ABSTRACT
The starch extraction was carried out in different foods in order to know its quality and
performance according to its source where it was possible to know the characteristics of the
starch granules during their hydration process where it was possible to observe how the
grains increased in size until they were measured more than double that when they had not
yet been subjected to heat.
