ON / OFF
El encendido/apagado del horno se realiza mediante el interruptor general ON/OFF. Cada
vez que se encienda el horno se muestran los valores usados en la última ejecución, haciendo uso
de los valores por defecto si es la primera vez que se enciende el horno.

SELECCIÓN TIEMPO
Para seleccionar la función tiempo, pulsar el selector de función 10. Todas las opciones se
iluminan manteniéndose intermitente la opción seleccionada. Girando el selector general 18 cambiar
la selección y elegir la opción tiempo (11.2). Una vez seleccionada la opción se valida tanto
pulsando el selector de función como el selector general.
El tiempo de cocinado se selecciona pulsando el selector de tiempo (8) y girando el selector
general hasta obtener el tiempo deseado. El valor se confirma tanto pulsando otra vez el selector de
tiempo (8) como pulsando el selector general 18.
Cuando el tiempo llega a 0, el número se pone intermitente, comienza a sonar la bocina y
parpadea la luz al ritmo de la bocina hasta que la puerta sea abierta o pasen 30 segundos. Si la
puerta sigue sin abrirse, el aviso acústico/visual se realiza durante 30 segundos cada 3 minutos.
La temperatura del horno se selecciona pulsando el selector de consigna temperatura (6) y
girando el selector general hasta obtener la temperatura deseada. El valor se confirma tanto
pulsando otra vez el selector de tiempo (6) como pulsando el selector general (18)
La temperatura real del horno se muestra en el indicador 9.1.
El contador de tiempo (cuenta atrás) se muestra en el indicador 7.1.
Tras seleccionar el modo de cocción y cerrar la puerta, pulsar el botón start/stop (19) y el
horno comenzará a funcionar con los parámetros indicados.
A continuación se muestra el rango de temperatura como el valor por defecto para cada modo
de funcionamiento:
• Convección: Rango [20..300] 160 por defecto.
• Mixto: Rango [20..250] 140 por defecto.
• Regeneración: Rango [20..180] 120 por defecto.
• Vapor regulable: Rango [35..125] 80 por defecto.
• Vapor: Rango [99] 99 por defecto.

FUNCIONES AUXILIARES
COOL DOWN
Para enfriar la cámara de cocción proceda de la siguiente manera:
Estando la puerta cerrada y siendo la temperatura del horno superior a 45ºC, pulsar el
selector de funciones especiales 14 (COOL DOWN). Todas las opciones especiales se iluminan y
con el selector general (18) seleccionar la opción COOL DOWN (15.1). Validar la opción tanto
pulsando el selector de opciones especiales (14) como pulsando el selector general (18).
Seguidamente abrir la puerta.
La turbina se pone en marcha. Cuando la temperatura de la cámara llega a 45ºC, se para
automáticamente.
El ciclo de enfriamiento se detiene pulsando de nuevo la tecla 19 ó cerrando la puerta, y el
indicador cool down se apaga.
Advertencia: No enfriar el horno aplicando directamente agua fría en la cuba.
MEDIDAS DE SEGURIDAD: Durante este ciclo deben de estar bien anclados en su
posición tanto el cubreventilador como las guías de bandeja.
La cámara de cocción no debe enfriarse con agua fría.
PULSADOR HUMIDIFICADOR
Para activar el humidificador, pulsar el selector de opciones especiales (14). Todas las
opciones especiales se iluminan y con el selector general (18) seleccionar la opción PULSADOR
HUMIDIFICADOR (15.2). Validar la opción tanto pulsando el selector de opciones especiales (14)
como pulsando el selector general (18).
La entrada de humedad funciona solamente si la puerta está cerrada y el horno está en
modo start (si esta en modo Stop hace caso omiso de la señal).
Con esta función se consigue muy buena elevación de los productos de panadería por la
introducción rápida de humedad.
Suave brillo de los productos horneados.
Se aconseja utilizar en períodos cortos de tiempo.

INDICADOR DESINCRUSTACIÓN
Cuando el horno detecta automáticamente un exceso de cal en los conductos, informa por
medio de la pantalla (texto informativo general 3) de la necesidad de desincrustar.
El la pantalla aparece el aviso DESINCRUSTACIÓN parpadeando, siendo este parpadeo
cada vez más rápido en función de la necesidad de la desincrustación, llegando a ser un mensaje
continuo cuando la desincrustación es obligatoria (llegados a este caso el horno solo trabaja en
convección).
La desincrustación es una función a realizar por el SAT, con lo que en caso de
necesidad de desincrustación, le rogamos contacte con el técnico de mantenimiento.
Para desincrustar, acceder a la función pulsando el selector de funciones especiales y
seleccionando la opción desincrustación (15.3). La validación de la opción se realiza pulsando el
selector de funciones especiales (14) o pulsando el selector general 18.
En la pantalla aparece el mensaje “SELEC TIEMPO” y hay que seleccionar el valor de
tiempo que se quiera desincrustar el generador de vapor, entre 30 y 480 (por defecto 120 minutos).
Validar el valor de tiempo mediante el selector general. Esperar 3 minutos.
En la pantalla aparece el mensaje “ROCIAR DESINCRUS”.
Soltar el panel lateral del horno (Fig. 2) y acceder al generador de vapor. Soltar la tuerca de
desincrustación (Fig. 3) e introducir el desincrustante en el generador de vapor.
Validar la desincrustación con el selector general.
Durante la desincrustación, la pantalla indica el texto “FX DESINCRUSTAR” y el tiempo que
le resta a la operación, siendo X la fase en la que se encuentra el proceso.
Una vez terminada la desincrustación, la pantalla indica el texto “FIN DESINCRUS”.

