Mushroom Recipes Butter Mushroom Fry

Ingredients 100 gms Button Mushroom 1 tsp Chilly Powder 1/3 tsp Salt 2 gm cumin seeds Pinch of asafoetida Oil - reqd Quantity. Preparation Method 1. Wash Mushrooms and place it on Blotting / Old news paper. 2. Heat oil on a tawa. When the oil heats up add the mushrooms. 3. Fry the mushrooms for 2 minutes. Add all the other ingredients and fry for 3 more minutes. Serve hot.

Chinese Bhel
Ingredients 100 gm. noodles Salt Oil for frying 1/2 cup chopped button mushrooms 1/2 cup sliced baby corn 1 capsicum 2-3 tbsp. finely chopped spring onions 1 tsp. Soya sauce 1 tbsp. Szechwan sauce 1 tbsp. Chinese chilli sauce 2-3 tbsp. Tomato ketchup 3 tbsp. chopped coriander leaves Preparation Method 1. Boil noodles in plenty of salted water till tender. Drain well. 2. Heat oil for deep frying and deep fry noodles in batches till golden. Drain well. 3. In very little oil, saute the mushrooms and baby corn till tender-crisp. Add capsicum 4. In a large bowl, mix together the noodles, mushroom, corn, capsicum, onions. 5. Add soya sauce, szechwan sauce, chilli sauce, tomato ketchup and coriander leaves and mix well together. 6. Add a tsp. of vinegar to make it more sour.

Malai Mushroom Curry


Ingredients Button Mushrooms 1/2 lb

Onion 1 large Tomatoes or tomato paste 1 large and 1/2 a tin if paste Ginger 1/2 inch (grated) Garlic 2 pods (cut finely) Turmeric powder 1/2 tsp Red chilli powder 1/2 tsp Dhaniya powder 1 tsp Jeera powder 1/2 tsp Amchur powder 1/2 tsp Whole Milk 1 cup or Heavy cream 3 tbsp Fresh coriander to garnish Preparation Method 1. Chop the onions and tomatoes, cut the button mushrooms in halves. 2. Take 2 tbsp of oil in a pan and heat. Add garlic to the oil, next add onions and ginger to it. Fry till onions turn a light brown, next add tomatoes. 3. Fry for a while till tomatoes are slightly cooked. Add the powders to it. Fry again till they all get mixed well. Add the mushrooms to it. 4. Cover and cook a while till mushrooms are half done. Add milk or cream to the mushrooms and cook for a little while longer till the mushrooms absorb the milk. Take the pan off the fire. Garnish with chopped coriander. Serve with hot phulas or rotis.

Mushroom Biriyani
Ingredients Basmati Rice-4 cups Mushroom- 1 to 2 lbs Oil & ghee -3/4 cup Lemon-1 Chopped Ginger -3 tsp Garlic - 7 cloves Green chillies -4 Onion -2 ,Tomatoes -3 Soya sauce -2 tsp Chilly powder- 1 &1/2 tsp Coriander powder-3 tsp Cinnamon-3 ,Cardamom-3 Cloves-3 Salt to taste Cilantro Mint leaves Preparation Method 1. Soak rice for 1 hour. 2. Wash and cut Mushrooms into big pieces. Cut onions, chillies, tomatoes. 3. Grind cinnamon, cardamom, cloves, ginger, garlic into a paste. 4. In a pressure Cooker, heat the oil and ghee, fry ground masala and the onion till golden brown. To this add all other ingredients, mushrooms and stir for 10 minutes.

5. Add 7 cups water and allow it to boil, add the soaked rice and stir when rice level and water level are the same, pressure cook in low flame for 15 minutes.

Mushroom Gravy
Ingredients Mushroom-4 (medium size) Onion-1 (small cut into thin strips) 1 tsp each of mustard seeds & urad dal Oil to fry Salt to taste Fresh coriander & curry leaves-1/2 tsp each For grinding Coconut grated -1/2 cup Jerra (cumin seeds) - 2 tsp fried Coriander seeds-2 tsp fried Cashew nuts-4 (whole) Preparation Method 1. Blend the ingredients for grinding to a fine paste with enough amount of water. Keep aside. 2. Heat oil in a pan, add urad dal & mustard seeds. When they splutter, add the onions fry for 1 min. 3. Then add the mushrooms which is being cleaned & cut into thin strips it would be easy to cook. Let it stand for few min stir in between. Once when the mushroom is half cooked now add the grinded paste. Add salt to taste. 4. Simmer the flame let it stand till well done or when it leaves the oil & the smell of the masala is gone. Garnish with coriander leaves. Serve with steam rice.

Mushroom Starter
Ingredients Button mushrooms 1 packet Butter250 gms. Parsley 1 bunch chopped finely Bread pieces. 1 tbps of garlic paste. Preparation Method 1. Mix butter with finely chopped parsley and garlic paste, remove stem from the mushrooms. 2. Fill the mushroom caps with the herbed butter, in a oven proof dish and grill for 15 min or till the mushrooms are nicely coated with the butter. Serve with small bread pieces.

Pepper Mushroom

Ingredients 1 Whole packet Mushroom 1 full size green pepper Pepper powder Soya Sauce 2 Finely chopped medium onions Salt Preparation Method 1. Take 1Tbsp oil in a frying pan and add the finely chopped onions and saute till brown colour appears. 2. Then add pepper powder,salt and fry for 2-4 Seconds and add the washed Mushroom (cut in small pieces). 3. Stir all the above for 1 minute and then add Soya sauce 1Tsp and stir well for a few seconds. 4. Last of all add the chopped pieces of Green peppers and stir well and close the lid for 3 minutes. Serve with Chappatis or Rice.
