-Westrn Omelet-

Ingredients:
2 medium mushrooms, sliced ½ cup of old cheddar cheese
½ medium green pepper, chopped 1/3 cup of salsa
½ onion, sliced 3 eggs
1 tablespoon of oil 1 tablespoon of milk
salt and pepper, t tast 1 tablespoon of Parmesan cheese
Preparaton:
Heat a medium fying pan wit oil, saut te mushrooms, green pepper, and onion.
Remove fom pan and set aside. Beat eggs wit milk and Parmesan cheese untl smoot. Pour
int fying pan and str untl egg starts t set. Once te underside of te eggs has set, sprinkle
te salt, pepper, and ¼ cup of te cheese. Add sauted vegetables, spread on te salsa and
sprinkle wit te oter ¼ cup of te cheese. Shake te pan an use a spatula t loosen te omelet
fom te botom of pan. Tilt pan over a plat, folding te edge fartest fom te plat down.
Using te spatula, rol te omelet on t te plat and serve.Serves 2

-Shirred Eggs-
Ingredients:
2 eggs 1 taspoon of Parmesan cheese
1 tablespoon of cream diced ham (optonal)
salt and pepper, t tast
Preparaton:
Take a ramekin or a soufe dish (any smal, oven proof dish wil work), and grease it
wel. Break eggs int te ramekin and place in an oven heatd t 300° and cook untl
underside has just set, about 5 minuts. Remove fom oven and turn oven t 350°, sprinkle
wit salt and pepper. Add cream and sprinkle wit cheese and ham. Return t oven and cook
for anoter 5-10 minuts, untl eggs have set. Remove fom oven and serve.
Serves 1
Variatons:
1st: Replace ham wit eiter crumbled bacon or shredded chicken.
2nd: Use only one egg instad of two and adjust cooking tme accordingly.

-Potat Wedges-
Ingredients:
6 large potates 1 taspoon of dried basil
1 tablespoon of salt 1 taspoon of dried parsley
3 tablespoons of sugar 1 taspoon of cumin
3 tablespoons of olive oil 1 taspoon of paprika
1 tablespoons of balsamic vinegar 1 clove of garlic, minced
1/8 taspoon of dry mustard
Preparaton:
Slice potates int wedges and place in a large bowl. Sprinkle potates wit sugar and
salt; fl bowl untl potates are covered and let rest for at least 30 minuts. Drain potates
and rinse; shake potates untl al excess watr has been drained of. Meanwhile, whisk
tgeter oil, vinegar, and mustard. Add in te remaining ingredients and mix wit potates,
and spread in a cookie sheet. Bake at 400° for about 45 minuts, or untl potates are cooked
trough and crispy.
Serves 4-6

Ingredients:
6 large potates 1 tablespoon of balsamic vinegar
1 tablespoon of salt 1/8 taspoon of dry mustard
3 tablespoons of sugar 1 taspoon of paprika
3 tablespoons of olive oil 1 clove of garlic, minced
Preparaton:
Slice potates int te size of normal fench fies, place in a large bowl, and sprinkle
wit sugar and salt. Fil bowl wit watr untl it covers te potates and alow t rest for at
least 30 minuts. Drain potates and rinse; shale potates untl tere is no excess watr
remaining. Meanwhile, whisk tgeter vinegar, oil, and mustard. Add in paprika and garlic,
mix wit potates, and spread on a cookie sheet. Bake at 400° for about 30 minuts, or untl
fench fies are cooked trough and crispy.

-Barbequed Potates-
Ingredients:
6 potates 2 taspoons of dried basil
¼ cup of margarine 2 taspoons of dried parsley
½ of an onion, sliced 2 taspoons of dried oregano
3 mushrooms, sliced
Preparatons:
Take four large pieces of aluminum foil and layer tem int two separat double
layered pieces ; grease te tp piece of each piece of foil. Slice potates, and layer tem evenly
on te two pieces of foil. Slice te margarine and evenly divide te pats of margarine between
te two piles of potates, placing te pats on tp of te piles. Sprinkle te potates wit te
remaining ingredients, fold te foil int a compact packet, and place on a heatd barbeque.
Bake untl potates are cooke trough. Serves 4-6
-Chicken Potat Bake-
Ingredients:
Potat Wedges 4-6 chicken tighs
1 tablespoon of olive oil
Preparaton:
Prepare potates as detailed in te Potat Wedges recipe, wit te additon of 1 tablespoon of
oi; reserve a tablespoon of te oil mixture. Place chicken on potates and spread wit te
reserved oil mixture. Bake at 400° untl potates and chicken are cooked trough and potates
are crispy.
-Orange Cumin Chicken-
(Taken fom Company's Coming Chicken Breast Finesse, page 24)
Ingredients:
¼ cup of Frozen concentatd orange juice, 1 tablespoon of brown sugar
tawed
1 taspoon of ground cumin ½ taspoon of olive oil
2 cloves of garlic, minced ½ taspoon of salt
½ taspoon of cinnamon ½ taspoon of pepper
½ taspoon of ginger 2 large chicken breasts, halved
Preparaton:
Mix frst 9 ingredients. Set aside.
Double layer foil int 4 sheets. Place a piece of chicken ont each sheet and spread
orange juice mixture over tps of chicken. Fold te edges of te foil up forming a package
around chicken. Place packets of chicken on a baking sheet, seam up, and bake at 450° for 18
t 20 minuts, untl te chicken is no longer pink inside. Serve on a bed of rice. Serves 4

Ingredients:
1 package of fesh basil crushed
3 tablespoons of dried basil ½ cup of Parmesan cheese
1 tablespoon of olive oil ¼ cup of watr
3 cloves of garlic, minced
3 tablespoons of almonds or pine nuts,
Preparaton:
Rinse fesh basil and dry wit paper twel. Cut stalks of and put trough food
processor. Add watr, dried basil, olive oil, garlic, and nuts. Mix in cheese by hand. You may
need t add in exta cheese, watr, or dried basil, depending on te desired consistncy. For
best tast, alow tme t rest and refigerat before serving.

-Pest Pizza-
Mom's Pizza Dough
Ingredients:
1 cup of warm watr 3 cups of four
2 taspoons of oil 1 tablespoon of yeast
2 taspoons of sugar 1 taspoon of salt
Pest Sauce (see Pest recipe) 3 medium mushrooms, sliced
2 cooked chicken breasts, sliced ¼ cup of red onion, sliced
½ of a medium green pepper, chopped (for ¼ cup of shredded baby spinach
variet, use ½ red and ½ green) feta cheese, as desired
Preparaton:
In a large bowl, mix watr, oil, salt, and sugar. In a separat bowl, mix four and
yeast. Gradualy add four mixture t te liquid, mixing untl dough is no longer gooey. Place
dough on foured surface, knead untl not longer stcky but not to stf. Let dough rise untl
doubled, about an hour. Punch down and spread on wel greased pizza pan. Set aside.
Spread Pest sauce on pizza dough, place chicken evenly over surface. Sprinkle wit
peppers, mushrooms, onion, and spinach. Crumble feta over pizza, using as much as is
desired. Bake at 425°, for about 20 minuts or untl crust is golden and botom is cooked.
Serves 4

-Chicken Teriyaki-
Ingredients:
1 cup of watr 1 large green pepper, tinly sliced
¼ cup of soy sauce 1 onion, sliced
3 tablespoons of brown sugar 3 mushrooms, sliced
2 cloves of garlic, minced 1 cup of shredded cabbage
1 taspoon of ginger 1 large carrot, sliced int stcks
¼ cup of cold watr 1 tablespoon of olive oil
2 tablespoons of cornstarch 6 cups of cooked wild or whit rice
Preparaton:
In a saucepan, mix 1 cup of watr, soy sauce, brown sugar, garlic, and ginger. Bring t
a boil.
Whisk te ¼ cup of cold watr wit te cornstarch untl te cornstarch is completly
dissolved and gradualy add t te sauce. Str fequently untl sauce is tickened. If te
favour is not stong enough, add additonal soy sauce or ginger. Set aside.
Meanwhile, heat te oil in a wok or a large fying pan and add te vegetables. Pour
triyaki sauce over te vegetables and mix, cook untl vegetables are no longer crispy and are
very favorfl. More watr may be needed if sauce is t tick. Serve on a bed of rice.
Serves 4-6, for a more substantal meal, add in cooked chicken or pork wit te sauce.
-Sweet and Salt Chicken-
Ingredients:
1 large green pepper, tinly sliced 1 cup of warm watr
1 onion, sliced 2 tablespoons of peanut buter
3 mushrooms, sliced 1 tablespoon of honey
1 large carrot, sliced int stcks 1 tablespoon of brown sugar
2 cups of broccoli forets 1 taspoon of dried chilies
2 chicken breasts, cubed 2 cloves of garlic, minced
1 tablespoon of olive oil 6 cups of cooked wild or whit rice
Preparaton:
In a bowl, mix tgeter watr, peanut buter, honey, sugar, chilies, and garlic. Set
aside. Meanwhile, heat oil in a wok or large fying pan. Add chicken and cook untl no longer
pink on te inside. Add vegetables. Mix te sauce int te vegetables and cook untl vegetables
are no longer crispy. Serve on a bed of rice.
Serves 4-6

