Resumen
Abstract
The starch is the fundamental piece if it is a carbonated reserve in higher plants. The importance of this polymer
is practically due to the diversity and high quantity in which it is produced, the universality of its distribution,
is another fundamental factor for its wide commercial use. Starch and sugars play a crucial role in the "energy
of vegetables", also performing regulatory functions. The biosynthesis of starch and sugars, as well as their
interaction with development processes are essential when it comes to metabolizing starch. Potato (Solanum
Phureja) plays an important role in food security throughout the world, the energy and nutrient contribution of
the world population is based on potatoes (IFPRI, 2002), being the fourth important crop in basic food human,
after rice (20%), wheat (18%) and corn (5%) (FAO, 2009). The starch content in this culture is specifically
based on type a and b, where its structure largely depends on the length of the chain composed of amylopectin,
the packing density of the starch granules and the presence of water.
