 BAJA SEA TURTLES NESTING
The coast along the Baja California peninsula
has been home to turtles for millions of years.
Baja itself is home to 5 of the world’s 7 spieces of
sea turtles. Two of them are most common; the
smallest, Olive Ridley or golfina, and the largest,
Laud, or leatherback. Their nesting time lasts in
average from June to February. Both are endan-
gered species, suffering from the effects of long
lines, fishing nets, development, and illegal
poaching. Organizations like Grupo Tortugero
or ProPeninsula’s sea turtle nursery programs
greatly improve hatchlings survival rates.
+ Don’t drive your vehicle on the beaches, you
might run over turtle eggs. To participate in the
release of the hatchlings visit: www.grupotor-

LA TORTUGA MARINA DE LA BAJA

La costa alrededor de la península de Baja
California y el Mar de Cortez ha sido hogar de
tortugas por millones de años. Baja es el hogar
de 5 de las 7 especies de tortugas marinas en
el mundo. Dos de ellas son muy comunes: la
más pequeña, Tortuga Golfina, y la más grande,
Laúd. Su época de incubación dura en prome-
dio de Junio a Febrero, ambas son especies en
peligro y sufren de los efectos de la pesca de
orilla, las redes y la caza furtiva. Organizaciones
como Grupo Tortuguero o ProPenínsula, tienen
un programa que mejora la sobrevivencia de la
tortuga durante sus primeras etapas de vida.
+ No maneje su vehículo en la playa, es prob-
able que aplaste algunos huevos de tortuga.

MAGNIFICENT WHALES OF BAJA
Every winter, Baja waters give life to many types
of whales, among them the California Gray
whale, Blue, Fin and Humpback Whales. They
travel thousands of miles from Alaska to warmer
waters of Baja to feed, mate, give birth, and play.
Humpback whales enjoy showing off for crowds
by spouting and breaching, leaping almost
completely out of the water. No wonder why
whale watching is one of the most sought after
winter activities in Baja. Go on a whale watching
trip and/or see them from the shore. You might
get lucky and even get to pet a whale!
+ We recommend whale watching trips at
Magdalena Bay or Puerto San Carlos. You will
have a great experience and also help areas
highly affected in hurricane Jimena in Septem-
ber 2009.
LAS MAGNÍFICAS BALLENAS DE BAJA
Cada invierno, las aguas de la Baja son el hogar
de una gran variedad de ballenas; por ejem-
plo, la ballena Californiana Gris, Azul, Aleta y
Jorobada. Ellas viajan miles de millas desde
Alaska hasta las tibias aguas de Baja para ali-
mentarse, aparearse, dar a luz y jugar. La ballena
jorobada disfruta divertirse frente a las personas
expulsando agua a través de su orificio superior,
brincando constantemente o aleteando con su
cola. Es por ello que el ver ballenas es una activi-
dad muy disfrutada en toda la península.

de ballenas en Bahía Magdalena o en Puerto
San Carlos. Además de pasar un rato increíble,
apoyará las áreas damnificadas por el huracán
Jimena en Septiembre del 2009.

DAY OF THE DEAD
Day of the Dead or Día de Los Muertos is one
of the most colorful Mexican traditions. It is a
celebration of life and a tribute to the dead. As
tradition goes, family and friends prepare an altar
for their beloved ones with their favorite dishes
and beverages; tamales, mole, sweets and the
traditional pan de muerto. Visit local cemetery
or church and admire the altars, decorated with
flowers, candles and images of the saints and/
or the deceased. There you will meet elegant La
Catrina, an icon in Mexican culture, reminding
us that life is now, and will forever be.
+ In Mexico, Day of the Dead is celebrated on
November 2, while November 1 honors chil-
dren and infants, and is referred to as Dia de
Todos los Santos, or Day of All Saints.
DÍA DE LOS MUERTOS
El Día de Los Muertos es una de las tradiciones
mexicanas más coloridas. Es una celebración a
la vida y un tributo para la muerte. Tradicional-
mente, familia y amigos preparan un altar para
sus seres queridos con sus platillos y bebidas
favoritos y pueden incluir tamales, mole, dulces
y el tradicional pan de muerto. Visite el cemen-
terio local o la iglesia y admire los altares deco-
rados con flores, velas e imágenes de santos o
de los difuntos. Podrá ver a la elegante Catrina,
un ícono de la cultura mexicana, recordándo-
nos que la vida es hoy y siempre lo será.
+ En México, el Día de Los Muertos se celebra el
2 de Noviembre, mientras que el primer día del
mes honra a los infantes fallecidos, conocido
también como el Día de Todos los Santos.

