1 tbsp olive oil
2 salad onions, finely sliced
1 garlic clove, finely chopped
½ red chilli, finely chopped
1 kohlrabi, peeled and diced
1 tbsp soy sauce
1 tbsp sesame oil
1 tsp ginger, finely chopped
200ml/7fl oz chicken stock, heated (vegetarians can substitute vegetable stock)
salt and freshly ground black pepper
1 tbsp chopped fresh coriander

Method
1. Heat the oil in a small saucepan. Fry the salad onions with the garlic and chilli until soft.
2. Add the diced kohlrabi and cook until soft.
3. Add the soy, sesame oil, ginger and chicken stock and season with salt and freshly
ground black pepper, to taste. Simmer for eight minutes.
4. To serve, stir through the chopped coriander and serve in a warm bowl.
Para prepararse, primero corte la piel gruesa y quite las hojas (úselas en
esta sopa verde con queso ) y luego pique, corte en dados, ralle o corte en
palitos.
Decidí hacer un riff en la sopa de papa al horno saludable cargada
de Serena y usé partes iguales de colinabo y papas picadas . Después

caldo. Encienda el fuego a medio-alto y cubra. Cocine por unos 20
minutos o hasta que las verduras estén suaves.
3. Apague el fuego y agregue las cebollas cocidas, la pimienta negra, la sal
y la leche. Mezclar bien.
4. Haga puré con una licuadora de inmersión o una licuadora normal (si usa
una licuadora normal, agregue la sopa nuevamente a la olla después de
hacer puré).
5. Encienda el fuego a bajo y mezcle el queso. Revuelva hasta que se derrita
y luego retire de la estufa.

1. Melt butter in a large stockpot over medium-low heat. Cook and stir onion in melted
butter until soft, about 10 minutes. Add kohlrabi; cook and stir another 2 minutes.
Pour vegetable broth and milk over the onion mixture. Add bay leaf. Bring the
mixture to a boil, place a cover on the pot, and reduce heat to low; cook at a simmer
until kohlrabi is tender, about 25 minutes.
2. Remove and discard bay leaf; allow the soup to cool slightly. Pour the soup into a
blender, filling the pitcher no more than halfway. Pulse the blender a few times before
leaving on to puree. Work in batches until all soup is blended. Return pureed soup to
stockpot; season with salt and pepper. Sprinkle orzo pasta into the soup; cover the
stockpot and simmer until the orzo is tender, about 10 minutes.

3 pounds kohlrabi, turnips or a combination, peeled and cut into 1-inch cubes
1 bay leaf
PREPARATION
1. Arrange an oven rack 4 to 6 inches from the broiler. On a rimmed baking
sheet, toss together kohlrabi, 2 tablespoons oil, 3/4 teaspoon salt and the
black pepper. Transfer to oven and broil until very well browned, about 10
minutes total, tossing halfway through cooking. (Watch carefully to see that
they do not burn.)
5. Zest the lemon into the pot, then halve it and squeeze in its juice. Taste
soup and add more salt if needed. Ladle soup into bowls and top with a
drizzle of oil, grated cheese and a pinch of chile powder.

Pronunciarlo: cole-rah-bee
Pareciendo un Sputnik en forma vegetal, con un bulbo achaparrado y brotes con forma
de antena, el colinabo es parte de la familia de la col. El nombre se traduce como 'col de
nabo' y el sabor suave y dulce está en algún lugar entre un nabo y una castaña de
agua, con una textura crujiente y crujiente. Se puede encontrar en dos colores, verde
pálido y el púrpura menos común.

