Desde Mugaritz se entiende la gastronomía como una
www.apicius.es herramienta para compartir inquietudes. Inconformistas por
naturaleza, trabajan buscando respuestas a preguntas, las
dudas son los pilares en los que se sujetan para avanzar, se
cuestionan, se plantean, se autoexaminan día a día.
Libertad, esta palabra es constante en el discurso de Andoni.
Lipertad para crear, libertad para gestionar, libertad para ser.
Cada año es un año nuevo y se vive como tal a pesar de que
ese planteamiento esté intrínsecamente unido al concepto
del Riesgo; siempre expuesto al éxito, al fracaso, a las dudas
e incluso a la crítica.

Amargord. Gloria y amargura de un gordo hondo y otros cofrades tercos y sordos. Fernando Huidobro.
Somos juguetes de la ventura como las hojas otoñales del árbol caídas lo son del viento, y así nuestras aventuras pueden volverse
desventuras por mor de comerlo y beberlo todo. Eso fue exactamente lo que le pasó a este gordo lirondo que siempre va conmigo,
que no ceja en el empeño de llevarme por el camino donde se mezcla el ansía con las ganas de comer, la agonía con el exceso y se
malmarida y amalgama, todo ello, en mi cuerpo faisandé. Mondo pero vetusto organismo el mío al que hace tiempo que le vengo
cogiendo manía, y al que, tras esta última jugada, se la tengo jurada. Aunque por mero apego, tendré que acabar perdonándolo.
Estábamos en San Sebastián y andábamos ya por la zona euskara excediéndonos astronómicamente en comilonas y bebercios,
pasando, al menos yo, olímpicamente, de cierto evento electoral. Lo normal: ejercicios preparatorios no muy espirituales y bien
alejados de los de San Ignacio aunque recorriéramos los mismos andurriales. Sin saberlo entonces, en este pecado llevaba ya mi
penitencia. Llegó el momento de tomar la salida hacia Murgaritz: “es preciso que lleguemos a la frontera antes de anochecer… por
donde quieras…” iba canturreando mi mente por Phil Manzanera en ese inacabable y hasta ahora inalcanzable ascenso hacia la
tercera estrella, curva tras curva en continuo traqueteo, toma y daca y vaivén que Andoni está aguantando y encajando como su
vecino Perunena lo hacía sobre su bici. Como un campeón.
Así llegamos a la meta todo el equipo, sin resuello. Eramos ocho, Cofradía de Tercos y Sordos. Más de veinte años en carretera
corriendo Vueltas, Giros y Tours culinarios, recorriendo restaurantes, estómagos empedernidos, barrigas acomodadas, espíritus
agradecidos, paladares sabios más por viejos que por diablos. Pinchando y recauchutando, acumulando michelines. Como egregio
gregario, iba en cabeza, había ido tirando del pelotón durante la subida, conozco el terreno, cada repecho, quería llevarles en
volandas hasta Mugaritz con orgullo, con todo ese amor que le profeso. Ilusión y predisposición, como en cada temporada. Pero mi
esfuerzo iba a tener un precio, la fatiguilla había empezado a hacer mella en mí mareando mis entrañables entrañas.
Una vez allí los juegos de otoño dieron comienzo, ceremonia de apertura, paseo hasta la cocina, presentaciones y salutaciones de
rigor, bienvenida en armonía, relajación y contento. Y la alegría de besar a Susana por supuesto. Tapeos varios en inicio de zurito
cervecero pero de legumbres tostadas y olivas (¿cómo no? pero no); cristales y corales de crustáceos; focaccia parrillera de
almidón de pureraria; salsa en crujío de calabaza; fruta empapelá. Alegría, buen genio, juego de géneros, sorpresas e invenciones
varias con las que satisfacer el comezón del comienzo. Entrantes que ya no me entraban bien. Algo extraño se cocía en mi interior,