IN BAJA, LIFE IS A BEACH!
We just love Baja winters! The weather is perfect
and there is nothing better than spending your
day at the beach. One of our all time favorites
is Playa El Requeson, in Bahia de Concepcion,
Mulege. It takes a while to get there, but it’s
worth it. We like: El Requeson (Bahia de Concep-
cion, Mulege), Balandra (La Paz), Cerritos (before
Todos Santos), Lovers Beach (Cabo San Lucas),
Zacatitos (San Jose del Cabo), Punta Colorada
(La Ribera) and North beach at arroyo San Bar-
tolo (North Los Barriles).
+ Don’t forget your sunscreen, even in the morn-
ing. The sun is very strong here, so avoid burning
and use the highest SPF you can find in a local
store. Clean up after you leave. Only that way we
can keep our beaches immaculate and sea life
abundant.

A COUPLE of steps from downtown Cabo San Lucas and the Mari-
na, before entering Capella Pedregal gate and its 1,000 foot private tun-
nel Dos Mares carved through the mountainside, you can hardly imagine
what awaits for you on the other side. Upon arrival, facing a breathtaking
expanse of azure sea and sky, a friendly greeting welcomes you. You feel
comforted as if stepping into the home of a cherished friend. You imme-
diately forget where you are and what you are here for. Is this heaven?
Maybe, maybe not. But after spending some time here, you will begin to
wish heaven is as nice as Capella Pedregal.
A UNOS pasos del centro y de la marina de Cabo San Lucas, antes

CAPELLA PEDREGAL
Capella Pedregal is nestled in one of the most coveted pieces of land in
Cabo San Lucas. It is laid on 24 beachfront acres at the southernmost tip
of the Baja California Peninsula, where the Pacific Ocean meets the Sea of
Cortez near the legendary rock formation known as Land’s End. It is the
only luxury hotel and residence resort with immediate proximity to the
world class Marina and just a couple of steps from downtown Cabo.
FALL - WINTER
The Capella Pedregal story started more than 30 years ago with Don Man-
uel Díaz Rivera, an architect, visionary and family patriarch who brought
his family to Cabo San Lucas in the 1970s, when it was still a small, 900
inhabitant fishing village. He was in search of a place where they could
work, live and thrive together while building a dream. He purchased land
that would become Pedregal de Cabo San Lucas in 1974, recognizing
the great potential in its glorious views of both the Sea of Cortez and the

sula de Baja California Sur, donde el Océano Pacífico se encuentra con el

mente famosa marina, y a solo unos pasos del centro de Cabo.
La historia de Capella Pedregal comenzó hace mas de 30 años con Don
Manuel Díaz Rivera, un arquitecto, visionario y patriarca familiar que trajo
a su familia a Cabo San Lucas en los años 70s, cuando el área era todavía
un pequeño pueblo de 900 habitantes. El estaba en busca de un lugar
donde pudieran trabajar, vivir y prosperar mientras construían su sueño.
Adquirió la tierra que se convertiría en Pedregal de Cabo San Lucas en
1974, reconociendo el gran potencial de sus vistas gloriosas al Mar de

Despite its desert location, Baja California Sur is a place where you can

hill, or arroyo. Todos Santos almost imitates a Mediterranean climate

of plants and fruits you never thought you would be able to encounter
in Baja.
For many, an orchid is a symbol of
unattainable perfection. Its beauty is
immaculate, its shapes unimaginable, and
its color variety unmatched.
Personally enchanted by the mesmerizing beauty of orchids and longing
for my own orchid sanctuary, an orchid’s exhibition at the annual Todos
Santos Art Festival lead me to search for a man exhibiting these beautiful

plants.
After a letter of introduction, Mr. Heriberto Parra Hake, agronomic engi-
neer, who specializes in botanicals, is an orchid lover, an owner of a plant
nursery and a promoter of Todos Santos culture, invited ESCAPES to visit
his garden. This garden proved to be a true Garden of Eden on Earth,
boasting exotic plants, fruits, flowers, noche buenas (Christmas flower,
called Poinsettia in English), and not the least, an impressive private col-
lection of orchids.
For many, an orchid is a symbol of unattainable perfection. Its beauty is
immaculate, its shapes unimaginable, and its color variety unmatched.
The orchid is certainly the most diverse plant species, with an array of
fascinating blooms. While it may appear very fragile, in wilderness it lives
in the most remote and harsh places. Monarchs of the plant kingdom,
orchids are arguably the largest family of flowering plants. It is estimated
that there are over 30,000 different orchid species on our planet, and new

