Introducción
1. INTRODUCCIÓN
1.1 PRODUCCIÓN Y CONSUMO DE LA CARNE DE
POLLO
La producción industrial de aves es muy diversa, hay varios
sistemas básicos de producción de alimentos: (canales y
subproductos), huevos de mesa y ovoproductos. Varias especies son
utilizadas para la producción industrial de aves, con importancia
variable según la región y las costumbres alimenticias. En España
destacan por su importancia, los pollos de engorde de la especie
Gallus gallus. Cuyas estirpes actualmente pueden ser Cobb o Ross.

Cada vez son menos los clientes que se deciden por este tipo de
presentación si bien hay todavía algún partidario de este tipo de
envase, principalmente por abaratamiento de envase. Es un envase
muy vulnerable y de fácil rotura en el transporte y apilado.

Objetivos
2. OBJETIVOS
La presente Tesis Doctoral surge a raíz de la problemática de la
calidad y seguridad microbiológica de la carne de pollo, y la necesidad
de contar con unos niveles de referencia actualizados, así como
conocer el impacto de las distintas etapas de producción y procesado
en la calidad y seguridad microbiológica.

3. MATERIALES Y MÉTODOS
En la presente tesis se ha abordado en un primer lugar el
estudio microbiológico en granjas de producción con especial
referencia a la incidencia de Campylobacter y Salmonella, así como la
calidad microbiológica en distintas etapas en la planta de procesado.
El segundo estudio se llevo a cabo en dos plantas de procesado,
las determinaciones realzadas fueron las siguientes:
o Salmonella
o Listeria monocytogenes
o Campylobacter
o Bacterias aerobias mesófilas
o Pseudomas
o Enterobacterias
o E.coli
o Estafilococos coagulasa positivos

4. CONCLUSIONES
En el entorno de las granjas avícolas estudiadas se observó
ausencia de Salmonella.
La prevalencia de Campylobacter en animales en granjas
aumenta con la edad de los animales.
La refrigeración de las canales (túnel de oreo) es un punto
crítico para el control de Salmonella en aves.
La refrigeración no reduce la prevalencia de Campylobacter
en canales de pollo.
En relación con Campylobacter spp, se ha puesto en
evidencia la contaminación cruzada en planta de procesado.
La contaminación de las canales con Listeria monocytogenes
aumenta a medida que avanza la línea de procesado.
Los recuentos más elevados de mesófilos se observan en las
etapas iniciales de procesado, después del desplumado.
El desplumado puede influir de forma importante en la
contaminación de las canales con estafilococos coagulasa
positivos.
La refrigeración tiene un efecto significativo en la reducción
de las poblaciones de estafilococos coagulasa positivos.
La planta de procesado ha influido de forma importante en la
prevalencia de Listeria monocytogenes en carne de pollo.
La calidad microbiológica inicial de los productos de pollo, así
como el control de la concentración de gases utilizada y la
integridad del envase son esenciales para que el envasado
en atmósferas modificadas sea eficaz.
