Resumen
Abstract
Freezing as a method of food preservation, is a technology apply to fruit, vegetables, meat products,
seafood, prepared products and dairy products, among others. This paper presents a review of the
applications of freezing technology, the methods for calculating freezing times, the factors that
influence the calculation of those times and the variables that affect the food freezing.
It is well known that this method of preservation can affect the organoleptic characteristics and hence
the quality of foodstuffs. For that reason its necessary to assess the characteristics of the food and
conditions of freezing systems to be applied to food freezing. Among the variable that are reviewed in
this paper are the treatments applied to food before undergoing freezing, the recommended conditions
for food freezing, conditions of packing and storage, as well as the composition of the food system.
