Batata bhaji Ingredients: Potatoes 4-5 Onion 3 Green chilly 2 Kadipatta 4-5 Mustard seeds 1 tsp Cumin seeds

1 tsp Turmeric powde 1/2 tsp Hing 1/4 tsp Grated coconut 1/2 cup Coriander leaves 1/2 cup Oil 1 tbsp Salt How to make Batata bhaji: Boil potatoes in pressure cooker. Remove skin and make pieces. Chop onion,green chilly and coriander leaves finely. In a pan heat oil and add mustard seeds and cumin seeds. When they crackle add kadipatta,green chilly and onion. Fry onions on low flame till transperent then add hing,turmeric powder and salt. Now add potato pieces and mix well. Cover the pan and allow to cook on low flame foe 2-3 min. Lastly add grated coconut and coriander leaves. Enjoy batata bhaji with hot puris. -------------------------------------------------------------------------------Crisp kanda bhajia 4 large sized onions (sliced) Salt to taste Oil to deep fry 1 cup gram flour (besan) 1 tsp red chilli powder Slice onions fresh to make the bhajias crisp. Add salt and then press with hand to extract excess water. Heat sufficient oil in a kadai till very hot. Add besan, red chilli powder to the onion slices and mix. Do not add any water. Drop lumps of onion mixture into the hot oil. If they stick together try to separate them. Drain when they are half done. Just before serving refry the bhajias in very hot oil. Drain when golden onto an absorbent paper. Serve hot. -------------------------------------------------------------------------------Potato Bhajia Ingredients Potatoes(large) - 2 nos (peeled and diced) Green chillies - 3 - 4 nos (crushed) Garlic - 1/2 tsp Cumin seeds(Jeerakam) - 1/2 tsp (ground)

Coriander leaves(chopped) - 1/4 cup Tamarind sauce - 2 tbsp or Citric acid - 3/4 tsp Grated coconut - 2 tbsp Tomato(large) - 1 no (grated) Red chilly powder - 1 tsp Salt - 1 tsp Oil for deep frying For batter:Gram flour(Kadala podi) - 1 1/2 cups Water - As reqd Coriander leaves(chopped) - 2 tbsp Salt - 1/2 tsp Baking powder - 3/4 tsp Preparation Method 1)Place the potatoes along with tomato, salt, water and red chilly powder in a vessel and cook on a low heat for 30 mins, until very soft. 2)Remove from heat and mash. 3)Add the remaining ingredients and mix well. :- Check taste and if you want it to be very sour, you can add more tamarind sau ce. 4)Make small round balls off it. 5)Mix together gram flour, coriander, salt, baking powder and enough water to make a thick batter. 6)Heat oil in a frying pan. 7)Dip potato balls in batter and coat well with it. 8)Deep fry, till golden brown. 9)Drain on an absorbent paper. :- Serve hot with chutneys.
