Is white wine with fish, red wine with meat still the rule when pairing food with wine?
For some people, the task of pairing wine with food becomes a study in the seemingly unlimited complexities of wine and food anatomy. However, the simple rule of pairing white wines with fish and red wines with meat serves as a good starting point for anyone who enjoys wine with their meals. Of course, you can feel free to break this golden rule and still create a great food-and-wine experience. Two of my favorite exceptions to this rule are salmon with Pinot Noir and pork with lightly-oaked or unoaked Chardonnay. When choosing a wine that matches well with food, rule number one is that your own personal wine preference overrides all other rules. So, if you absolutely love Merlot, and only Merlot, even with the most delicate fish dish, then go ahead and drink it regardless of what you are eating. If, however, you want to experience a marriage between food and wine that in some cases can be described as heavenly, it may be worthwhile to precede your decision on wine with some consideration for this golden rule of wine and food pairing and a couple of subsequent steps that can bring you closer to wine-pairing nirvana. After deciding on whether to have a red or white wine, you get to the next decision point: matching a full bodied wine with a robust dish or a light wine with a delicate dish. Finally, if you really want to get into the nitty-gritty of wine and food pairing, you can then match the flavors in a wine with the dominant flavors in the dish (or sauce) either because there is a shared component between them or because there is a complementary contrast between them. In some cases, the structure of a wine its crisp acidity, for example, or its dry, tannic backbone are features to also consider in the decision. There are some food and wine pairings that are considered as classic marriages. These include steak with Cabernet Sauvignon, lamb with Merlot, scallops with Chardonnay, caviar with sparkling wine or sweet Port-style dessert wine with Stilton cheese. Except for the last example, these pairings follow the rule of red wine with meat, white wine with fish. But they all match the robustness of the wine with the food. They also are built upon the marriage of either similar or contrasting flavors that complement each other on the palate and make for a rich wine and culinary experience.

The winery sources wines of exceptional quality from the staggering slopes of Diamond Mountain Ranch, the flat valley floor of Three Palms Vineyard, and many other diverse terroirs throughout Napa Valley and other select California regions. floor at the mouth of Dutch Henry Canyon. Both produce single-vineyard wines of great distinction. Your visit begins with a unique aerial tram ride that carries visitors up the hill to the winery, whose architecture was modeled after that of the Greek island of Mykonos, where Sterling Vineyards founder Peter Newton once lived. The brilliant white stucco stands out dramatically against the rugged Mayacamas and Vaca mountain ranges that flank each side of Napa Valley. Once off the tram, you are greeted with a glass of wine to sip while you stroll through art galleries, overlooks, and elevated walkways that allow guests to follow the winemaking process from grape to glass. As you tour the property, motion-activated flatscreen televisions provide detailed explanations. This arrangement lets guests tour the
winery at their own pace, while tasting rich, opulent wines along the way. As you stroll along the walkways, balconies and outdoor terraces, you will notice the winerys towers housing eight bells from Londons Church of St. Dunstans-inthe-East, originally founded in the 10th century. The church was destroyed by fire in 1666, rebuilt, and destroyed again during the bombing of World War II. Each time, new bells were recast from the old metal to give them superior tonal quality. The rich tolling of these ancient bells sounds down through the valley on the quarter hour. After your tour of the winemaking facilities you arrive at the elegant tasting rooms high atop this enchanted hill. You are welcomed to yet another perfect environment to enjoy exceptional wines while taking in forest, vineyard and mountain views. Stuffed Portobello Mushrooms Perfectly Paired with 2007 Freestone Pinot Noir
Once autumn begins, Im always searching for a good reason to turn on the oven and make a hearty meal. This stuffed mushroom recipe is from Stephen H. Pavy, Freestone Vineyards Director of Hospitality and Wine Education. One of the things I enjoy most about Pinot Noir is the way it is so food-friendly. The beautiful red fruit and light black fruit, softness, spiciness and earthiness goes with so many things. As a Pinot ages, wine experts will talk about forest floor and mushroom compost as some of the secondary and tertiary flavors and aromas that develop. So, my mind goes to mushrooms which I love anyway. Our 2007 Freestone Pinot Noir has begun to develop more depth of flavor that includes these earth tones. The Portobello mushrooms in this recipe are both sauted and baked, so their flavors are really enhanced by the cooking method. Add to that the herbs used, plus tomato paste and two cheeses and you have pulled together the perfect umami combination that makes this wine sing! This is one wine and food combination that is perfect from the first sip and first bite, says Stephen. The Freestone Vineyards Guest Center is open for tasting daily from 11 a.m. to 5 p.m. Reservations are not required. They do not offer food and wine pairings on a regular basis. However, their Second Sunday events each second Sunday of the month from noon to 4 p.m. they offer wine and food pairings, wine and art pairings or wine and music pairings.