donde uno puede descubrir una amplia variedad de diferentes micro-
climas al sólo cruzar un rio, montaña o arroyo. En algunos lugares del
pueblo, Todos Santos puede presumir e un clima mediterráneo, donde

 species are still being discovered. On top of this, there are over 100,000
registered hybrid strains, which have been artificially produced.
Many professionals claim orchids are among the most developed plants
on the planet. It is believed that with their smell, energy and micro-vibra-
tion, we can cure basic illnesses, physical, emotional and spiritual, and
Heriberto shares that belief. Today we already have beauty products with
orchid extracts, and I believe that sometime in the not so distant future,
we will use orchids in medicine as well.
So, one would think, how could such fragile and delicate plants, which
love humidity and rainy and spring-like seasons, survive in Baja with aver-
age year-round temperature 78 F and 350 sunny days? Heriberto built
a special nursery for them, with sprinklers and semi-shade, which gives
them optimum growing and blooming conditions. The microclimate of
Todos Santos helps with it as well. Orchids are part of his personal collec-
tion and you will not be able to persuade him to sell you one. You can
though (occasionally) get them in specialized flower boutiques. Orchids
are exciting and deeply gratifying to grow. But, don’t say that you haven’t
been warned – orchid growing may become an addiction and life-long
indulgence.

El valor de una prepa diferente
IT BEGAN in 1997 when a group of families in the city of La Paz had
the idea of establishing a school where any student could receive a valu-
able high school education, develop skills beyond a classroom and fully
understand the impact that their actions will have on our society. These
are the foundations of Instituto Mar de Cortés.
The Instituto Mar de Cortés is a high school dedicated to train students to
be committed to the improvement of the community so they can help it
in its social and economical development.
The first group was the class of August 1998 with only 21 students, and
little by little, the non-profit organization named Educación y Cultura
Vanguardista A. C., was integrated by the families Nava Gutiérrez, Sierra
López, Flores Márquez, Reséndiz Díaz Rivera and Alonso Ramírez. They
looked for an official education institution to support them and were
backed up by the Instituto Tecnologico y de Estudios Superiores de Mon-
terrey (Monterrey’s Technology University, or ITESM) and the Colegio de
Bachilleres del Estado (COBACH) which have helped to make the dream
come true for hundreds of students over many years by providing them
a good quality high school education.
The curriculum is composed of mandatory subjects under the guidelines
of COBACH with workshops in Information systems and specific training
in Science and Engineering. There are also core subjects by the ITESM. The
reason for combining these subjects is to offer the highest standards in
education in order to train students to be committed to the community

COMENZÓ en 1997 cuando un grupo de padres de familia en la
ciudad de La Paz tuvieron la idea de establecer una preparatoria donde
sus hijos recibieran educación de calidad, desarrollaran habilidades mas

El Instituto Mar de Cortés es una preparatoria cuyo objetivo es formar
personas comprometidas con el desarrollo de su comunidad para mejo-
rarla en el ámbito social y económico.

El primer grupo fue la generación de Agosto de 1998 con sólo 21 estu-
diantes, y poco a poco, el patronato Educación y Cultura Vanguardista
A.C. formado por las familias Sierra López, Flores Márquez, Reséndiz Díaz
Rivera, Alonso Ramírez y Nava Gutiérrez , recibieron el apoyo del Instituto
Tecnológico y de Estudios Superiores de Monterrey (ITESM) y del Colegio
de Bachilleres del Estado (COBACH), los cuales durante todos estos años
han impulsado el sueño de cientos de jóvenes al obtener una educación
de nivel medio superior de calidad.
El plan de estudios está conformado por todas las materias que dictamina
el COBACH con una capacitación en Informática y un área de formación
específica en Ciencias Exactas e Ingeniería. Asimismo, se llevan también
materias de cursos sello del ITESM. La intención de esta combinación es
ofrecer los más altos estándares de calidad en educación con la finalidad
de formar alumnos con un alto compromiso hacia su comunidad, y con
un espíritu de superación que se refleje en sus actitudes hacia el trabajo y