Con el selector de configuración se pueden modificar ciertos parámetros predeterminados
• Idioma: Selección del idioma deseado. Español por defecto.
• Configurar Fecha y Hora: Configuración de la fecha y la hora del momento.
• Configurar Delta: Permite seleccionar el valor que se quiere asignar a delta, valor usado
siempre que se trabaje en la función delta. El rango de delta será de 20 a 80, siendo 50 el
valor por defecto.
• Configurar escala temperatura: Permite seleccionar la escala en el que se quiere visualizar
la temperatura, ºC (por defecto) o ºF.
• Parada térmica: Esta opción posibilita configurar el funcionamiento del temporizador, esto
es, cuándo tiene que comenzar la cuenta atrás de una temporización realizada. Si Parada
térmica se pone en activo, el horno no comenzará a descontar el tiempo de consigna hasta
que el aparato llegue a la temperatura de consigna. Por el contrario, si se pone Parada
térmica a NO, opción por defecto, la cuenta atrás comenzará tan pronto como se pulse el
botón START/STOP.
PROGRAMACIÓN RETARDADA
El acceso a la programación retardada permite encender el horno en la hora deseada con
los parámetros configurados.
Para ello, primeramente hay que configurar el horno con los parámetros deseados, pulsar el
botón de programación retardada (16) y seleccionar la fecha y la hora inicial. Una vez validado, el
texto superior indicará que el horno se encuentra programado, mostrando la fecha y la hora de
comienzo.
Para abortar la programación realizada:
• Pulsar de nuevo el mismo botón
• Si el horno es apagado o puesto en marcha mediante el botón START/STOP, la
programación también quedará anulada.
Para acceder a esta opción el horno deberá estar encendido pero en modo STOP.
START / STOP
El horno empieza a ejecutar las consignas introducidas tanto en modos de cocción,
temperatura y tiempo cuando se pulsa por primera vez el botón START/STOP.
Una nueva pulsación interrumpe el funcionamiento quedando en espera.
En el caso de tener seleccionado un tiempo determinado, pulsar por segunda vez el botón
START/STOP significa interrumpir la cocción y reiniciar el tiempo al valor que previamente se había
seleccionado.

TIPOS DE FALLO
Cuando se produce un error:
• El timbre suena de forma intermitente.
• En el texto superior del display aparece un mensaje de forma intermitente.
• Si se pulsa el botón START/STOP, el mensaje de error permanece pero deja de sonar el
timbre.
• Para borrar el mensaje de error y que deje de sonar el timbre, hay que desconectar la
tensión del controlador o bien que desaparezca el fallo que provocó el error.
• Cuando desaparece el fallo que provoca el error, las salidas vuelven a actuar con
normalidad.
A continuación se indican los errores que se pueden dar en el horno, indicando el mensaje que
ha de mostrarse en cada caso y las consecuencias que tiene en el funcionamiento del horno.
E1 Sensor TC
DESCRIPCIÓN:
Sonda de cámara estropeada.
TC está fuera del rango [-5..330].
CONSECUENCIAS:
El horno queda completamente deshabilitado.
E2 Sensor TN
DESCRIPCIÓN:
Sonda de núcleo estropeada.
TN está fuera del rango [-10..330]
CONSECUENCIAS:
Se deshabilitan las funciones pincho y delta.
E3 Sensor TV
DESCRIPCIÓN:
Sonda de vapor estropeada.
TV está fuera del rango [-5..330].
CONSECUENCIAS:
Solo se puede trabajar en modo Convección, omitiendo la condensación de agua.
E4 Sensor TG
DESCRIPCIÓN:
Sonda de gas estropeada.
TG está fuera del rango [-5..330].
CONSECUENCIAS:
Solo se pude trabajar en modo Convección.

INTERFACE
A continuación se muestra (fig. 1) la interfaz diseñada para los hornos VISUAL, compuesta
por 11 botones, una ruleta con pulsador de propósito general y un display de 153x89 mm.
retroiluminada mediante un backlight blanco.
Como se puede observar en la imagen, existirá un interruptor general ON/OFF para el
encendido/apagado del horno, además del botón START/STOP para que el horno comience o deje
de regular.
También existen 2 botones que permiten acceder a la programación retardada o la
configuración del sistema funciones que detallaremos más adelante.
El resto de los botones permiten seleccionar la línea deseada, rotando entre los iconos de la
fila o seleccionando el valor del display indicado mediante la ruleta disponible. Mientras se esté en
proceso de selección, el icono o display seleccionado estará parpadeando (mostrando el nombre
del icono seleccionado en el texto superior), manteniendo fijo el resto de los iconos de la fila. Una
vez se haya seleccionado el icono o el valor deseado, deberá ser validado pulsando la ruleta
mencionada. En caso de que no se haya validado pasados 10 segundos desde el último giro de la
ruleta o la selección de la fila realizada, también validará la opción o el valor seleccionado.

Pantalla general
El display del horno (fig. 2) consta de 4 números formados por displays de 7
segmentos, 15 caracteres usados para proporcionar información al usuario y 17 iconos, en los
que sólo es posible iluminar o dejar opaco cada uno de ellos.
o Modo de funcionamiento (2ª fila): Selección del modo en el que el usuario quiere que
funcione el horno. A continuación se indican los modos disponibles:
• Convección
• Mixto
• Regeneración
• Vapor regulable
• Vapor
Cuando se encienda el horno, será configurado con los parámetros que fue apagado.
Si se cambia de función, se guardarán los valores de la función con el que se estaba
trabajando, cargando dicha configuración en caso de que se vuelva a esta función.

Pantalla Off
Cuando el horno se encuentre apagado, sólo estará visible el icono de reloj y la primera
línea de caracteres, mostrando la fecha y la hora que se tiene programado en formato DD-MM-AA
HH:MM, llenando los 15 caracteres de los que se dispone.
Programación retardada
Acceso a la programación retardada que permite encender el horno en la hora deseada con
los parámetros configurados.
Para ello, primeramente habrá que configurar el horno con los parámetros deseados, pulsar
el botón de programación retardada y seleccionar la fecha y la hora inicial.Una vez validado, el texto
superior indicará que el horno se encuentra programado, mostrando la fecha y la hora de comienzo.
Para abortar la programación realizada, se pulsará de nuevo el mismo botón. Si el horno es
puesto en marcha, también será abortada la programación realizada.
Para acceder a esta opción el horno deberá estar encendido pero en modo STOP.
Configurar sistema
Botón para el acceso a la configuración del sistema, en el que se podrán configurar los
siguientes apartados:
o Idioma: Selección del idioma deseado. Español por defecto
o Configurar Fecha y Hora: Configuración de la fecha y la hora del momento.
o Configurar escala temperatura: Permite seleccionar la escala en el que se quiere visualizar
la temperatura, ºC (por defecto) o ºF.
o Configurar Delta: Permite seleccionar el valor que se quiere asignar a delta, valor usado
siempre que se trabaje en la función delta. El rango de delta será de 20 a 80, siendo 50 el
valor por defecto.
o Parada térmica: Esta opción posibilita configurar el funcionamiento del temporizador, esto
es, cuándo tiene que comenzar la cuenta atrás de una temporización realizada. Si Parada
térmica se pone en activo, el horno no comenzará a descontar el tiempo de consigna hasta
que el aparato llegue a la temperatura de consigna. Por el contrario, si se pone Parada
térmica a NO, opción por defecto, la cuenta atrás comenzará tan pronto como se pulse el
botón START/STOP.
Teniendo en cuenta la naturaleza de la pantalla con el que se está trabajando, todo el menú
deberá quedar reflejado en la primera línea de la pantalla, pudiendo hacer uso de los displays de 7
segmentos para mostrar las diferentes opciones existentes.
Para la navegación entre diferentes opciones del árbol de menú, se hará uso de la ruleta,
pulsándolo para validar o entrar en la opción seleccionada, de la misma forma que se hace en el
apartado Ajustes
Para salirse del menú, se selecciona la opción SALIR, volviendo al funcionamiento normal del
horno.
Para acceder a esta opción el horno deberá estar apagado.

¾ Identificación horno
o Versión software: Posibilita visualizar la versión software que incluye el horno.
Versión software de la tarjeta de portamandos
Versión software de la tarjeta de cámara
Versión software de la tarjeta de vapor o caldera
Versión software de la tarjeta de gas (Si el horno es de gas)
o Número de serie: Opción que permite insertar o visualizar el número de serie del
horno en cuestión. Se podrá introducir una secuencia alfanumérica de hasta 10
caracteres.
Para cambiar el valor programado, simplemente pulsar el botón de la ruleta. El
carácter a cambiar parpadea individualmente, modificándolo mediante la ruleta,
validando y pasando al carácter posterior con una nueva pulsación del botón
mencionado. Tras validar el último carácter, se volverá al menú principal.
o Número de comprobador: Opción que permite insertar o visualizar el número de
la persona que ha comprobado el horno. Se podrá introducir una secuencia de 3
números.
¾ Calibración: Opción para poner en marcha el proceso de calibración de los termopares.
Para entrar, pulsar el botón de la ruleta.
¾ Comprobación SAT: Opción que permite poner el horno en modo Comprobación SAT.
Para entrar pulsar el botón de la ruleta.
¾ Fiabilidad: Opción que permite poner el horno en modo Fiabilidad para comprobar la
fiabilidad de distintos componentes del horno, debiendo seleccionar uno de los 4
programas establecidos para ello. Para poner en marcha el programa seleccionado, pulsar
el botón de la ruleta.
¾ Historial: Opción que permite visualizar el historial del horno. Para entrar pulsar el botón de
la ruleta.
¾ Feria: Opción que permite poner el horno en modo Feria. Para entrar pulsar el botón de la
ruleta.
¾ Salir: Opción para salirse del menú y volver al funcionamiento normal del horno. Para ello,
solamente se tendrá que pulsar el botón de la ruleta.

Controles de Encendido
Las cajas de combustión que se usarán en los hornos Visual de gas:
• Ineco: CE usado en los hornos de bandeja 1/1
• Honeywell: CE usado en los hornos de bandeja 2/1
• SIT: CE que será usado en los nuevos hornos indirectos que se van a desarrollar
Tabla velocidades
A continuación se muestran las velocidades por defecto para cada modo de funcionamiento,
dependiendo del módelo de horno y el tipo de gas seleccionado. Los valores en rojo son valores
orientativos ya que no existían en los hornos viejos.

