Resumen
Abstract
This article presents the content of the muña (Minthostachys mollis), we will also see the
muña as a great source of calcium in our body and its other benefits.
On the other hand, it was also determined that the percentage of calcium bioaccessibility in
infusions and decoctions of muña is greater than the percentage of bioaccessibility of
calcium in fresh cow's milk, with the decoctions of muña being the ones with the highest
absorption percentage (52% ). In addition, it was observed that the muña when subjected to
a thermal process favors the concentration of calcium, which leads to improving its
absorption percentage.