Pavy, Freestone Vineyards Director of Hospitality & Wine Education 8 large Portobello mushrooms 6 tablespoons extra virgin olive oil plus more for brushing mushrooms and adding to stuffing 2 leeks, white and green parts only, thinly sliced (may also use equivalent amount of green garlic, sweet onion, or shallots) 2 tablespoons Italian double strength tomato paste 1 cups plain bread crumbs 8 ounces best quality assertive semi-soft cheese, coarsely grated (we like Taleggio and Val dOsta Fontina) 4 tablespoons chopped fresh herbs (a mixture of thyme leaves, oregano, marjoram, basil and/or parsley) 1 cup freshly grated Parmesan cheese 2 eggs, beaten Aleppo pepper (Spanish or Hungarian paprika may be substituted) Salt & pepper Preheat oven to 400F. Remove stems from mushrooms. Trim stems and finely chop. Heat 6 tablespoons olive oil over medium heat, and then add sliced leeks and chopped mushrooms along with salt and pepper to taste, saut until tender. Add tomato paste and cook briefly. Transfer sauted leeks and mushroom stems to bowl and combine with bread crumbs, grated cheeses, herbs and beaten egg. Add additional salt and pepper to taste. Add sufficient olive oil for stuffing to stick together. Brush top side of mushroom caps with olive oil and place top side down on foil lined baking sheet. Divide stuffing between mushroom caps, being sure to cover bottom of cap. Optional: drizzle more olive oil over top of stuffing mixture. Bake 12-15 minutes until mushrooms are tender and stuffing is browned . Sprinkle Aleppo pepper to taste over mushrooms before serving.

Artisano Benefit Weekend Features Winemaker Dinner, Grand Tasting & Harvest Dinner
Third Annual Event Moves From Geyserville to Larger Venue at Santa Rosas Vintners Inn and John Ash & Co.
Tickets are on sale for Artisano, a celebration of local, handcrafted, small production wine, food and art, on November 18-19. This years Artisano event features a full weekend of activities, including a Winemaker Dinner on Friday evening at John Ash & Co. Restaurant, Grand Tasting on Saturday afternoon at Vintners Inn and a Harvest Dinner on Saturday evening at John Ash & Co. John Ash & Co. Executive Chef Tom Schmidt is creating a delicious, seasonal, five-course menu for Artisanos Winemaker Dinner on Friday, November 18, at 6:30 p.m. Each course will be expertly paired with exquisite wines from participating Artisano wineries. Winemakers will join guests for dinner. Here they will pour and answer any questions about their wines. Artisanos Grand Tasting on Saturday, November 19, from 11 a.m. to 4 p.m., will feature local artisan wineries; restaurants that feature seasonal, regional ingredients; and, local specialty gourmet food purveyors and artists. The event includes wine and food tastings; chef demonstrations by John Toulze of The Girl & the Fig, Brian Anderson from Bistro 29 and Shelly Kaldunski, author of Cupcakes, The Art of the Cookie; as well as a silent auction, raffle and live music courtesy of The Susan Comstock Swingtet. The culmination of the weekend is the Harvest Dinner on Saturday, November 19, 5 p.m., at John Ash & Co., where guests will enjoy a casual harvest, family-style meal prepared by Chef Tom Schmidt paired with wines from the days Grand Tasting. A portion of the proceeds from the event benefit Slow Food Sonoma County, North, a chapter of Slow Food International. Artisano Grand Tasting ticket price is $65 per person in advance or $75 day of, including a souvenir wine glass. The Winemaker Dinner is $150 per person and the Harvest Dinner is $75 per person. particular property is a testament to both their vision as well as their commitment. This area once had a town named Soda Rock, with a hotel, general store, post office and school it suffered through expansion, financial strain and, as devastating as anything else, the dark veil of that failed social engineering experiment: Prohibition. The area later became Jimtown in 1893. But Soda Rock it still is, at least at this winery. So, by the time Ken and Diane bought the property in 2000, it already had a long history, but a whole new era was about to begin. We want Soda Rock to regain its place in the community, Ken said recently. We want to provide spectacular venues for social gatherings and to promote local agricultural products, cuisine and the artisanal specialties the area is known for. And, of course, fine wine in a special setting one both steeped in history but with an eye on the future. The structure had to undergo a lengthy seismic retrofitting, but that was just the beginning. Luckily the property had patient and resourceful new owners, and they knew that this was no quick fix. It was a long-term project and they understood that and went about the process accordingly.

