RESUMEN
¿QUÉ ES EL QUITOSANO?
CONCLUSIONES
El quitosano está siendo utilizado con gran éxito en los sistemas de producción agraria
ecológica. El carácter natural y antimicrobiano del quitosano hace que su uso tenga
también un gran interés para la industria agroalimentaria por lo que actualmente está
presente en el mercado como un aditivo alimentario y complemento dietético en varios
países como Japón, Inglaterra, Noruega, Portugal y España. La aplicabilidad del
quitosano en el sector de la alimentación ecológica debe tener en cuenta el uso de
ingredientes autorizados por la legislación de obligado cumplimiento, Reglamento CE
834/2007 y las disposiciones de aplicación del Reglamento CE 889/2008.
