La confitura de tres frutas no conviene sobrecoserla pues espesa una vez que la fruta ha
sido triturada y enfra, ya que despus es muy difcil de extender. Es ideal para tostadas con
mantequilla pero tambin para preparar glaseados para bizcochos o relleno de muffins que
lleven una cobertura de chocolate negro.

Ingredients

Confitura de Melocotn
Cantidad: 400 gr. aprox.
Ingredientes:
400 gr. de melocotones limpios
200 gr. de azcar blanco
1 tablespoon (15 ml.) de zumo de limn
tbsp. de bourbon (opcional)
Elaboracin
Lavar, pelar y deshuesar los melocotones. Una vez limpios debern pesar 400 gr.
Trocear los melocotones en trozos de 1 cm y ponerlos en un bol. Aadir el azcar,
mezclar y dejar macerar 1 hora a temperatura ambiente ( 2-3 horas en la nevera).
En un cazo mediano poner todo el contenido del bol (melocotones y lquido). Calentar a
fuego medio-alto y dejar hervir, removiendo de vez en cuando y des espumando, hasta
que los melocotones estn un poco blandos (10-15 minutos). Aadir el zumo de limn y
seguir cocinando la mermelada hasta que est hecha (10-15 minutos ms). Si tenis un
termmetro deber marcar 104C.
Una vez la mermelada est hecha, retirarla del fuego, aadir el bourbon (si se usa) y
remover bien. Verter la mermelada en un tarro de cristal esterilizado y dejar templar.
La mermelada se conservar unas 3 semanas en la nevera.
Consejos
No recomiendo hacer ms del doble de la
cantidad indicada porque la mermelada no os
quedar suficientemente espesa.
Peach Jam
Quantity: 400 gr. approx.
Ingredients:
400 gr. peaches clean
200 gr. of white sugar
1 tablespoon (15 ml.) Lemon juice
tbsp. bourbon (optional)
Elaboration
Wash, peel and pit peaches. Once clean they must weigh 400 gr.
Chop the peaches into 1 cm pieces and place in a bowl. Add sugar, mix and marinate 1
hour at room temperature (or 2-3 hours in the fridge).
In a medium saucepan bring the entire contents of the bowl (peaches and liquid). Heat
over medium-high heat and boil, stirring occasionally and skimming des until peaches
are a little soft (10-15 minutes). Add the lemon juice and continue to cook the jam until
cooked (10-15 minutes more). If you have a thermometer you should dial 104 C.
Once the jam is done, remove from heat, add the bourbon (if using) and stir well. Pour
the jam into sterilized glass jar and allow to warm.
The jam will keep for about 3 weeks in the fridge.
Advice
I do not recommend doing more than double the recommended amount because the
jam will not be thick enough.

DULCE DE FRESAS
Ingredientes

1 y 1/4 kg. De azcar
Cscara de 1 limn
1 copita de licor marraschino
Elaboracin
Como hacer Dulce de fresas pas a paso
Lavar las fresas, quitarles el cabito y elegir las ms maduras y sanas. Rociar con
jugo de una naranja y agregar la ralladura de la misma.
Hervir la taza de agua con el azcar durante 3 minutos. Apagar el fuego y echar
las fresas. Macerar 2 horas y volver a la llama.
Agregar la cscara de limn cortada en trozos (no rallada) y cocinar hasta que
las fresas se vean brillantes.
Al retirar del fuego, agregar la copita de licor marraschino.
Envasar el dulce en caliente, utilizando
frascos esterilizados.
Consejos:
Esterilizar los utensilios.
Revolver con cuchara de madera.
Antes de cerrar los frascos, cubrir la superficie del dulce con un
Disco de papel mantequilla humedecido en alcohol o licor.
SWEET STRAWBERRIES
Ingredients
2kg. strawberry
1 orange
1 and 4.1 kg. sugar
Zest of 1 lemon
Maraschino liqueur 1 shot

Como hacer Mermelada de moras paso a paso
Conseguir moras bien maduras, lavarlas apenas y dejarlas escurrir. Deshacerlas
con las manos o con una esptula, en una cacerola.
Hacerlas hervir, sin nada de agua, durante un cuarto de hora. Cuando el lquido
comienza a evaporarse, pasar por cedazo y medir el jugo obtenido.
Pesar el jugo obtenido, agregar 200 gr. de azcar por cada kilo de fruta y seguir
cocinando y espumando.
Cuando el jugo comience a espesar y caiga en forma de gotas gruesas retirar del
fuego. Dejar enfriar antes de envasarlo.

Preparation of carrot jam:
