Abstract : In this investigation the anthocyanin type pigments of the blackberry fruit (Rubus glaucus Benth.) Were
extracted, where the raw extract was obtained from the fruit, the influence of its main extraction process variables was
evaluated, extraction time, solvent and concentration. The applied methodology is known as solid-liquid extraction in
which the juice or blackberry pulp is diluted in KCL (potassium chloride) and CH3COONa (sodium acetate) to obtain
the highest percentage of pigment, it is known from other investigations that the Blackberry contains a high content of
anthocyanins, which is why this fruit was chosen to undergo such research.

CONCLUSIONES
Las antocianinas son pigmentos naturales que
imparten colores a las plantas para diversas
funciones. Estos pigmentos representan un
potencial para el reemplazo competitivo de
colorantes sintéticos en alimentos, productos
farmacéuticos, cosméticos y para la fabricación de
productos dirigidos al consumo humano.
