Resumen
Se presenta una reflexión acerca del consumo de frutas y verduras como práctica
saludable y los retos para lograr la recomendación de la Organización Mundial de la
Salud de un consumo per- cápita mínimo de 5 porciones ó 400 g diarios, que ha
despertado el interés de los gobiernos en generar normas, políticas y desplegar
estrategias para motivar su ingesta; se muestran argumentos construidos a partir de
revisión de documentos normativos, artículos científicos e informes de investigación
identificados con el criterio de aportar evidencias científicas sobre los beneficios para
la salud humana atribuidos al aporte nutricional y las cifras evidencian el bajo consumo
en la población.
Las frutas y las verduras constituyen un grupo de alimentos saludables para el ser
humano, por su alto contenido de nutrientes, especialmente vitaminas, minerales y
sustancias no nutritivas, biológicamente activas con importantes funciones
metabólicas; existen normas y regulaciones que promueven su consumo, Colombia
cuenta con un indicador de producción anual de 9.179.250 toneladas (ts) de frutas y
verduras, paradójicamente investigaciones evidencian su bajo consumo como
problema de salud pública,.
Abstract
A reflection on the consumption of fruits and vegetables as a healthy practice and the
challenges to achieve the recommendation of the World Health Organization of a per
capita consumption of at least 5 servings or 400 grams per day, which has aroused the
interest of the Governments to generate norms, policies and deploy strategies to
motivate their intake. We present arguments based on the revision of normative
documents, scientific articles and research reports identified with the criterion of
providing scientific evidence on the benefits to human health attributed to the nutritional
contribution and the figures show the low consumption in the population.
Fruits and vegetables are a group of foods that are healthy for humans because of their
high content of nutrients, especially vitamins, minerals and non-nutritive, biologically
active substances with important metabolic functions; There are norms and regulations
that promote consumption, Colombia has an annual production indicator of 9,179,250
tons of fruits and vegetables, paradoxically research evidences its low consumption as
a public health problem.
The different links of the agrifood chain must be intervened in order to connect
productive chains with the perspective of sustainable food systems that contribute to
nutrition; to deepen the identification of barriers to their access and consumption and
carry out effective interventions to modify the causes; to assess how the changing price
policies the actual availability of fruits and vegetables throughout the national territory
and to promote the incorporation of measures on these factors that contribute to
encourage their consumption and take on the challenge of transforming the behaviors
of the people related to this practice.