Funciones adicionales
Visualización de termopares
Cuando se pulsa durante de 5 segundos el botón Configuración sistema, se debe mostrar el
valor de todos los termopares (Sonda de cámara, sonda de vapor, sonda de núcleo y sonda de
generador de vapor).
El horno sale de esta función cuando el usuario suelta el botón, recuperando los valores con
los que se estaba trabajando.
Cool down
Estando en cualquier modo de trabajo, siendo TC>45º, cuando se selecciona esta función y
sólo cuando la puerta está cerrada, las salidas LZ, M/P, Ms/Mb y D/I (este último queda en la
posición que estaba) actúan inmediatamente hasta que TC baje hasta 45ºC, visualizando el mensaje
“ABRIR LA PUERTA”.
Al abrir la puerta la función continúa actuando pero sólo visualiza la temperatura real de la
cámara.
Mientras actúa la función, si se pulsa de nuevo este botón, se cierra la puerta o TC<=45, la
función se para, desaparece el mensaje y se reestablece el funcionamiento normal del aparato.
Si se entra en este modo mientras el horno está en modo START, pasará a modo STOP
automáticamente.
Humidificación
La pulsación del botón Humidificar activa la salida VHM de la tarjeta Control Cámara, esto
es, el horno estará inyectando agua mientras el botón permanezca pulsado.
El horno sólo debe inyectar agua si se encuentra en modo START, haciendo caso omiso a
la pulsación de dicho botón si se encuentra en modo STOP.
Vaciado automático.
Estando en cualquier modo de trabajo, VAC actúa durante 3 minutos cada X horas de
regulación del horno (cualquier modo menos convección, siendo TG>60ºC) y sólo en el momento de
encender el horno, si TC<=60ºC y TG<=60ºC. Si se apaga el horno antes de que se cumplan los 3’,
al volver la alimentación vuelve a comenzar el ciclo de vaciado de 3 minutos. El tiempo de
funcionamiento acumulado será reseteado en caso de realizar un lavado.
Mientras está en marcha el proceso, se visualiza el mensaje “VACIANDO CALDERA” en el
texto superior, indicando el tiempo restante para terminar con el vaciado.
Existirá una opción secreta para abortar el proceso en cuestión, pulsando el botón
START/STOP durante 5 segundos.
Detección de cal.
Estando en cualquier modo de trabajo, si la sonda TG alcanza:
o 125ºC Î Se muestra el mensaje “DESINCRUSTAR” en el texto superior de la pantalla, con un
parpadeo cada 2 segundos.
o 140ºC Î Se muestra el mensaje “DESINCRUSTAR” en el texto superior de la pantalla, con un
parpadeo cada 1 segundo.
o 155ºC Î Se muestra el mensaje “DESINCRUSTAR” en el texto superior de la pantalla, con un
parpadeo cada ½ segundo.
o 180ºC Î Se muestra el mensaje “DESINCRUSTAR” continuamente en el texto superior de la
pantalla, pudiendo trabajar con el horno sólo en modo Convección.
Una vez se haya mostrado un mensaje, éstos no desaparecerán hasta que se realice la
desincrustación, aunque la temperatura de TG descienda o se apague el horno, en cuyo caso el
mensaje reaparecerá al volverlo a encender.

Desincrustación
Estando en cualquier modo de funcionamiento con IP cerrado, al acceder a esta función,
actúa LZ y:
Se muestra el mensaje “SELEC. TIEMPO”, tiempo para la desincrustación entre 0:30 y 8:00
(2:00 por defecto).
Esperar hasta que el usuario lo valide mediante el botón de la ruleta.
Fase 1: VAC actúa durante 3 minutos
Se muestra el mensaje “ROCIAR DESINCRUS” y se espera hasta que se valide.
Fase 2: VDV actúa hasta llegar al nivel Máx., el calderín se llena de desincrustante
Fase 3: CV actúa hasta que TG alcanza 61ºC. Cuando TG baja por debajo de 58 ºC vuelve a
entrar CV hasta llegar de nuevo a 61ºC, así sucesivamente durante el tiempo seleccionado por
el usuario. El display va descontando el tiempo que falta.
Fase 4: VAC actúa durante 3 minutos.
Fase 5: VDV actúa hasta alcanzar N.max.
Fase 6: VAC actúa durante 3 minutos.
Fase 7: VDV actúa hasta alcanzar N.max.
Fase 8: Actúa modo Vapor hasta que TC alcanza 95ºC.
Finalmente se cierra esta función y aparece el mensaje “FIN DESINCRUS”, quedando todas las
salidas a cero (excepto RG) hasta que se apague el horno.
La pantalla indica en todo momento que se está realizando el ciclo de desincrustación,
mostrando el número de la fase en la que se encuentra (“FX DESINCRUSTAR”) y el tiempo que le
resta.
Si durante el tiempo que dura el ciclo de desincrustación se aborta la operación mediante
una nueva pulsación del botón de desincrustación o se apaga el horno, se procederá de la siguiente
manera:
a). Si no ha llegado a la fase 2 Î El ciclo se da por terminado
b). Si ha llegado o superado la fase 2 Î El ciclo se sitúa en la fase 4.
Calibración.
Al activar esta función se visualiza el valor de los 4 termopares (TC, TV, TG, TN).
Primeramente se pone el horno en modo Vapor hasta que TC llegue a 99 grados. Este paso
se considera un paso preliminar a la calibración y no se debe de tener en cuenta como tiempo de
calibración.
Seguidamente, actúa la salida CV continuamente de modo que las sondas TC, TV (sólo en
hornos eléctricos), TG y TN midan valores entre 90 y 110ºC. Cuando se hayan estabilizado todos los
valores que miden las sondas de temperatura, 40 segundos sin que valor alguno haya cambiado,
las sondas se tomarán como referencia de 100ºC, calibrando todos los termopares. De esta forma,
se anotará la diferencia de todos los valores respecto a 100, valor usado para el ajuste de
posteriores visualizaciones de los termopares.
La calibración puede ser abortada pulsando el botón de la ruleta o el botón OFF.
En caso de que no se haya conseguido calibrar en 15 minutos, se mostrará el error correspondiente

