La comida es identidad y herencia, es una forma de expresar pasión y orgullo por el origen y
los secretos ancestrales que han pasado de generación en generación, celosamente custodiados por
familias que comparten los sabores en cada uno de los platillos elaborados con ingredientes
locales y recetas que han sobrevivido con el paso de tiempo. El proyecto denominado
Para su desarrollo fue necesario realizar diversas actividades iniciando con una investigación
sobre los ingredientes que aún cultivan en la región y así determinar los platillos a producir. Una
vez hecha esta investigación se procedió a elaborar las recetas para identificar los ingredientes y
cantidades exactas y la presentación del mismo. Los resultados del proyecto muestran que por
más que pase el tiempo se debe conservar el patrimonio culinario de la región, darle ese realce
tanto a los platillos ancestrales como a los ingredientes que están detrás de ellos, mismos que
cotidiana. Es por ello que es muy importante que más personas sepan de su existencia ya que

Abstrac
Food is identity and heritage, it is a way of expressing passion and pride for the origin and
ancestral secrets that have been passed down from generation to generation, jealously guarded by
families who share the flavors in each of the dishes made with local ingredients and recipes that
have survived over time. The project called "Elaboration of dishes based on ancestral ingredients
from the Huasteca region" arises from the idea of taking up ancient recipes, due to the fact that at
present the population has lost the habit of preparing traditional dishes, since the eating habit has
changed due to different lifestyles. The project was developed in the municipality of Xochiatipan,
Hidalgo. For its development it was necessary to carry out various activities starting with an
investigation into the ingredients that are still grown in the region and thus determine the dishes to
be produced. Once this investigation was done, the recipes were prepared to identify the
ingredients and procedures, then the corresponding tests were carried out to determine the exact
amounts and the presentation of the same. The results of the project show that no matter how
much time passes, the culinary heritage of the region must be preserved, giving that enhancement
to both the ancestral dishes and the ingredients behind them, which must be used and
disseminated to society. of their existence I have include them in the daily diet. That is why it is
very important that more people know of its existence since they are part of the culinary heritage
of Mexico.
