Gluten-free Drop Biscuits

Prep: 15 minutes Oven: 450 F

Bake: 10 minutes Makes: 12 biscuits

Ingredients: 3 cups all-purpose gluten free flour 1 tsp xanthan gum 1 tsp pectin 1 tablespoon baking powder 1 tablespoon sugar 1 tsp salt tsp cream of tartar c butter 1 c milk 1. Preheat oven to 450F. In a large bowl, combine the flour, xanthan gum, pectin, baking powder, sugar, salt, and cream of tartar. Cut in butter until mixture resembles coarse crumbs. Make a well in the center of the flour mixture. Add milk all at once. Using a fork, stir just until mixture is moistened. 2. Using a large spoon, drop dough into 12 mounds onto a greased baking sheet. Alternatively, you can drop them into an ungreased cast iron skillet. 3. Bake for 10 to 14 minutes or until golden. Serve warm.
