ABSTRACT
Proteins are molecules composed of carbon, hydrogen, oxygen and nitrogen, they are of large molecular weight which
fulfill functions such as structures, as well as tissue regulation. The main objective of this practice is to know the
structure of proteins. In practice, several methods were used to identify proteins such as the Biuret Test, xanthoprotein
test, among others. These tests were carried out with egg albumin since it is a great source of proteins, the results of
which were positive in each test. revealing the physical-chemical properties of proteins when interacting with certain
substances.