Historial
Estos son los datos que han de ser guardados en el historial. Para pasar de un apartado a
otro se hará uso de la ruleta.
La pulsación del botón de la ruleta durante 5 segundos reseteará el valor que se está
visualizando. También debe existir la posibilidad de resetear todos los datos históricos
conjuntamente.
Horas Convección: Horas totales de trabajo en modo Convección.
Horas Mixto: Horas totales de trabajo en modo Mixto.
Horas Regeneración: Horas totales de trabajo en modo Regeneración.
Horas Vapor regulable: Horas totales de trabajo en modo Vapor regulable.

Fiabilidad
A continuación se indican los programas de fiabilidad existentes. Todos ellos deberán ser
ejecutados repetitivamente hasta que el usuario decida salir del modo de funcionamiento en el que
se encuentra.
Hay que indicar en todo momento el programa de fiabilidad en ejecución (programa +
tiempo transcurrido), además de mostrar los datos que se indican en cada uno de los programas,
alternando los 2 mensajes entre ellos (5 segundos el primero, 5 segundos el segundo)
Programa fiabilidad 1
Esta es la secuencia que se debe repetir:
o 8 minutos Modo Convección a 300 ºC
o 8 minutos Modo Mixto a 250 ºC
o 8 minutos Modo Vapor
Programa fiabilidad 2
El horno funcionará en Modo Convección a 99ºC. Cada 30 segundos se accionará la chimenea,
subiendo o bajando dependiendo de la posición en la que se encontraba.
Programa fiabilidad 3
El horno funcionará en Modo Convección a 300ºC. Hay que mantener encendido la salida VE si
70<NTC>75ºC.
Programa fiabilidad 4
El horno funcionará en Modo Mixto 250ºC. Cada 30 segundos se cambirá el sentido de la turbina
con D/I..
Feria
Cuando el horno esté funcionando en modo feria, sólo debe funcionar el interface y las
salidas RG y LZ, deshabilitando todas las demás entradas/salidas e ignorando todos los
errores que se den.
Comprobación SAT
Se tiene que desarrollar un modo especial, sólo accesible por el técnico del SAT, en el
que se podrán comprobar las entradas/salidas disponibles en el horno, posibilitando la
verificación de los mismos de forma independiente. Una vez entrado en este modo, se
selecciona la entrada/salida deseada haciendo uso de la ruleta.
Si se trata de una salida, se usará el botón de la ruleta para activar la salida en
cuestión, haciendo uso de los mismos para desactivarla.
Si es una entrada en cambio, se mostrará el estado de la entrada seleccionada (Si/No si es
una entrada que puede estar activo/no activo, el valor de la entrada, etc.). En caso de que sea un
termopar, si está bien debe indicar el valor que está midiendo, mostrando OUT en caso contrario.

Hay que desarrollar un programa para PC que permita al usuario visualizar e interpretar los datos
descargados desde el horno, accediendo directamente al horno mediante cable o haciendo uso de
un dispositivo externo. Este programa debe estar en los siguientes idiomas:

switched on, the last-used values are displayed. If this is the first time the oven is switched on, the
defect values are displayed.

TIME SELECTION
To select the time function, press the function selector (10). All the options light up and the
selected option flashes. Turn the general option button (18) to change the selection and select the
time option (11.2). To confirm the selected option, press either the function selector button or the
general option knob.
Select the cooking time by pressing the time selector (8) and turning the general option
knob until the required time is obtained. Confirm this value by pressing the time selector (8) again or
by pressing the general option knob (18).
When the time reaches 0, the number starts to flash, the horn is heard and the light flashes
in time with the horn until the door is opened or for a maximum of 30 seconds. If the door is not
opened, the acoustic/visual warning is repeated for 30 seconds every 3 minutes.
The oven temperature is selected by pressing the temperature selector button (6) and
turning the general option knob to the required temperature. Confirm this value by pressing the time
selector (6) again or by pressing the general option knob (18).
The true oven temperature is displayed in window 9.1.
The clock (countdown) is displayed in window 7.1.
After selecting the cooking mode and closing the door, press the start/stop button (19) and
the oven will start to operate with the parameters shown.
The temperature range and defect values for each operating mode are listed below:
• Convection: Range [20...300], 160 by default.
• Mixed: Range [20...250], 140 by default.
• Regeneration: Range [20...180], 120 by default.
• Controlled steam: Range [35...125], 80 by default.
• Steam: Range [99] 99 by default.