-Curried Str Fry-
Ingredients:
1 large green pepper, tinly sliced 1 cup of warm watr
1 onion, sliced 2 tablespoons of peanut buter
3 mushrooms, sliced 1 tablespoon of curry
1 large carrot, sliced int stcks 2 cloves of garlic, minced
2 cups of broccoli forets 3 tablespoons of coconut
2 chicken breasts, cubed 6 cups of cooked wild or whit rice
1 tablespoon of olive oil
Preparaton:
Mix watr, peanut buter, curry, garlic, and coconut tgeter in a bowl, set aside.
Meanwhile, heat oil in a wok or large fying pan. Add chicken and cook untl no longer pink
on te inside. Add vegetables. Mix te sauce int te vegetables and cook untl vegetables are
no longer crispy. Serve on a bed of rice.
Serves 4-6

-Spicy Stak Str Fry-
Ingredients:
1 large green pepper, tinly sliced 3 tablespoons of olive oil
1 onion, sliced 1 tablespoon of balsamic vinegar
3 mushrooms, sliced 1 tablespoon of stak spice
1 large carrot, sliced int stcks 1 taspoon of cumin
2 cups of broccoli forets 1 taspoon of marjoram
2 cooked beef staks, cut int stips 2 cloves of garlic, minced
1 tablespoon of olive oil 6 cups of cooked wild or whit rice
¾ cup of warm watr
Preparaton:
Mix watr, oil, vinegar, stak spice, cumin, marjoram, and garlic tgeter in a bowl, set
aside. Meanwhile, heat oil in a wok or large fying pan. Add vegetables. Mix te sauce and
stak int te vegetables and cook untl vegetables are no longer crispy. Serve on a bed of rice.
Serves 4-6

-Bacon Mushroom Carbonara-
Ingredients:
4 slices of bacon 2 cloves of garlic, minced.
3 medium mushrooms, sliced ¼ cup of four
6 sun dried tmates halves salt and pepper, t tast.
½ cup of boiling watr 1½ cups of milk
¼ cup of margarine Penne or rigatni
Preparaton:
Cut te tmates int slivers and ten place in a bowl and pour te boiling watr over
tem. Alow fve minuts for te tmates t softn; once softned drain, keeping te watr, and
gently press te tmates untl only damp. Meanwhile, fy te bacon slices and ten set aside
t cool, once cooled crumble. Using te bacon fat, saut mushrooms and tmates. Set aside.
Next, melt margarine in a heavy botomed sauce pan and add te garlic. Once margarine is
meltd and garlic is aromatc, whisk in four, salt, and pepper. Ten gradualy whisk in te
milk and tmat watr, being carefl t whisk quickly so lumps do not form. Once milk and
watr is added set te stve t low/medium and heat, strring occasionaly, untl sauce starts
t ticken. Once tickened, add in crumbled bacon, mushrooms, and tmates.
Meanwhile, fl a pot wit wel saltd watr and set t boil. When watr is boiling rapidly, add
pasta and cook tl al dent. Drain and mix wit sauce. Serve.
Serve 4-6 (depending on te amount of pasta cooked)

Ingredients:
¼ cup of margarine 2 cups of milk
2 cloves of garlic, minced ¼ cup of cream cheese
¼ cup of four Penne or rigatni
salt and pepper, t tast
Preparaton:
Melt margarine in a heavy botomed sauce pan and add te garlic. Once margarine is
meltd and garlic is aromatc, whisk in four, salt, and pepper. Ten gradualy whisk in te
milk, being carefl t whisk quickly so lumps do not form. Once milk is added set te stve t
low/medium and add softned cream cheese, strring untl completly meltd int sauce.
Heat,strring occasionaly, untl sauce is tickened.
Meanwhile, fl a pot wit wel saltd watr and set t boil. When watr is boiling
rapidly, add pasta and cook tl al dent. Drain and mix wit sauce. Serve.
Serve 4-6 (depending on te amount of pasta cooked)

Creamy Chicken Alfedo: Add cooked chicken t te sauce aftr te sauce has ticken.

1 cup of broccoli forets, chopped Penne or rigatni
¼ cup of margarine
Preparaton:
Stam carrot, peppers, and celery. Melt margarine in a heavy botomed sauce pan and
add te garlic. Once margarine is meltd and garlic is aromatc, whisk in four, salt, and
pepper. Ten gradualy whisk in te milk, being carefl t whisk quickly so lumps do not
form. Once milk is added set te stve t low/medium and heat, strring occasionaly, untl
sauce is tickened.