Preparación:

1. Debone the drumsticks by taking off the skin and cutting off the meat from the
bone with a sharp knife. Cut the breast or drumstick meat into smaller, bite -sized
pieces. Season well all over with salt and leave to rest, covered, for around 1 hour
(if short on time, the marinating stage can be omitted).
2. Meanwhile, for the marinade whisk the mustard into the slightly-warmed stock
until smooth, then mix in the vinegar. Season with salt and pepper and add the
pumpkin seed oil. Clean the salad leaves and drip dry.
3. Beat the eggs lightly on a plate or in a bowl, have the flour and breadcrumbs ready
on aditional plates. Now coat the chicken pieces in the flour, dip into the beaten egg
and coat with breadcrumbs.
4. In a pan, heat a good quantity of clarified butter or vegetable oil. Place the chicken
pieces into the hot butter and, depending on size, cook for 3-7 minutes until golden
brown, turning once. Remove and allow to drain on paper towels.
5. Meanwhile marinade the salad leaves and arrange in the center of large serving
plates.
6. Place the crispy chicken pieces on the salad shortly before serving. Garnish with
halved cherry tomatoes, if desired.

Here is a delicious appetizer with homemade tapenade using three different olives. You can leave out the goat cheese to make the
recipe vegan. Full Recipe + Ingredients: Prep time: 5 minutes Cook time: 10 minutes One baguette, sliced 3/4 cup olive oil Sea salt 8
ounces black olives 4 ounces Kalamata olives 4 ounces green olives 2 tablespoons olive oil One roasted red pepper 4 ounces herbed
goat cheese 1/4 cup chopped fresh parsley Lay some sliced baguette out on a baking sheet. Brush each piece over the top with a little
bit of olive oil. Sprinkle with a little sea salt. Bake at 350 degrees for about 10 minutes until they're golden brown. Finely chop three
different kinds of olives: black olives, Kalamata olives and green olives. Of course you can use whatever olives you want. I chose these
for the taste and visual appearance. Add some olive oil to your chopped olives and mix together. This can also be done in a Cuisinart,
however it will end up being more finely chopped. Slice some roasted red peppers into fine strips. Spread herbed goat cheese on top of
each piece of crostini. Add one strip of the roasted red pepper on top of the goat cheese. Then, add a small scoop of the tapenade and
dust with chopped parsley. Now you're good to go! Simply plate and serve.

La preparación de la ensalada de patatas (Kartoffelsalat) se realiza
cociendo patatas (en Alemania hay muchas variedades de patatas como, por ejemplo, las
Bamberger Hörnchen (Cuernos de Bamberg), Cilena, Hansa, Laura, Kipfler o Sieglinde). Existen
variedades de patata muy adecuadas para esta ensalada, que se caracterizan por mantener la
forma tras la cocción en agua. En la cocina alemana se denomina a estas patatas festkochend;
son aquellas que son adecuadas por poderse mezclar con otros ingredientes sin perder la
forma.
Las patatas se pueden cortar en rodajas y posteriormente cocer. Existen variantes en las que es
posible cocer las patatas con su piel y posteriormente se pelan.

La ensalada de patatas Kartoffelsalat es, junto a la cerveza y las salchichas, el alimento más famoso
de la gastronomía alemana. En esta ocasión te voy a enseñar a preparar la ensalada de patata
alemana auténtica con la receta original que mi abuela lleva haciendo desde hace más de 60 años.
Pero antes de confesarte la receta, me gustaría resaltar un detalle muy importante acerca de
la Kartoffelsalat: Se trata de la cocción de las patatas, que se hierven sin pelar en agua salada, y no
se les quita las cáscara hasta que no se hayan enfriado del todo. Esta es la gran diferencia entre
la ensaladilla de patata alemana y la española (ensaladilla rusa). A continuación te lo explico con

Comenzaremos lavando la lechuga o las hojas de canónigos. Secamos y
reservamos. Por otra parte ponemos una olla al fuego con sal para
cocer las patatitas con la piel, las dejaremos cocer hasta que estén
tiernas, pero firmes. Reservamos y las dejamos enfriar antes de
pelarlas. Mientras picamos menudos los pepinillos.
Una vez frías las patatas, las pelamos y cortamos en rodajas, las
reservamos en un plato. Por otra parte calentamos el caldo en un
cacito o al microondas. Cuando cueza unos cinco minutos a fuego lento
le vamos agregando al mismo tiempo que removemos con unas varillas
la mezcla de vinagre, aceite y mostaza o bien las cuatro cucharadas de
mayonesa.