AUXILIARY FUNCTIONS
COOL DOWN
To cool the cooking chamber, proceed as follows:
When the door is closed and the oven temperature is more than 45ºC, press the special
functions button (14) (COOL DOWN). All the special options light up. Use the general options knob
(18) to select the option COOL DOWN (15.1). Confirm the option by pressing the special options
button (14) or the general options knob (18). Next open the door.
The fan starts. When the chamber temperature reaches 45ºC, the fan stops automatically.
The cooling cycle can be stopped by pressing button 19 again or by closing the door, and
the cool down indicator will go out.
Warning: Do not cool the oven by directly applying cold water in the tub.
SAFETY MEASURES: The fan cover and the tray guides must be correctly fastened in
place during this cycle.
The cooking chamber must not be cooled with cold water.
HUMIDIFIER BUTTON
To activate the humidifier, press the special options button (14). All the special options light
up. Use the general options knob (18) to select the option HUMIDIFIER BUTTON (15.2). Confirm the
option by pressing the special options button (14) or the general options knob (18).
The moisture inlet only operates when the door is closed and the oven is in Start mode (in
Stop mode the signal is ignored).
Bakery products rise very well using this function thanks to the rapid entrance of moisture.
Soft shine to baked products.
It should be used for short periods of time.
DESCALING DISPLAY
When the oven automatically detects excess limescale in the pipes, a message is sent via
the display (general information text 3) informing of the need to descale.
The text DESCALING flashes on the display. The speed of the flash increases with the need
for decaling, and when descaling is obligatory the message is permanently lit (at this point the oven
only operates in convection mode).
The descaling function is performed by the SAT. Therefore if the oven requires
descaling please contact the maintenance technician.
To descale, enter the function by pressing the special function button and select the option,
descaling (15.3). To confirm the option, press the special functions button (14) or the general options
knob (18).

The message “SELECT TIME” is display and the descaling time for the steam generator
should be selected from the range 30 to 480 minutes (the default setting is 120 minutes). Confirm the
time setting using the general options knob. Wait 3 minutes.
The screen displays the message: “SPRAY DESCALE”
Undo the side panel of the oven (Fig. 3) and access the steam generator. Undo the
descaling nut (Fig. 3) and pour the descaler in the steam generator.
Confirm the descaling operation with the general option button.
During the descaling, the text “FX DESCALE” is displayed with the time remaining for the
operation, where X is the current phase.
On completion of the descaling, the text “END DESCALE” is displayed.

The configuration selector button is used to modify certain predefined parameters.
• Language: Select required language. Spanish by default.
• Programme date and time: Programme actual date and time.
• Programme Delta: This allows the value to be allocated to the Delta function to be selected.
This value is used whenever working in Delta mode. The Delta range is from 20 to 80, with a
default value of 50.
• Programme temperature scale: This allows selection of the temperature scale to be
displayed, ºC (default) or ºF.
• Thermal stop: This option allows the timer operation to be programmed, that is, when the
countdown of a timed operation begins. If Thermal stop is activated, the oven does not start

the countdown until the appliance reaches the programmed temperature. On the other
hand, if the Thermal stop is Not Activated, the default option, the countdown starts as soon
as the START/STOP button is pressed.
DELAYED PROGRAMMING
Access to the delayed programming option allows the oven to be switched on at a set time
with the established parameters.
First the oven should be programmed with the required parameters, then press the delayed
programming button (16) and select the start time and date. After confirmation, the upper text
displays that the oven has been programmed, showing the start time and date.
To cancel the programming:
• Press the same button again
• If the oven is switched off or started using the START/STOP button, the programming will
also be cancelled.
To access this option the oven should be switched on but in STOP mode.
START / STOP
The oven starts to operate with the settings entered in cooking, temperature and time mode
when the START/STOP button is pressed for the first time.
If the button is pressed again, the operation is interrupted and the oven is in pause mode.
If a set time has been selected, pressing the START/STOP button a second time implies
that the cooking time is interrupted and the time is reset to the previously selected value.

TYPES OF FAULT
When an error occurs:
• The bell rings intermittently.
• A flashing message is shown on the upper text of the display.
• If the START/STOP button is pressed, the error message continues to be displayed but the
bell stops ringing.
• To erase the error message and stop the bell, disconnect the controller voltage or remove
the fault causing the error.
• When the fault causing the error is removed, the outputs return to normal operation.
The errors which may occur in the oven are listed below, together with the message displayed
and the impact on the operation of the oven.

INTERFACE
The following is shown below (fig. 1) the interface designed for VISUAL ovens, with 11
buttons, a wheel with general purpose button and a 153x89 mm display lit from behind with a white
backlight.
As can be seen in the diagram, there is a main ON/OFF switch for switching the oven on/off,
in addition to the START/STOP button so that the oven starts or stops to adjust.
There are also 2 buttons providing access to the delayed programming function or the
configuration of the system functions, listed below.
The remaining buttons allow the selection of the required line, rotating between the icons on
the row or selecting the display value shown using the available wheel. During the selection process,
the icon or display selected flashes (the name of the selected icon is displayed in the upper text),
while the other icons in the row are fixed. When the icon or required value has been selected, press
the wheel to confirm the selection. If confirmation is not received within 10 seconds from the last
rotation of the wheel or the selection of the row, the value or option selected will be confirmed.