-Herbed Chicken Penne -
Ingredients:
¼ cup of olive oil 1 taspoon of oregano
2 tablespoons of balsamic vinegar 1 taspoon of marjoram
1/8 taspoon of dry mustard 2 chicken breasts, cubed
3 cloves of garlic, minced Penne
1 taspoon of basil ¼ cup of Parmesan cheese (optonal)
1 taspoon of parsley
Preparaton:
Fry cubed chicken breast untl no longer pink inside. Whisk oil, vinegar, and dry
mustard tgeter in a smal sauce pan. Add garlic and heat untl aromatc. Add in basil,
parsley, oregano, and marjoram. Heat on low.
Meanwhile, fl a pot wit wel saltd watr and set t boil. When watr is boiling
rapidly, add pasta, cook tl al dent. Drain and mix wit sauce and add in Parmesan cheese.
Serve.
Serve 4-6 (depending on te amount of pasta cooked)

-Chicken-Mushroom Linguine -
Ingredients:
¼ cup of margarine 1 taspoon of parsley
2 cloves of garlic 2 chicken breasts, cubed
¼ cup of four 4 medium mushrooms, sliced
salt and pepper, t tast 2 cloves of garlic
2 cups of chicken brot Linguine
Preparaton:
Fry chicken wit garlic, when chicken is no longer pink inside, add mushrooms and
saut. Set aside. Melt margarine in a heavy botomed sauce pan and add te garlic. Once
margarine is meltd and garlic is aromatc, whisk in four, salt, and pepper. Ten gradualy
whisk in te chicken brot, being carefl t whisk quickly so lumps do not form. Once brot is
added, set te stve t low/medium. Str in parsley. Heat, strring occasionaly, untl sauce is
tickened. Add in mushrooms and chicken.
Meanwhile, fl a pot wit wel saltd watr and set t boil. When watr is boiling
rapidly, add linguine, cook tl al dent. Drain and eiter mix wit sauce or serve sauce
poured on tp of pasta. Serve.
Serves 4-6 (depending on te amount of pasta cooked)

-Meltng Meringues-
Ingredients:
3 eggs whits ¼ cup of sugar
¼ taspoon of salt ¼ cup of cocoa
Preparaton:
Whip egg whits, salt, and sugar untl stf peaks form. Fold in cocoa. Line a baking
pan wit eiter wax paper or parchment paper. Spoon mixture int a pasty bag and pipe,
using a rosete tp, ont pan. Bake at 250° for 40 minuts and ten let rest in te oven for at
least 2 hours and up t overnight.
Makes about 40 meringues.
-Trufes-
Ingredients:
20 oz. of bitersweet or semisweet chocolat Whit coatng chocolat
2½ cups of whipping cream Parafn wax
Preparaton:
Finely chop dark chocolat int a glass bowl. Heat cream untl it comes just t a boil,
being carefl not t scald it. Pour cream over chocolat and alow t rest for 2-3 minuts. Str
cream and dark chocolat tgeter untl completly smoot. Cool and chil for at least 8 hours
and up t overnight. Form spoonfls of ganache int round bals and place on parchment
paper lined pans.
Melt whit chocolat and wax tgeter in a bowl placed in hot watr in a electic fying
pan. Add enough wax so tat te meltd whit chocolat has te consistncy of meltd candle
wax. Rol ganache bals in meltd whit chocolat and alow te coatng t harden. Serve.
Makes between 3 and 5 dozen tufes, depending on te size.
-Elen's Chocolat Cake-
Ingredients:
2 cups of sugar 2 eggs
1¾ cups of four 1 cup of milk
¾ cup cocoa ½ cup of vegetable oil
1½ taspoons of baking powder 2 taspoons of vanila
1½ taspoons of baking soda 1 cup of boiling watr
1 taspoon of salt
Preparaton:
Mix dry ingredients tgeter. Add eggs, milk, oil, vanila, and watr. Bake at 350° for
30-35 minuts.
-MacDonald's Ice Cream Cake-
Ingredients:
2 lites of vanila ice cream 2 packages of Smartes (or use Oreos, Skor Bar,
½ of a 900 gram package of cream fled etc.)
chocolat cookies Chocolat sundae syrup
Preparaton:
Set te ice cream out t melt
Meanwhile, crush te cookies and press in te botom of a 9x13 in pan. Bake at 250°
for 10 minuts, alow t cool. Dump te ice cream int a bowl and mix in te Smartes.
Spread te ice cream on tp of te crushed cookies. Freeze and before serving tp wit te
chocolat syrup and sprinkle wit smartes.