with a spirit of excellence that is reflected in their attitudes toward work
and relationships with others. Such a complete academic program allows
its students to be admitted into the best universities and colleges in
Mexico and overseas. Many of them receive significant scholarships of up
to 90% at prestigious universities.
To provide a fully integrated education, sports and culture are promoted
through several workshops such as tennis, dancing, painting, drama and
music. Many social activities are also offered to foster a sense of commu-
nity amongst the students: ice-breaking events, pep rally, field trips, lead-
ership congresses and above all, the pride of the school, is the constant
involvement of the students as a group in their community. The impact
of their unique civic contribution is clearly reflected in the smiles of the
children, the elderly and all the people that have been touched by their
community works.
As its slogan says, the importance of a unique high school lies in the
combination of its academic excellence and the students’ commitment
towards social responsibility. A clear example of these two elements at
work is the Leadership Congress organized by the students themselves

each year. With the guidance of a teacher, students prepare conferences
with renowned national speakers to explore themes that teach them to
better themselves each day. Another valuable experience is their annual
Gala Ball held every October. Each student group chooses a representative
to be Queen of the school with the objective of leading the others in a
charitable contribution to the community. The election of the Queen takes
into serious consideration the leadership, enthusiasm and commitment
that the candidate and her team demonstrate.
In 2008, all candidates for Queen and their teams were given a different
park in the city and their objective was to improve its grounds. Each group
created different activities to gather funds and on a Saturday morning
each group had to clean the facilities, repaint benches, and leave the park
overall in optimal condition. In addition to the conferences and the Gala
Ball, students also organize fundraisers to collect donations for a friend
in need or for a selected cause. It is important to highlight that all these
events are planned and carried out by the students themselves, demon-
strating their initiative and commitment toward a better future.

Para complementar una educación integral, se promueven los deportes
y la cultura a través de la impartición de talleres de tenis, baile, pintura,
música, teatro y liderazgo. Se realizan actividades que promueven la uni-
dad de los alumnos como el evento Rompe Hielo o Bienvenida, el Rally
de Conocimiento, viajes para conocer su estado, Congresos de Liderazgo
y sobretodo, se apoya a la sociedad: algo que enorgullece al plantel es el
constante apoyo de sus estudiantes hacia la comunidad, el cual se refleja
en la sonrisa de niños, ancianos y todas las personas en general quienes
han sido beneficiados a través de las distintas actividades de ayuda que
los estudiantes realizan, así como campañas de reforestación y embel-
lecimiento de diferentes áreas de la ciudad.
Tal y como su slogan lo dice, el valor de una prepa diferente reside en la
combinación de elementos como instalaciones con tecnología de punta,
excelente calidad académica, el liderazgo y la responsabilidad social de sus
estudiantes. Un claro ejemplo que pone a prueba el desarrollo de los alum-
nos se presenta en el Congreso de Liderazgo organizado por ellos mismos.
Con la guía del maestro encargado, organizan conferencias impartidas por
destacadas personalidades a nivel nacional impartiendo temas que ayu-
dan a los jóvenes a ser mejores cada día. Otra importante actividad es el
baile anual realizado en Octubre. Los grupos de estudiantes eligen una
representante para ser Reina de la escuela quien tiene como objetivo ser
líder de sus compañeros para apoyar a la comunidad en el área que se le
asigne y la elección se realiza tomando en cuenta el liderazgo, entusiasmo
y compromiso que ella y su grupo mostraron al realizar dicha tarea.
En el 2008, las candidatas a reina y su salón de clase tuvieron la tarea de reha-
bilitar seis parques de la ciudad. Todos realizaron actividades para reunir los
fondos necesarios, se avocaron a recolectar basura, pintar bancas, limpiar jue-
gos y dejar en condiciones óptimas el parque a su cuidado. Los estudiantes
también organizan eventos para apoyar una causa en específico. Es impor-
tante resaltar que todas estas actividades son planeadas y realizadas por los
alumnos, mostrando con ello iniciativa y compromiso para un mejor futuro.
During the past 8 years the Niparaja Foundation has awarded many
scholarships, enabling students to participate with EPI (Ecology Project
International). One scholarship sends students for a week long assign-
ment to conduct ecological studies in Espirtu Santo Island, while another
sends students to Wyoming for a month to do field research in a forest.
A third scholarship includes the participation of ITESM Campus Guadala-
jara who invites the most dedicated students to participate in an annual
NASA project.
In 2008, the national dependency of education (Secretaría de Educación
Pública, SEP) tested all the high schools in Mexico and proudly, Instituto
Mar de Cortés won the 1st place in the South of Baja and a national 4th
place within all private high schools.
Today, the Instituto Mar de Cortés through its social responsibility group
called Rescuing Families (which is made of mothers concerned about the
environment in which their children are growing up in), promotes several
workshops and educational lectures about the importance of not selling
alcohol to minors, the proper use of the seat belt and responsible driving,
and many other topics.
Recently, the Instituto Mar de Cortés opened its new facilities that feature
the latest in education technology and have all the amenities to comply
with the growing demand of student enrollment.
There is no doubt that what was started 11 years ago as a thoughtful
idea, and has positively influenced the lives of its students, their families
and all who have been touched by its actions, it is now an institution that
meaningfully impacts the society of the community of Baja California Sur
and all of México.