General screen
The oven display (fig. 2) has 4 numbers formed of 7-segment, 15-character displays
used to provide information to the user and 17 icons, each of which can only be lit up or left
shaded.
o Operating mode (2nd row): Select mode user requires for oven. The available modes are
listed below:
• Convection
• Mixed
• Regeneration
• Controlled steam
• Steam

When the oven is switched on, it adopts the last used parameters.
If the function is changed, the values of the function being used are stored and are
reloaded if you return to this function.
o Temperature (3rd row):
• True temperature of the chamber (Left-hand number): Numerical value showing the
true temperature of the oven, given by the chamber probe. The true temperature
range is from -5 to 330. An error is displayed if the probe indicates a value outside
the established range.
• Chamber temperature setting (Right-hand number): Chamber temperature setting
selected by the user. The temperature range and defect values for each operating
mode are listed below:
Convection: Range [20..300]. 160 by default.
Mixed: Range [20.0.250]. 140 by default.
Regeneration: Range [20.0.180]. 120 by default.
Controlled steam: Range [35.0.125]. 80 by default.
Steam: Range [99]. 99 by default.
If the oven is in delta function, this number cannot be selected by the user, as it
will depend directly on the true temperature of the core. Therefore, the value
displayed is the sum of the core temperature and the selected delta value.

Screen Off
When the oven is off, only the clock icon and the first line of characters is visible, displaying
the date and the time in DD-MM-YY and HH:MM format, and using the 15 available characters.
Delayed programming
Access to the delayed programming option allows the oven to be switched on at a set time
with the established parameters.
First the oven should be programmed with the required parameters, press the delayed
programming button and select the initial date and time. When this is confirmed, the upper text will
indicate that the oven is programmed, showing the start date and time.
To abort the programming, press the same button again. If the oven is on, any programming
will also be aborted.
To access this option the oven should be switched on but in STOP mode.
Configure system
Button to access system configuration, where the following sections can be configured:
o Language: Select required language. Spanish by default.
o Programme date and time: Programme actual date and time.
o Programme temperature scale: This allows selection of the temperature scale to be
displayed, ºC (default) or ºF.
o Programme Delta: This allows the value to be allocated to the Delta function to be selected.
This value is used whenever working in Delta mode. The Delta range is from 20 to 80, with a
default value of 50.
o Thermal stop: This option allows the timer operation to be programmed, that is, when the
countdown of a timed operation begins. If Thermal stop is activated, the oven does not start
the countdown until the appliance reaches the programmed temperature. On the other
hand, if the Thermal stop is Not Activated, the default option, the countdown starts as soon
as the START/STOP button is pressed.
Given the nature of the screen, the entire menu should be reflected on the first line of the screen,
7-segment displays may be used to show the different available options.
To move between the different options of the menu, use the wheel, pressing the button to
confirm or enter in the selected option, as in the section, Adjustments
To exit the menu, select the option EXIT, and return to normal operation of the oven.
To access this option, the oven should be switched off.

¾ Oven identification
o Software version This displays the software version included with the oven.
Software version of the control holder card.
Software version of the chamber card.
Software version of the steam or boiler card.
Software version of the gas card (Only gas ovens)
o Serial No: Option allowing the serial number of the over to be entered or displayed.
An alphanumeric sequence of up to 10 characters may be used.

To change the programmed value, just press the button on the wheel. The
character to be changed flashes, and is modified using the wheel, confirm and
move to the next character by pressing the button again. When the last character
has been confirmed, the screen returns to the main menu.
o Tester number: Option allowing the number of the person who has tested the oven
to be entered or displayed. A 3-digit sequence can be entered.
¾ Calibration Option for starting the thermocouple calibration process. To start, press the
button on the wheel.
¾ SAT test: Option allowing the oven to be set in SAT test mode. To start, press the button on
the wheel.
¾ Reliability: Option permitting the oven to be changed to Reliability mode in order to check
the reliability of the different components of the oven. To do so, one of the four pre-
established programmes should be selected. To start the selected programme, press the
button on the wheel.
¾ Log: Option for viewing the oven log. To start, press the button on the wheel.
¾ Exhibition: Option allowing the oven to be set in Exhibition mode. To start, press the button
on the wheel.
¾ Exit: Option for exiting the menu and returning to oven normal operating mode. To do so,
press the button on the wheel.

Additional functions
Thermocouple display
When the Configure system button is pressed for 5 seconds, the value of all the
thermocouples should be displayed (Chamber probe, steam probe, core probe and steam generator
probe).
The oven exits this function when the user releases the button, returning to the values with
which it was operating.
Cool down
In any operating mode, where TC>45º, when this function is selected and only when the door
is closed, the LZ, M/P, Ms/Mb and D/I outputs (the last output stays in the same position)
immediately operate until TC falls to 45ºC, displaying the message “OPEN THE DOOR”.
When the door is opened, the function continues to operate but only the true chamber
temperature is displayed.
While the function operates, if this button is pressed again, the door closes or TC<=45, the
function stops, the message disappears and normal operation of the appliance is re-established.
If this mode is entered while the oven is in START mode, it will automatically switch to STOP
mode.
Humidifier
If the humidifier button is pressed the VHM output of the Chamber Control card is activated,
i.e. the oven is injecting water as long as the button is pressed.
The oven should only inject water if it is in START mode, ignoring the button if pressed in
STOP mode.
Automatic drainage
In any operating mode, VAC will operate for 3 minutes every X hours of oven adjustment (all
operating modes except convection, where TG>60ºC), and only when the oven is switched on, if
TC<=60ºC and TG<=60ºC. If the oven is switched off before the 3’, when the power is reconnected
the drainage cycle starts again for a further 3 minutes. The accumulated operating time is reset in the
event of a wash.
During the process, the message “DRAINING BOILER” is displayed in the upper text, with the
time remaining until the drainage is completed.
There is a secret option to abort the process by pressing START/STOP for 5 seconds.
Limescale detection.
In any operating mode, if the TG probe reaches:
o 125ºC Î The message “DESCALE” is displayed in the upper text of the screen, and flashes
every two seconds.
o 140ºC Î The message “DESCALE” is displayed in the upper text of the screen, and flashes
every one second.
o 155ºC Î The message “DESCALE” is displayed in the upper text of the screen, and flashes
every half second.
o 180ºC Î The message “DESCALE” is displayed continuously in the upper text of the screen,
and the oven only operates in Convection mode.
When a message is displayed, it does not disappear until the descaling process has been
run, even if the TG temperature falls or the oven is switched off, in which case the message will
reappear when it is switched back on.

