MemneaO EM HERICO om Tequila, the drink which typifies the festive spirit of Mexico, is a refined descendant of the mezcal brandy of Mexican Colonial times, and was probably the first liquor co be distilled in the Americas. It was prepared, and is still being made in various regions of the country, fromm the core of the mezeal cactus, commonly known in the United States as the Century Plant. It seems that only in the region of Tequila, State of Jalisco, are the soil and climate suitable for the pro- duction of the blue variety of maguey, which is the only mezcal used in the manufacture of fine Tequila The first factory of “mezcal wine" in that region was established in the latter half of the XVIII Century by don Pedro Sanchez de Tagle, who was granted a permit for that purpose by the Viceroy of New Spain. Up until the end of the last century, this liquor was known as “mezcal wine of Tequila”, for even then the mezcal of that pare of the country was distinguished by its unique flavor and other special characteristics. With time it came to be known simply as Tequila. Nowadays, the famous Tequila CUERVO is being made in an ultramodern distillery plant “La Rojena” within a beautiful century-old hacienda right in the heart of the vast plantations which for years and years have been producing the best mezcal in Tequila, Jalisco. There, millions of plants are grown exclusively for consumption by this factory, where the mezeal juice is subjected ro a double distillation process in copper stills and then allowed to mellow in oak casks. “La Rojefia”, founded in 1823, adheres strictly to the traditional standards which for decades have made it famous.
