Menu Boards

We serve all our meatballs– in 4 ways

1) Just balls – with your choice of sauce (low carb)

2) Over pasta- choices of pasta are Spaghetti, Fettuccini, Rigatoni, or


Whole Wheat Penne

We use only Vitelli Pasta 100% semolina imported to us by a family


friend.

3) As a “Panino” Meatballs as a sandwich with your choice of one of


our Artisan breads

Bread choices for the Panino’s are

Ciabatta, Whole Wheat Ciabatta, Baguette or Whole Wheat Baguette


All our breads are “Artisan” breads baked daily specifically for us.

4) Over Chips-
We have 6 Sauces

Rossa – our special house tomato sauce made from the finest VitelIi
Italian tomatoes we make our sauce in house every day. VitelIi
Tomatoes are the finest Italian tomatoes owned by a family friend.

Arrabiata – our house spicy tomato sauce made from the finest VitelIi
Italian tomatoes. We make our sauce in house every day.

Bianca – our family white sauce “the jewel” the ingredients are
unspoken even in our kitchen.

Verdissima –Our Version of chimichuri sauce made fresh daily with only
the freshest herbs and spices and the finest “Extra Virgin olive oil” a
recipe from our friends from South America.

Texas Rossa – Our house Rossa sauce, Texas style.

Pesto – we use the freshest Basil, the finest pine nuts with the best cold
pressed “Extra Virgin olive oil” to make this classic in house.

For extreme pleasure combine any of our sauces with the Bianca Sauce.

Jalapeño – our Italiano with fresh Jalapenos and fresh cilantro-


recommended sauce any of our Beers!
Please note – portion sizes

If you order just balls – you receive 5 balls with your choice of sauce,
just balls is “low carb”

If you order balls over any pasta- you receive 3 balls - with your choice
of sauce and a piece of Ciabatta.

If you order Balls as Panino - you receive 3 balls in whole Ciabatta

Definition of terms used in our menu and restaurant

Artisan Breads – made with no preservatives and additives, hand formed by


highly skilled bakers using high quality ingredients and baked in specialty ovens.
(Not factory made like Wonder Bread)

Ciabatta – is a shape of Italian style bread –made from wheat flour and yeast is
elongated, broad and flattish. Great for sandwiches or Panino

A toasted sandwich made from small loaves of Ciabatta is known as a Panino

Baguette - long thin bread that is baked in a steam brick oven – the stream allows
the crust to crisp before setting creating lighter more airy bread.

Black Angus – describes a breed (type) of cattle, considers the finest breed for top
quality meats

Ground chuck- ground from the shoulder or chuck of the Black Angus Cattle - it is
preferred for ground beef for its richness in flavor due to the marbling (balance of
meat and fat)

Pasta information

Semolina – is Italian for flour our pasta is 100% semolina, we use only the “Vitelli”
brand pasta because they make pasta without preservatives and additives using
the finest flour

Pastas are made in a large variety of shapes we use these four shapes of pasta:

Rigatoni - a tube formed pasta that has ridges and square cut ends. These
characteristics balance the sauce and pasta.

Penne – small diameter pasta tubes with diagonal cut ends. These characteristics
balance the sauce and pasta.

Fettuccini – refers to a shape of pasta “ribbons” flat ribbons, great for creamery
sauces
Spaghetti –the most common shape of pasta little rounds rods “means little
twines” Spaghetti the preferred for tomato based sauces

Pomodoro – means tomato (tomatoes are generally red)

Arrabiatta – a Roman sauce of tomatoes, garlic and red chili cooked in Olive Oil

Rosso (Rossa) - Is the Italian word for red - Italian’s commonly refer to their
tomato sauce as Sugo Rossa

Texas Rossa- Rossa infused with barbeque sauce

Chimichurri-our version is a sauce of chopped cilantro, minced garlic and other


spices cold pressed extra virgin Italian olive oil

Meatballs –is a foodstuff made from a small amount of ground beef rolled into a
small ball along with herbs, breadcrumbs, eggs and spices. Meatballs are made in
every country of the world. The Italians meatballs is simply the most widely
known, our restaurant offers versions of other countries along with our very own
creations. Our meatballs are the world’s greatest because we combine only the
finest ingredients with the best recipes and cooking methods.
