ABSTRACT
The main purpose The main purpose of this research work was Effects of
methods of pasteurization of bovine milk in the students of 3 ° BGU of Eugenio
Espejo of Quito Education Unit during the period 2013-2014 . The objectives for
the development of the research is based on knowing the effects of the
methods of pasteurization of bovine milk and their characteristics in the
students of the 3rd BGU Eugenio Espejo Education Unit through text analysis
and the use of investigative techniques to determine the most suitable thermal
process. The type and design of the study was based on documentary research
literature involve the collection and analysis of various texts , found in
descriptive research supported by the present study of the phenomenon and its
important characteristics in a population time. Analysis was conducted and it
was concluded that the main effects are seen in pasteurized milk , are those
relating to color, flavor and quality of milk , plus a significant fraction of the
students surveyed consider that this procedure also greatly alters proportion
nutritive value of milk ; and despite having consumed unpasteurized milk , those
caused gastrointestinal problems are reduced .