The result of all this is a one-of-a-kind tasting room with areas both indoors and out for special events of every kind, from dinners and receptions to weddings. The grounds show an equal attention to detail; the vineyards that surround it are mature and include a three-story tower that is in its final stages. The wines Soda Rock is rapidly becoming known for are heavy on the reds, where the varietals include Zinfandel, Merlot, Malbec, four Cabernet Sauvignons and Cabernet Franc, including a small 96 case-
production Reserve Cab Franc. There is also a Sonoma County Merlot Ros which is a perfect holiday and cool-weather wine, though it is a delight to drink any time of the year. As Ken has said, My heart is in Zinfandel, but Im getting into Cabernet and Pinot Noir. In fact, one of the reasons we have Malbec is so we can make a classic Bordeaux-style wine. If your tasting day is not complete without a splash or two of white, they also make two Sauvignon Blancs (one from here in Alexander Valley, the other using fruit sourced from Mendocino County) and a Chardonnay, also using grapes from Alexander Valley. These wines can be sampled in the beautiful, spacious tasting room where the staff is knowledgeable, great fun and well briefed on the history of the winery and of the area. They can also give out recommendations on area restaurants (Healdsburg has become quite a culinary destination in the last decade), directions and more. It is the sort of place where within minutes you feel at home and in a few more almost like part of an extended family. As is usually the case in the Alexander Valley, the pace is unhurried but the quality ah, the quality is unmistakable. Artist Jim Stallings Paints the Russian National Orchestra Fundraiser
Have youve ever been lost in the trance of a live performance, transported to a spiritual place youve never been before? This is precisely the state of metaphysics that happens to Jim Stallings as he translates his personal experience into brilliant color, energy and symbolism on canvas. He is the only artist in this country to paint to a live symphonic orchestra. Recently, during rehearsals of The Russian National Orchestra, Yountville Arts arranged to allow Stallings to, as he states, Live his dream of painting with the most talented orchestra in the world. As a thank you to Yountville for the privilege, he gifted an original 40" x 40" painting created during the rehearsals that will be available for purchase, rotating between five different locations in Yountville during the month of October. Stallings has explored the relationship of music and pure color for his entire artistic career. Deciding early in his life to pursue canvases of whimsy and purity, questions about the relationship of music to fine art led Stallings to paint live on stage with major symphony orchestras, including Long Beach, San Diego, Honolulu and Maui. Painting the sound of music was a defining moment in Stallings career. He has continued to explore the vibration harmony of music, color and the human spirit with world-renowned orchestras and physicists, which have led to several experiences aboard the spaceship Columbus. The painting, Russian National Orchestra IV, began its public tour on October 3 when visitors of the Jessup Cellars tasting room had an opportunity to see the original art and bid on the painting. The painting will be at Somerston October 15-21, at Hill Family Estates October 22-28 and at Cornerstone October 29 through November 4. Enjoy Tasting Along the Wine Road at the 13th Annual A Wine & Food Affair in Sonoma County
Join northern Sonoma County in a weekend of the most fantastic wine and food pairings the region has to offer from over 100 wineries
The 13th annual A Wine & Food Affair in Sonoma County calls for a weekend of Tasting Along the Wine Road. Throughout the weekend of November 5 and 6, guests will have the opportunity to visit some of the 110 wineries stretching across Sonoma Countys Dry Creek, Russian River and Alexander valleys, sampling wine and food pairings along the way. Attendees have the option to choose a course covering one or both days of the event, enjoying Sonomas finest at their own pace. Participating wineries will each prepare their favorite recipe from the Tasting Along the Wine Road cookbook for guests to sample throughout the event. Each guest will receive a commemorating tasting glass and copy of the cookbook, containing all of the recipes served by the wineries during the event, allowing them to recreate their favorite dishes and wine pairings from the weekend at home. More than 100 winery members will be participating from the Wine Road Northern Sonoma County in Dry Creek, Russian River, and Alexander valleys from 11 a.m. to 4 p.m. both days. Cost for the event is $70 for November 5 and 6 (both days), $50 for Sunday, November 6 only and $30 for designated drivers for November 5 and 6 (both days).

