ABSTRACT
Piura is one of the leading producers and exporters of organic bananas in
Peru, placing its largest production in the Chira valley below.
Banana exports every year is increasing as many rice farmers are devoting
their lands to banana cultivation, although this increase crop very good
banana both to recover rice lands impoverished by rice crops for their loss of
sales and nutrients rendering them infertile, also the volumes of water
required for rice cultivation in times of low water,
The post-harvest waste (leaves, stems, rachis), also are becoming one of the
main polluting sources of parcels, currently post harvest these wastes are
discarded in the same plots being a contaminant focus since the increase of
flies, insects etc. staying in plants polluting the bananas that are in
production.
This research "rachis of banana (Musa paradisiaca)" focused assessing their
physicochemical characterization allows us to analyze the composition of
which was found to contain protein, fiber, carbohydrates that can be
leveraged to incorporate them into the food chain, with the characterization
rachis of banana were available for the production of flour by subjecting it to
a preconditioning and parameters was dried to flour subsequently prepared
for making cookies using formulations different percentages of wheat flour
and partially replaced with flour rachis of banana coming to obtain a
considerable percentage of acceptance of the panelists.