algo incierto aburría mi estómago impidiéndole divertirse. Premonitoria ardentía que carcomía mis mondongos y a la que estaba
dispuesto a ningunear hasta el extremo. Nada iba a estropear esta cena concertada y avisada con tanta buena gana.
Llegaba el segundo vuelco de verduras y “legumbres”, una etapa muy de la casa en su afán y amor por la delicadeza de sus sabores
en el inusual y respetuoso trato que a estos productos de cercanía íntima dispensan: un tallo de cardo rojo, una bechamel y coliflor
y un sublime potaje de avellanas que eran alubias rojas en realidad, textura, dulzor, pellejillo y sabor. Una receta proeza, técnica y
originalidad, untuosa, gustosa, genial. Degustándolas, mental y gustativamente maravillado, andaba yo cuando la bestia de mi
pasado reciente, en imborrable recuerdo de algún malévolo crustáceo o así de los miles ingeridos, estalló en mi interior...
Cuando volví, ya se afanaban mis congéneres conmilitones en el entretenimiento de un entremés ideado para mano y almirez,
música de golpe y crujir de especias y semillas, donde volcar un rico y tenue sopicaldo de pescados y hierbas frescas. De seguido
un quesín al momento, inmediato, crema viva encerrada en su propia corteza que se desparramaba sobre paralelepídedos de seta
boleto apenas pasados por el tostado del calor. Un plato claro y directo. Y a renglón seguido: shhh, no digas nada a nadie, muérdete
la lengua deshilachada en maraña de finas hebras cárnicas. La última virguería de la mente andoniana y la factoría Mugaritz,
impensable e irrealizable a priori, sofisticada y espectacular ¡Sólo esta casa es capaz de encerrar el silencio y emplatar el habla!.
Pero me callo, que como siempre, ya estoy escribiendo demasiado. ¡Come y calla!. Pero yo, ni lo uno ni lo otro. No pude currarme el
mortero, una cucharada de caldo bebí, la punta del cuchillo dejé mojar en queso, un hilillo deslenguado sorbí. (...)
A mi regreso, los pescados daban paso al vuélcamo fuerte, a los platos enjundiosos (sí, han leído bien, enjundia en Mugaritz) de
este menú brutalmente completo. Sí. Los tiempos están cambiando de verdad, la lluvia cae a jarros y no es fácil seguir andando/
levitando por las ramas del roble: ¿decaen, resultan insuficientes quizá, aquellos momentos en los que se veneraba la levedad, la
sutileza y la sotileza? Ya no es caso el seguir cantando a grito pelao con Bowie aquello de que nada va a cambiar mi mundo a
través del universo espacio-tiempo. Creemos que construimos nuestras naves a prueba de fuego, ignífugas, sí, como nuestra
ilusión, y navegamos con ellas incluso de noche, a ciegas, confiados y seguros, soberbios, diría yo; pero aunque los dioses no nos
manden a luchar contra los elementos, casi siempre, no sé si agraciada o desgraciadamente, terminamos quemando nuestras
propias naves y contemplando como arde nuestro ardor. La evolución y el tiempo no esperan a nadie.
Pero dejemos los pecados y volvamos a los pescados. A la pescaera de anzuelo de un cabal lomo de merluza servido en un jugo
lechoso de brotes de coles estofadas con cobertura oleaginosa a mitad de camino de un leve pil-pil sin ligar, diría yo. Tremendo
tocho terso, laminado, jugoso, perfecta cochura, nácar oloroso y sabroso, recreación de lo vasco, pureza y melancolía. Y luego,
texturas de pescado de bajura, lubina de alta cama, señora de sus señores, amada por unos vividores como nosotros. Robalo del
Golfo de Bizcaia en tierras guipuchis.
Y allí seguía yo y el cabrón de mi cuerpo insano, viendo pasar por mis narices estas frescuras gustosas y gloriosas sin poder casi
mordisquearlas, pero sintiéndolas íntimamente, rebotándolas en mis doloridas sienes y mi atormentada alma gastró, salivando sin
ingerir, aguantando como un machote hasta el límite que vino de seguido y me llevó, otra vez, a pasear la sala y salir al exterior en
busca del revificante aire del monte norte. Allí, inesperado, desde la sombra, salió a mi paso el buen samaritano José Ramón, quien
atento, aliquindoi (como decimos por Málaga) a lo que sucedía, me servía en la bandeja de sus manos y la delicadeza del que sabe
y quiere cuidar de corazón, una infusión atisanada y estrellada como la noche para sanar la nada de mis males y dar calor interior a

I was busy tasting these, my mind and taste buds in complete wonder, when the beast of my recent past, an indelible
memory of some malevolent crustacean or other of the thousands ingested, exploded inside me...
When I returned, my fellow brothers were toiling away entertaining an appetizer designed for pestle and mortar.
There was a blast of music, the crunch of spices and seeds and a rich yet simple broth of fish and freshly cut herbs.
This was then followed by a fresh cheese, a live cream enclosed in its own crust that sprawled out over parallelepiped
constructions of lightly toasted boletus mushrooms. It was a clear and direct dish. And immediately afterwards,
“shhh, don’t say anything to anyone, bite your tongue frayed in a tangle of fine meaty filaments.” This is the
latest wonder to emerge from the Andonian mind and the Mugaritz factory, a priori unthinkable and impossible,
sophisticated and spectacular. This is the only restaurant capable of containing silence and serving speech! But
I shall stop talking because, as always, I am writing too much. Shut up and eat up! But neither really did it for me.
I couldn’t operate the mortar; I sipped one spoonful of broth and I wet the tip of my knife in the cheese and swallo-

