¿Que es el chocolate?
Sustancia alimenticia que se
elabora con una pasta de
cacao en polvo y azúcar
pulverizado y que se presenta
en diversas formas y
variedades según los procesos
de elaboración utilizados y los
ingredientes añadidos
Historia del chocolate
Se sabe que el primer lugar en donde se cultivó cacao fue México. Allí, el pueblo maya
descubrió que si las semillas de cacao se tostaban y se mezclaban con agua y otros
ingredientes como el maíz, el resultado era una bebida rica y nutritiva.
Cuando los españoles llegaron a América, vieron por primera vez el árbol y las
semillas de cacao, ya que en Europa no existían. Dice la leyenda que el conquistador
español Hernán Cortés fue el primero en probar la extraña y desconocida bebida, le
pareció riquísima y nutritiva. A partir de entonces, los barcos empezaron a regresar a
España cargados de granos de cacao y la receta para preparar el chocolate líquido.

QUIMICA DEL CHOCOLATE
Uno de los alimentos cuya composición química presenta
características excepcionales en comparación a otros
alimentos es el chocolate no solo por la gran variedad
de componentes químicos que forman su estructura
en todas sus variantes, desde el cacao puro hasta el
chocolate procesado, sino también por cómo estas
sustancias actúan en nuestro organismo en los
procesos bioquímicos del mismo.
El chocolate es una mezcla compleja que contiene hasta
800 compuestos en cada delicioso cuadrito.
Entonces dependiendo del tipo de chocolate, ya sea negro, con leche o blanco existirá una cierta
proporción de cacao y una composición diferente; las cuales vamos a conocer a continuación.
