1. INTRODUCCIN
En la actualidad los altos ndices de
contaminacin han llevado a los gobiernos de
todo el mundo a exigir a las industrias una
produccin limpia, lo cual hace que las empresas
planteen soluciones para disminuir sus cargas
contaminantes. La industria alimenticia genera
una gran cantidad de residuos orgnicos e
inorgnicos, de caractersticas contaminantes; la
biotecnologa es una excelente alternativa en la
biodegradacin
de
estos
desechos,
convirtindolos en materias primas para la
obtencin de importantes productos de consumo.
Adems de ser una alternativa de produccin, la
biotecnologa es una herramienta para el control
de residuos contaminantes. El suero de leche es
un medio de cultivo con la lactosa como fuente
de carbono, y por ello se utiliza en un gran
nmero de procesos fermentativos para la
produccin de etanol, cido actico, cido lctico,
cido propinico, cido glucnico, cido
succnico, cido ctrico, glicerol, protena
unicelular, enzimas (-galactosidasa o lactasa),
grasas y aceites, butanol y acetona, polisacridos
extracelulares y vitaminas,
entre otros.
(Betancourt, 2003, Snchez et al., 2005).
El cido ctrico es un producto con una demanda
mundial creciente, debido a sus aplicaciones en la
industria de alimentos (bebidas, embutidos),
farmacutica, cosmtica, plsticos y detergentes
(Saniez, 1999, Betancourt, 2003); por este motivo
se ha estudiado su produccin a partir de
diferentes sustratos como la melaza de caa
(Mayilvahanan et al., 1996, Adham, 2002, Haq et
al, 2002a, Haq et al, 2002b, Al et al., 2002a, Al
et al., 2002b), melaza de remolacha (Berovic,
1999, Berovic and Papovic, 2001), desechos de
cervecera (Roukas and Kotzekidou, 1986),
almidn (Suzuki et al., 1996, Saniez, 1999, Haq
et al., 2003b), desechos de pias (Muoz et al.,
2000), sacarosa (Kim et al., 1995, Jernejc y
Legisa, 2002, Peksel and Kubicek, 2003), glucosa
(Rugsaseel et al., 1995), tuzas de maz (Hang,
2001) y suero de leche (Hossain et al., 1983,
Hossain and Ahmed, 1992, El- Samragy et al.,
1993, El- Samragy et al., 1996, El-Holi and AlDelaymy, 2003, Betancourt, 2003, Snchez et al.,
2005), entre otros. Se ha reportado que la

4.4.1. Ensayos previos.
Los resultados de los ensayos previos se
presentan en la Tabla 8 a,b,c.
Para la
fermentacin con un pH inicial de 2 se obtienen
bajas producciones de cido ctrico y bajo
consumo TRS; en stas la morfologa de los
microorganismos no fue muy definida tendiendo
a ser de forma filamentosa, ms an, no se
observan a simple vista, como si se notaba en los
pH

5. CONCLUSIONES
Para alcanzar un alto grado de hidrlisis
utilizando cido clorhdrico concentrado como
catalizador se debe adicionar 3 g de HCl por kg.
de lactosa a una temperatura de 80 C por un
tiempo de 74 minutos.
En la hidrlisis enzimtica las mejores
condiciones para un alto grado de hidrlisis se
dan utilizando 2392 NLU/ l suero de leche, en un
tiempo de 5,52 horas, a una temperatura de 37 C,
un pH de 6,6 y con agitacin permanente.
En la etapa de hidrlisis, el uso de enzimas es la
mejor alternativa ya que no presenta
pardeamiento que es un indicio de la formacin
de subproductos ms difciles de asimilar que la
glucosa y la galactosa. La remocin de metales
divalentes o utilizacin de agentes quelantes en
el suero de leche no es necesaria ya que los
elementos de mayor influencia como el
manganeso, el zinc y el hierro que se encuentran
en concentraciones de 0,001, 0,2 y 1 ppm,
respectivamente, estn dentro de los intervalos
recomendados para la produccin de cido
ctrico con Aspergillus niger.
En el tiempo evaluado para la produccin de
cido ctrico (6 das) la complementacin del
medio con sacarosa no presenta ventajas con
respecto al suero de leche. En el SE no se hace
necesaria la adicin de una fuente de nitrgeno
para alcanzar altas producciones de cido ctrico,