Durante los últimos 8 años la Fundación Niparajá ha otorgado becas para
que los alumnos de la preparatoria participen en el EPI (Ecology Project
International), mientras que algunos estudiantes forman parte del grupo
que durante una semana realizan estudios ecológicos en la Isla Espíritu
Santo, a la par que otros alumnos más participan en Wyoming durante un
mes haciendo estudios en el bosque. También el ITESM Campus Guada-
lajara invita a los estudiantes más destacados a participar en el proyecto
anual de la NASA.
Durante el 2008 la Secretaria de Educación Pública realizó exámenes a
más de 11,000 preparatorias en todo el país y orgullosamente el Instituto
Mar de Cortés ha obtenido 1° lugar en el estado de Baja California Sur, 4°
lugar a nivel nacional en preparatorias privadas.
El Instituto, a través del grupo Rescatando Familias (el cual consiste en
madres de familia preocupadas por el ambiente en que sus hijos se
desenvuelven) promueve talleres y conferencias, tales como la impor-
tancia de no vender alcohol a menores, usar el cinturón de seguridad,

manejar responsablemente, entre otros.
Recientemente el Instituto Mar de Cortés tuvo el orgullo de abrir las puer-
tas de sus nuevas instalaciones construidas con tecnología de vanguardia
y cuentan con espacio para crecer de acuerdo a la demanda.
No cabe duda de que lo que comenzó hace 11 años como un sueño que
ha influenciado positivamente la vida de estudiantes, sus familias y todos
quienes han sido beneficiados por sus acciones, es hoy una institución
con un legado importante en la sociedad del Sur de Baja California y de
todo México.

THE OTHER URBAN NATURES
LAS OTRAS NATURALEZAS URBANAS
THE ILLUSION of excess has finally gone off with the global eco-
nomic crisis. In cities there is now a need to think on the reasons that led
us to a point where the debauchery and waste generated only a sumptu-
ous emptiness, material and ideological.
This affected the growth and shaping of cities, and now we need a real
and transcendent change, to affirm from a reactive posture that we aban-

don the idea that “a society of wealth is a society in which all material and
cultural needs meet easily”, leaving behind dysfunctional social logic that
has condemned us to a “luxurious and spectacular famine”. In this sense,
the public space and its proper management is crucial for the rectification
of the urban nature of any contemporary city.
The cities of Baja California Sur have based its development in an obso-
lete model of urban development FONATUR institutionalized in the 60’s.
Among other deficiencies, the local leisure facilities (for people who
actually live in these tourist destinations) are always last on the list. The
shortsightedness of cities and federal governments left us with mediocre
private efforts which aimed more at mass consumption spaces than mass
leisure areas.
In these lines we will mention the exercise of urban “acupuncture” that was
recently carried out in the city of La Paz. At the beach water park Coro-
muel, located in front of Pedregal de la Paz, the city has recovered one of
the largest and more traditional leisure spaces in the area, transforming it
with a clear intention of creating quality public space, to exploit a situation
presented by Urban Nature.

This intervention includes the increase of capacity of the beach area for
up to 2,500 people, a quay of 115 meters which is the pinnacle of the pier,
36 palapas, 263 palms, a treatment plant with capacity of 90 thousand
liters of water daily, walkways and ramps, 100 parking spaces, 6 sanitary
units, public lighting, water tank, restaurant, outdoor theater and 28 store
spaces.
While noble, and widely accepted by local residents, the Coromuel water
park is a shy demagogic effort to generate public space. Still, the project,
as many others we encounter around us, is not taking proper advantage of
good situations presented by the Urban Nature. The space could among
others generate its own power by solar panels that could educate people
in the use of “public space”. Besides that this could be the starting point of
a process of “socialization” of La Paz (or even the State) being the first inter-
vention of a systematic and planned renovation of public spaces that is
strongly needed all around Baja Sur. The nature around us is rich and offers
plenty of entertainment, energy and sustainable resources. We should use
them wisely and learn how to blend them into the public space, in order
to be able to give back to the society and the nature itself.