Upon my return, the Fish were giving way to the main dish, to the substantial dishes (yes, you have read this
properly, substantial in Mugaritz) of this terribly complete menu. Yes. Times really are changing, the rain falls in
bucketfuls and it is not easy to continue walking/levitating along the oak branches: are those times when lightness,
finesse and subtlety were revered now insufficient perhaps, fading into nothingness? It is no longer the time to carry
on singing at the top of your voice with Bowie nothing’s gonna change my world across the space-time universe.
We believe that we build our ships to be fireproof, fire resistant, yes, like our dreams. And we sail in them even by
night, in the darkness, trusting and sure, arrogant, I would even dare to say. Yet although the gods do not send us to
fight against the elements, almost always, whether this be fortunate or unfortunate, we end up burning our own
vessels and seeing how our ardour goes up in flames. Evolution and time wait for no man.
Nevertheless, let’s leave the sins and return to the fins. We return to a fine line-caught hake fillet served in a creamy
jus of braised cabbage sprouts with an oily coating a bit like a mild pil-pil sauce without merging flavours. It was a
tremendously smooth fillet, laminated, juicy, perfectly cooked, with a pearly aroma and taste, a recreation of all that

there was I with my bloody deranged body, seeing these glorious and tasty fresh dishes pass before my very eyes
while hardly being able to take a bite. Yet I felt them intimately, ricocheting in my pained temples and my tormented
gastro soul. I was salivating without ingesting, taking it like a man to the limit that soon came and drove me, once
more, to abandon the room this time to stroll outside in search of some revitalising north mountain air. There,
unexpectedly, from the shadows, stepped the Good Samaritan, José Ramón. Well aware, aliquindoi (as we say in
Malaga, Spain), of what had happened, from the tray in his hands he served me, with the delicacy of one who truly
knows and wants to help, a herbal tea, starry like the night to heal my ills and infuse inner warmth into my horror.

Having recovered a scarce amount of energy thanks to this gesture, I bit the bullet and greedily jumped back into
the heat of the final bonfire: meaty viands in the penultimate round in the form of stewed thrush in aniseed gravy:

My ugly mug, broken and ailing, had seen all I have just told of pass before it; I had seen all those dishes being devoured,
without participating. Like the eyes of Dirk Bogarde in his physical and moral decline, which moved alone and
followed the unattainable virgin beauty of that rosy-cheeked Polish boy who was the object of his most intimate and
irreparable wishes and desires, thus I sought my own, angular, astounded and drooling with each of the dishes in
that welcoming, pure and complete menu. For me, in my physical decrepitude and lustful spirit, in that moment,
when they were exactly as I desired, improbable. Hinc ille ululatus (hence that lament). What martyrdom, what a
most anguishing aftertaste! What Bitterguts!
The desserts had not come yet, but my mouth could wait no longer. And neither could my bed. For although my
sweet tooth and greed tempted me to once more try those spectacular broken walnuts, toasted and salted, cool
milk cream and Armagnac jelly and other new sweetnesses, I was momentarily conscious and lucid, praise be to
God, knowing that this would be the After Eight that would be the last straw needed for my body to explode like
that of Mr Creosote in The Meaning of Life. And I didn’t want this, did I? Or yes, actually, what the hell? More than
anything so as not to leave all the work to my friends and those sitting opposite me and so as to not dirty this
beautiful dining room with my inners, I decided to let it go and prepare for my last trip. At this point I had already
walked around the room from corner to corner five times and all the other clientele began to recognise me and
greet me when I passed. “I think he hasn’t come here for dinner", I heard someone say to my left. “Yes, they must be
showing a documentary on zebras in the washroom”, someone said to my right. However, the truth is that if they
had been able to see me closer, they would have clearly been able to see the tracks of my tears.
With the deafening and painful disorder of my appetite crippling me, I left the restaurant, very quickly, cursing
myself, vomiting bilious words (the only thing I had left), assisted by the delicacy and sympathy of Elisabeth and the
taxi that awaited me. What had I done to deserve to be punished in such a way? I asked myself sighing like Boabdil,
expelled and cowardly, not knowing how to defend the Mudaritzian empire like a man. But I shall return. That I
promise you and I swear it crying with anguish: As God is my witness, I'll never be hungry in Mugaritz again!

ingredientes: 1 l de caldo de alubias, 200 g de tocino ibérico. ingredientes: 200 ml de agua, 20 g de kuzu, 40 g de

Cuando el conjunto alcance el hervor, retirar del calor
colocar en el fondo de un cuenco o plato hondo. Cubrir el
conjunto con más potaje concentrado y disponer los
cristales sobre el conjunto.

process: Cut the onion into even-sized cubes. Blanche in process: Place the water and the beans in a pressure

ingredientes: 4 manzanas frescas, 350 g de kaolín, 20 g de cardamomo de buena calidad.
proceso: Triturar el Kaolín con el cardamomo usando un procesador de alimentos. Tamizar bien.
Por otro lado, pelar la manzana y secar su superficie con un poco de papel. Envasar las manzanas con el Kaolín aromatizado
usando el programa de máximo vacío. Macerar durante 8 horas en refrigeración.
Transcurrido este tiempo, retirar y reservar el exceso de kaolín intentando mantener cada manzana rodeada de una costra de
arcilla para prevenir su oxidación. Justo antes de servir, retirar la última capa de arcilla de la manzana y de ser necesario, cubrir
cualquier imperfección con más kaolín aromatizado seco.

Colocar la fruta dentro de sobres de papel y servir acompañados de astillas de madera de manera que actúen como pinza para
