RESUMEN
ABSTRACT
In this paper the overall coefficient of heat transfer by convection in fluids (apparent) and

El pH del alimento
El estado físico del alimento. El tratamiento térmico debe ser realizado de manera que
permita la comercialización del producto, sin peligro de que ocurra un deterioro por
microorganismos. Por otro lado, un tratamiento térmico no debe ser excesivo, pues puede
causar alteraciones físicas y pérdida importante del valor nutritivo en el alimento.

CONCLUSIONES
1. ¿Qué representa el valor del coeficiente de calor por convección y como se usa?
Para una determinada situación puede evaluarse midiendo la tasa de transferencia de calor
y la diferencia de temperatura o midiendo el gradiente de temperatura adyacente a la
superficie y la diferencia de temperatura.
Es una propiedad física de la materia en que se requiere una cierta cantidad de calor para
producir un cambio en la temperatura, por unidad de masa de una sustancia determinada. A
esto se le denomina calor específico de la sustancia.