EL ESPEJISMO del exceso se ha esfumado finalmente frente a la crisis
económica global. En las ciudades hay ahora una necesidad de reflexionar
acerca de las razones que nos llevaron a un estado donde corroboramos que el
desenfreno y el despilfarro únicamente han generado un suntuoso vacío, mate-
rial e ideológico.
Esto repercute en el crecimiento y conformación de las ciudades, la necesidad
de un cambio real y trascendente, de afirmarnos desde una postura de reacción
que nos haga abandonar la idea según la cual “una sociedad de la abundan-
cia es una sociedad en la cual se satisfacen fácilmente todas las necesidades
materiales y culturales”, dejar atrás esa disfuncional lógica social que nos ha con-
denado a una “carestía lujosa y espectacular”. En este sentido, el espacio publico
y su correcta gestión es crucial para la rectificación de la naturaleza urbana de
cualquier ciudad contemporánea.
Las ciudades del estado de BCS, han partido de un modelo obsoleto de desar-
rollo urbano institucionalizado por FONATUR en los 60’s. Dentro de las carencias
que se tienen, las infraestructuras para el ocio local (para los que viven en estos
destinos turísticos) siempre son las ultimas en la lista. La miopía de los gobiernos
municipales y federales, nos ha orillado a esfuerzos privados mediocres orienta-
dos mas al consumo masivo, que al ocio masivo.
En este rubro comentaremos el ejercicio de “acupuntura” urbana que se ha
realizado recientemente en la ciudad de La Paz. En el parque acuático de la
playa Coromuel, frente a Pedregal de la Paz, se ha recuperado para la ciudad
uno de los espacios de ocio de mayor tradición en esta ciudad y que se ha
intervenido con una intención de generar espacio publico de calidad, una situ-
ación aprovechada dentro de la Naturaleza Urbana. Esta intervención incluye: el
aumento de la capacidad del área de playa a 2 mil 500 personas, muelle de 115
metros lineales que constituye el remate del malecón, 36 palapas, 263 palmeras,
una planta de tratamiento de aguas residuales con capacidad de 90 mil litros
de agua diarios, andadores y rampas de concreto estampado, 100 cajones para
estacionamiento, 6 módulos sanitarios, luminarias, cisterna, restaurante, teatro
al aire libre y 28 locales comerciales.
Aunque noble, y al parecer bien recibida por los residentes locales, el parque
acuático Coromuel es un tímido esfuerzo demagógico para generar espacio
publico. El proyecto, como muchos otros que conocemos, no aprovecha del
todo las situaciones que presenta la Naturaleza Urbana. Entre otras cosas, el
proyecto podría generar su propia electricidad por medio de paneles solares al
mismo tiempo que educaría a la gente en el uso adecuado del espacio publico.
Este también pudo haber sido el punto de partida de un proceso de “social-
ización” de La Paz (o incluso a nivel Estatal) siendo la primera de un sistema pla-
neado de intervenciones y mejoras al espacio publico que tanto se necesitan en
la Baja Sur. La naturaleza que nos rodea, y el ecosistema donde vivimos es una
rica fuente de oportunidades de entretenimiento, energía y recursos sustenta-
bles. Debemos usarlos sabiamente y aprender como fusionarlos con el espacio
público, para así poder dar de vuelta a la sociedad y a la naturaleza misma.

all have become more cautious of our next steps. We intend to put some
income aside for rainy days, and before making a purchase we think twice,
sleep it over and rethink again. Business landscape has altered significantly.
The car industry gives incentives like never before; real estate prices have
come down by 20-40%, giving great opportunities to those who can take
advantage of them. Even high-end fashion industry adapted by giving cau-
tious customers designers’ creative best for a better price.
We are all starting to look again to the future and with it choosing selec-
tively where to spend our dollar. Where do you do grocery shopping, buy
clothes, and have a dinner? Probably there, where they treat you as a valued
customer, know their business, show desire to help you solve your need