De Loach Vineyards is a very special place that you dont want to miss! Heres why: The grounds are beautiful, the wines are delicious, the staff is friendly and knowledgeable and the chickens and sheep are really cute. Got your attention there, huh? No, they havent added a petting zoo at De Loach Vineyards, but the winery was recently licensed as Biodynamic, hence the chickens and sheep (and also a big vegetable and flower garden). Biodynamic farming is a method of organic farming that looks upon the soil and farm as living organisms, so all things on the farm are inter-connected. For example, the sheep are used for weed control in the vineyards, the chickens provide fertilizer for the vineyards and eggs for the kitchen and the vegetable and flower garden provides produce and flowers for the events at the winery. There are several tours available: The Winery Tour is available every day at 11 a.m. and includes wine tasting; The Garden Tour & Tasting is available Saturdays and Sundays by appointment at 11 a.m. It includes an in-depth look at DeLoach wines and history and food and wine pairing in their Biodynamic garden; The Taste of Terroir at DeLoach includes a guided flight of French and American wines in their beautiful guest house and picnics and cheese pairings are available every day by appointment. For those who wish to forgo the tours, a regular wine tasting is $10 to sample a selection of five wines. The tasting room is spacious and comfortable. My first impression was of bottles, bottles everywhere! The whole wall behind the tasting bar and one other wall are covered with horizontally stacked bottles. There is a tasteful selection of wine-related merchandise artfully displayed around the room. I was very impressed by the wines I tasted. Id like to write about all of them, but only have room for a couple. Here we go 2009 Chardonnay, Durrell Vineyard, $50: One sniff and theres no doubt this is one classic Chardonnay! Aromas and flavors of baked apple, tropical fruit, buttered toast and mineral notes abound, all wrapped up in lush, balanced mouth. 2006 Pinot Noir, Le Roi, $45: This Pinot made me a little weak in the knees it is fantastic! Alluring aromas of black cherry, spice box, pipe tobacco and vanilla continue as flavors in the silky, sexy mouthfeel. Long, delicious finish. Heres something really innovative the folks at DeLoach have created a new program that they call Barrel to Barrel. Basically, its a selection of their fabulous premium wines offered in a 3L bag, which fits inside a miniature French oak barrel. Its kind of like boxed wine, but much, much better. Mendocino County Readies for Fall Festival Celebrating Fabulous Funghi and Local Wines
At the peak of mushroom harvest season, food and wine lovers, residents and visitors alike come out to celebrate the fungi fruit of the local land. Parallel to the countys innovative and unique wineries and winemakers, Mendocino County is home to some of the most coveted and delectable species of mushrooms 300 types of which are edible and will make for savory local ingredients this festival season. The 2011 Wine and Mushroom Festival takes place from Friday, November 4th, to Sunday, November 13th, and celebrates the bounty of this Northern California region while hosting world-class chefs, cooking classes, seasonal dinners, wild mushroom foraging excursions, educational beer and wine-pairing demonstrations, art exhibitions and more! The premier event of the festival is the Frank R. Howard Hospital Foundations Wine & Mushroom Train on the historic Skunk Train, Saturday, November 5th. Trains will be leaving from both the Fort Bragg (coastal) and Willits (inland) depots and will take passengers on a glorious train ride through ancient redwoods to scenic Camp Mendocino, nestled against the Noyo River. Guests then enjoy tastings from various award-winning wineries, culinary treats from local Mendocino chefs and a mushroom cook-off, which will be judged by both attendees and a panel of expert judges. The event will also offer a dynamic mushroom presentation from world renowned expert Eric Schramm, a mushroom hike led by horticulturist Larry Desmond and botanist Marisela De Santa Anna and a presentation about Mendocino County wines. A silent auction featuring items and getaways from Mendocino Countys finest will be available for bid. Enjoy live music on the train and at Camp Mendocino. Dessert port and chocolate truffles will be offered on the train ride home. All in all, a day to remember 10 a.m. to 5 p.m. $125 per person. (Proceeds help fund The Frank R. Howard Foundation, a non-profit that helps fund highquality hospital services for Willits and Northern Mendocino County.) Dozens of events will take place during the Wine & Mushroom Festival.