Descaling
In any operating mode with IP closed, when this function is entered, LZ operates and:
The message displayed is “SELEC. TIME”, descaling time between 0:30 and 8:00 (2:00 by
default).
Wait until the user confirms the selection with the button on the wheel.
Phase 1: VAC operates for 3 minutes
The message “SPRAY DESCALER” is displayed and the process waits until the message is
confirmed.
Phase 2: VDV operates until reaching the maximum level, the boiler fills with descaler
Phase 3: CV operates until TG reaches 61ºC. When TG falls below 58 ºC, CV enters again until
reaching 61ºC, this continues for the period selected by the user. The display shows a
countdown for the time remaining.
Phase 4: VAC operates for 3 minutes
Phase 5: VDV operates until reaching N.max.
Phase 6: VAC operates for 3 minutes
Phase 7: VDV operates until reaching N.max.
Phase 8: Steam mode operates until TC reaches 95ºC.
Lastly, this function is closed and the message “END DESCALING” is displayed, all the outputs
are set to zero (except RG) until the oven is switched off.
At any time, the display shows the descaling cycle is in process, giving the current phase
(“DESCALING FX”) and the time remaining.
If during the descaling cycle the operation is aborted by pressing the descaling button again
or because the oven has been switched off, proceed as follows:
a). If it has not reached phase 2 Î The cycle is ended
b). If it has reached or exceeded phase 2 Î The cycle goes to phase 4.
Calibration
When this function is activated, the value of the 4 thermocouples (TC, TV, TG, TN) is
displayed.
First, the oven is set to Steam mode until TC reaches 99 degrees. This step is considered
preliminary to calibration and should not be counted in the calibration time.
Next, operate the CV output continuously so that the TC, TV (only in electric ovens), TG and
TN probes measure values between 90 and 110ºC. When all the values measuring the temperature
probes have stabilised, 40 seconds without any changes, the probes take 100ºC as reference and all
the thermocouples are calibrated. Therefore, the difference of all the values with respect to 100 is
noted. This value is used to adjust subsequent displays of the thermocouples.
Calibration may be aborted by pressing the button on the wheel or the OFF button.
If calibration is not completed within 15 minutes, the corresponding error is displayed

Log
The following data should be saved in the log. To go from one section to the next, use the
wheel.
Press the button on the wheel for 5 seconds to reset the value displayed. It should also be
possible to reset all the log data together.
Hours of Convection: Total hours of operation in Convection mode.
Hours in Mixed: Total hours of operation in Mixed mode.
Hours of Regeneration: Total hours of operation in Regeneration mode.
Hours of Controlled steam: Total hours of operation in Controlled Steam mode.
Hours of steam: Total hours of operation in Steam mode.

Reliability
The existing reliability programmes are listed below. These should all be run repeatedly until
the user decides to exit the current operating mode.
The reliability programme being run should be displayed at all times (programme + time
elapsed), together with the data given in each of the programmes, alternating the 2 messages (5
seconds for the first, 5 seconds for the second)
Reliability programme 1
This is the sequence which should be repeated:
o 8 minutes Convection Mode at 300 ºC
o 8 minutes Mixed Mode at 250 ºC
o 8 minutes Steam Mode
Reliability programme 2
The oven operates in Convection Mode at 99ºC. The fluepipe is activated every 30 seconds, going
up or down depending upon the initial position.
Reliability programme 3
The oven operates in Convection Mode at 300ºC. The VE output should be kept lit if 70<NTC>75ºC.
Reliability programme 4
The oven operates in Mixed Mode at 250ºC. Every 30 seconds the direction of the fan with R/L is
changed.
Exhibition
When the oven is operating in exhibition mode, only the Interface and the RG and LZ
outputs should operate, all other inputs/outputs are disabled and all errors are ignored.
SAT test
A special mode must be developed, only accessible by the SAT technician, for testing
the inputs/outputs available on the oven, making it possible to check these independently.
When in this mode, select the required input/output using the wheel.
For outputs, use the button on the wheel to activate the output in question, similarly to
deactivate it.
For inputs, the status of the selected input is displayed (Yes/No if it is an input which may be
active/not active, the value of the input, etc.) For a thermocouple, if it is OK, the value being
measured is displayed, other wise OUT is displayed.

Languages
The oven can be used in the following languages, and all texts shown in the display should be
translated.
o Spanish
o German
o English
o French
o Italian
o Turkish
In addition there is a language named USER which can be configured by the user. The PC
Programme is required for this, and the configuration is then downloaded to the oven in question.
All sections not related to the user (Settings) may be left in Spanish and English.
PC Programme
A PC programme must be designed to enable the user to view and interpret the data downloaded
from the oven, and to access the oven directly via a cable or using an external device. This
programme should be in the following languages:
• Spanish
• English
• French
• German
• Italian
• Turkish
When the programme is installed, the installation language is requested (Spanish or English),
together with the oven to be used (VISUAL or VISUAL PLUS).