THERE IS something magical about coffee. Its growth, produc-
tion and usage have linked continents, cultures and traditions for
centuries. There are many legends telling of the origins of coffee,
legends which contradict and duplicate each other; some say that
coffee came from heaven, and the other that it is the devil’s drink. To
me, coffee holds a nostalgic memory, as my grandmother used to
‘read’ my future from the remains of coffee grounds, a ritual coming
from the Orient, when fortune tellers were performing coffee read-
ing rituals before any important decisions made in love or business.
Drinking coffee today is also a ritual, a ceremony to start the day, a
reason to meet with a friend… It is one of those daily pleasures we
enjoy no matter what. And even if you are not a coffee lover, you
must admit there is something mystical in it.
Coffee originated in Ethiopia around AD 1000. The first coffee traders
were the inhabitants of the southernmost part of the Arabian Pen-
insula, in what is now Yemen. From the Muslim world it spread to
Italy, then to the rest of Europe, to Indonesia, and to the Americas.
In Mexico, coffee was first planted in the late 1700s. Mexico is one
of the largest producers of certified organic coffees in the world.
The most famous coffee market names include Veracruz, Coatepec,
Oaxaca Pluma, and Chiapas. Mexican coffee beans are typically light
bodied and nutty, but can have a heavier body, brighter acidity, and
overtones of chocolate.
The coffee ‘path’ starts between the Tropic of Cancer and the Tropic
of Capricorn, where Coffea Arabica and Coffea Canephora (known
as Robusta) grow at altitudes ranging from about 650 to 6,500 feet
(200 to 2,000 m). Once ripe, coffee berries are picked, processed, and
dried. The seeds are then roasted, undergoing several physical and

amante del café, debe admitir que hay algo místico en el.
El café se originó en Etiopía alrededor del año 1000 A.C. Los primeros

cuerpo ligero y en forma de nuez, pero pueden tener un cuerpo más
pesado, acidez brillante y matices de chocolate.
La línea del café comienza entre el Trópico de Cancer y el Trópico de
Capricornio, donde el café arabica y café canephora (conocido como
robusta) crece a altitudes que van desde los 200 hasta los 2000 met-

 chemical changes. The roasting phase determines the flavor of the bever-
age in the cup, its body and its acidity level. They are then ground and
brewed to create coffee.
With roasting, the coffee beans undergo a metamorphosis. They change
color, lose weight, grow in volume and gain aroma. High temperatures
allow the beans to develop their aromatic qualities. At 212°F (100°C)
the beans are golden in color and smell somewhat like toasted bread, a
fragrance that will quickly turn into the sublime aroma of coffee. When
the temperature rises to more than 302°-356°F (150° – 180°C) the beans
become larger, lustrous and brown. Roasting reaches its optimum level at
392-446°F (200° – 230°C) and the coffee takes on its distinctive taste. At
this point, the coffee is removed from the roaster and is cooled quickly
with currents of cold air.
ESCAPES team visited Cabo Coffee Company’s coffee roasting factory in
Cabo San Lucas. Denise Downward, manager of this family owned com-
pany, which has been in Baja Sur for more than 6 years already, was kind
enough to explain us their roasting process, and showed how to know a
good, fresh coffee. Cabo Coffee’s coffee comes from organic coffee farms
in Oaxaca, where the whole growth, picking, and processing is natural.
They buy green coffee, low on acid, and roast it daily in their plant in Cabo
San Lucas. To ensure coffee’s freshness, they roast it two times daily, and

also arrange daily delivery to big local market chains, small stores, cof-
fee shops, hotels and restaurants. It is a daily obligation, but it is worth it,
says Denise, as their clients and coffee aficionados appreciate their fresh
ground coffee.
What kind of coffee do we drink in Baja Sur? Based on Denise’s experience,
locals buy ground coffee, and tourists usually buy whole bean, so they
can grind it fresh back at their homes. In their coffee shops, tourists on
average buy refreshing frappes, locals drink Americano, and non-Mexican
locals usually drink freshly brewed coffee.
When buying a coffee, pay attention that your coffee package includes
the degassing hole. This guarantees rapid and complete dispersion of the
carbon dioxide the coffee releases during storage, thus keeping in all the
coffee’s aroma.

el café es removido de la tostadora y es enfriado rápidamente a través de
corrientes de aire frío.
El equipo de ESCAPES visitó las instalaciones de Cabo Coffee Company
en Cabo San Lucas. Denise Downward, la administradora de esta empre-
sa familiar con más de 6 años en el sur de Baja, nos explico el proceso
de tostado y nos enseño como distinguir un buen café fresco. El café de
Cabo Coffee’s proviene de granjas orgánicas en Oaxaca, donde la siem-
bra, recolección y proceso del café es natural. Ellos compran café verde,
bajo en ácido, y lo tuestan diariamente en su planta en Cabo San Lucas.
Para asegurar la frescura, dos veces al día se procesa café, al igual que
diariamente se distribuye el producto a supermercados locales, cafeterías,
hoteles y restaurantes. Es una responsabilidad que debe hacerse a diario,
pero Denise comenta que realmente vale la pena, ya que sus clientes y
aficionados aprecian su café recién molido.
¿Qué café bebemos en el Sur de la Baja? Por su experiencia, Denise comen-
ta que los locales compran café molido y los turistas usualmente el café
entero, ya que ellos pueden molerlo en sus hogares. En sus cafeterías, en
promedio los turistas compran los refrescantes frapés, los locales toman
americano y los locales extranjeros prefieren beber café recién procesado.
Cuando compre café, preste atención que el empaque de café incluya
una válvula para la desgasificación. Esto garantiza una rápida y completa
dispersión del dióxido de carbono liberado durante el almacenamiento,
manteniendo el aroma del café.

