RESUMEN
ABSTRACT
Solid State Fermentation (FES), is consolidated as an alternative for animal feed, thanks to
this biotechnological process, crop residues and agro-industrial waste can be converted into
energy-protein foods, of high nutritional value that at any given time replace totally or
partially balanced food, which significantly increases production costs, making livestock
farms less profitable, which is why the FES, not only becomes an economically viable
alternative, but environmentally sustainable, from the management of residues of high
polluting potential. This review seeks to show the FES as a biotechnological alternative to
obtain food that can be used in animal production.
