per 250-300
tons packed.
Quality history of the facilities, diversity of the origins and packaging will also be considered, when determining
the inspection frequency.
1. Preliminary visit. Conducted annually at the beginning of the season in the presence of key quality and
packing shed contact persons. The goal of the preliminary visit is to educate and align quality standards and
inspection methodology.
2. Routine visits. Conducted during the entire season, targeted to key quality periods. Visits will typically be
announced, but unannounced inspections may be conducted if deemed appropriate by Master Licensee to be
warranted.
3. Follow-up visit. Conducted in response to a pervious non-conformance.
A batch is defined as fruit coming from one grower in one country, supplied by one exporter, and consisting of
only one mutant and one fruit size.
Quality inspectors are to assess a minimum of 2 different batches per site visit
For facilities repacking products from bushels, double layer or bin etc. into trays or retail unit prepacks,
foodtainers or bags etc. inspectors must assess:
o A sample of Pink Lady® apples received directly from the supplier not yet repacked. The facility shall
clearly indicate the destination of the batch and whether it will be repacked or be sold in the current
packaging.
o A sample of Pink Lady® apples among the batches that have already been repacked by the packing
facility.
Non-conforming product:
I. A batch is defined as fruit coming from one grower in one country, supplied by one exporter, and
consisting of only one mutant and one fruit size.
II. Quality inspectors are to assess a minimum of 2 different batches per site visit, completing a separate
assessment for each batch.
I. Seek out and obtain access to all Pink Lady® branded apples that have been packed.
II. Select a total of 10 carton/crates across all pallets within the batch.
I. Take a photo of carton, fruit sticker and any available labelling or traceability information.
I. From each of the 10 cartons/crates, select 10 apples for a total of 100 apples for further inspection.
I. From the 100 apples previously selected, randomly select 10 fruit for internal defect assessment.
II. Cut each fruit transverse cross section along the equator.
III. If no fruit has internal defect, record zero defects.
IV. If 1 or more fruit has an internal defect, cut the remaining 90 fruit and record the total number of fruit
with internal disorder.
Step 8 – Firmness
I. From the 100 apples previously selected, randomly select 10 fruit for firmness and Brix testing.
II. Using a fruit peeler, remove and discard a thin slice of skin from two sides of each fruit.
III. Place the fruit on a hard surface. Using a penetrometer with a 11 mm tip, push straight down into the
exposed flesh, using enough force to take 2 seconds to push the plunger to the marked line.
IV. Record 2 firmness measurements per fruit for 10 fruits.
V. Calculate and record average firmness.
VI. If average firmness is less than specification requirement, randomly select 20 additional fruit and
record 2 readings per fruit. Calculate and record average firmness for a total of 30 fruit.
Step 9 – Brix
I. Calibrate a digital or manual prism refractometer using distilled water or standardised brix solution.
II. Using the same 10 fruit as for firmness measurement above, cut a thick slice from both the blush side
and the non-blush side of each fruit. Squeeze a few drops of juice from each slice onto the
refractometer. Record 1 reading per fruit. Wipe the refractometer clean between each sample.
Alternatively, a centrifugal juicer can be used to extract the juice.
III. Calculate and record average brix.
IV. If average brix is less than specification requirement, randomly select 20 additional fruit and record 1
reading per fruit. Calculate and record average brix for a total of 30 fruit.