Turkish Coffee Café Turco

This method is most commonly used in Turkey,
Greece, and Middle Eastern countries. The first
thing you need is an “ibrik”, a small one-handled
brass or copper jug, as shown on the picture.
Add sugar to the “ibrik”, then water, and bring
them to the boil over a low heat. Take the “ibrik”
off the heat and add very fine ground coffee.
Mix, and boil once more. When the liquid

one, but in Baja, as we like to say, dreams do come true. Edith lives
with her husband and two sons in the East Cape of Baja California
Sur, in the small picturesque town of La Ribera. They live near the
beach and spend a lot of time with the boys fishing, snorkeling
and swimming. They are constantly seeking new and interesting
adventures as they drive on the back roads of deserted Baja Cali-
fornia Sur.
Why Baja, one would ask?
I came to Baja to visit my brother in Cabo Pulmo who had a dive
business there. After spending some time here I realized Baja is
truly a paradise. That was 8 years ago and now Baja is my home.
Though my home town area is beautiful, Baja is very unique and
has an attraction that is hard to resist.
How did you get started in the real estate business? Why do
you like what you do?
Before I came to Baja I was a dentist and a sales manager for a large

The past and current year have been hard on all businesses,
and in Baja we could all feel the consequences in the real
estate industry as well. How do you see current market condi-
tions, how are they affecting your business, and what are your
‘tactics’ in doing business these times?
The current real estate market offers a real challenge. I find that
staying connected with clients is a key factor in dealing with
the current economic situation. Keeping clients informed is very
important because many of them do not live in Baja full time and
keeping them informed about current trends gives them a sense
of having some control whether they are buyer or seller.
What does your free time look like? What do you like to do
around Baja?

days. We enjoy the beautiful secluded beaches where we can test

some time treasure is to be found buried near the garden as well.
Who or what was the biggest contributor to your success?
One of the strongest contributing factors is the support I have
received from the Coldwell Banker Riveras staff, a particular agent
in Los Barriles, and my husband. Though he is not in real estate he
offers me great support and a sounding board in dealing with the
many varied business related issues.
What is your secret to success?
I owe much of life’s success to my family’s attitude toward life.
Simply said, that attitude is work hard, be honest and believe in
yourself.

Uno pudiera preguntar, ¿Porque la Baja?
Vine a la Baja a visitar a mi hermano en Cabo Pulmo, el cual tenía
una empresa de buceo ahí. Después de pasar algún tiempo aquí,
me di cuenta de que la Baja es realmente un paraíso. Eso fue hace
ya 8 años, y hoy la Baja es mi hogar. Aunque mi ciudad natal es muy
hermosa, Baja es única y tiene una atracción difícil de resistir.

Uno de los factores más fuertes ha sido el apoyo que he recibido
del personal de Coldwell Banker Riveras, además de un agente en
particular en Los Barriles, y el de mi esposo. Aunque no está en el
mercado inmobiliario, me apoya en gran medida y es un gran pilar al
tratar con las diferentes situaciones del negocio.

una empresa grande de computadoras y electrónicos en Jalapa
Veracruz, México. Después de llegar a la Baja y optar por quedarme,
me interesó el mercado inmobiliario. El trabajar en éste ramo ofrece
grandes oportunidades así como un horario flexible. Puedo trabajar
en base a mis horarios, atender a mis clientes y pasar tiempo de cali-
dad con mis hijos en sus actividades escolares y en la casa.

El año pasado y el actual han sido difíciles para todas las

empresas, y en Baja hemos sentido las consecuencias en el
mercado inmobiliario. ¿Cómo ves las condiciones actuales del
mercado? ¿Cómo afectan tu negocio y cuáles son tus “tácti-
cas” para hacer negocio en estos días?
Las condiciones actuales de mercado ofrecen un verdadero reto. He
encontrado que el estar en contacto con los clientes es un factor
clave en ésta situación. Mantenerlos informados es muy importante
ya que ellos no viven en la Baja de tiempo completo y al comunicar-
les constantemente la situación actual, les da la sensación de tener
algo de control, sean compradores o vendedores.

Sábados y domingos son una combinación de trabajo y juego, como
