Cheesecake Squares
1 yellow cake mix 1 stick margarine
1 egg
Mix and crumb, press in ungreased 9x13 pan
Topping: 8 oz cream cheese 2 eggs
2 2/3 cups powdered sugar
Mix and pour over cake mixture
Bake 350 30 minutes
Peanut Fingers
½ c margarine ½ cup sugar
½ c brown sugar 1 egg
½ tsp soda ½ tsp salt
Mix well and add
1/3 c peanut butter 1 cup flour
1 cup oatmeal
Press in 9x13 pan-Bake 375 for 10 minutes. While hot, put 1 cup choc chips on top and
spread after they soften.
Mint Brownies
2 c sugar 1 c flour
1 tsp vanilla 2/3 cocoa
4 eggs ½ tsp bkg powder
1 c melted marg ½ tsp salt
Put in 9x13 pan Bake 350 25-30 min
Frosting:
6 T marg 4-6 T cocoa
3 c powd sugar ½ tsp vanilla
4 T milk mint flavoring
Spori Cookies
(A similar cookie was served at a Spori Scholarship Banquet that we attended with Kiersten at “Ricks
College”. We varied this recipe a little and think it’s a close match-thus the name)
1 cup butter 1 tsp vanilla
½ cup sugar 1 tsp almond flavoring
1 cup almonds, 2 cups flour
(chop fine, with skins)
Cream butter, sugar, stir in almonds, flavoring, then flour. Form in small balls and place
on ungreased baking sheet. Flatten with bottom of glass. Bake 8-10 minutes at 350.
Snickerdoodles
1 cup shortening (part butter) 2 tsp cream of tarter
1 ½ cup sugar 1 tsp soda
2 eggs ¼ tsp salt
2 ¾ cups flour
Mis shortening, sugar, eggs. Blend in dry ingredients. Shape in 1” balls, and roll in
cinnamon and sugar mixture (2 T sugar, 2 tsp cinnamon). Place on ungreased baking
sheet and bake 8-10 mnutes at 350 or 375.
Pinwheels
1 c. butter 3 c. flour
1 ½ c sugar 2 tsp. bkg powder
2 eggs ¼ tsp salt
1 tsp vanilla
Cream butter, sugar, add egg, vanilla, then dry ingredients. Divide dough in half,
add 2-3 T cocoa to one half. Shape in rolls, Cut lengthwise in quarters, and put together
opposite colors, forming a pinwheel. Refrigerate for a couple of hours. Slice and put on
sheets to bake at 375 for 7-10 minutes.
Alternate designs: cut the roll only in half/ Make the rolls half size for petite cookies/
Roll out the white dough into a rectangle, then the chocolate dough on top. Roll up, it
creates a swirl.
