RESUMEN:
ABSTRACT:
An amino acid is an organic chemical substance that constitutes the basic component of
proteins and a protein is a chemical substance that is part of the structure of cell membranes
and is the essential constituent of living cells; its main biological functions are to act as a
biocatalyst of metabolism and to act as an antibody. The objective of this laboratory
practice is to determine the polarity of the R group of amino acids by chromatography, to
recognize proteins and amino acids by means of specific chemical reagents and to verify
the effect of some physical and chemical factors on the structure of proteins to do so in the
samples to work. The reactions of: Ninhydrin, Biuret, Sakaguchi, Hopkins-Cole, -SH,
Xanthoprotein were performed, from which the following results were obtained: for the
Ninhydrin reaction the following samples were positive: Glycine, Aspartic Acid, Proline,
Milk, Albumin, Urine, Saliva and Ammonium, for Biuret the following samples were
positive (r) Milk, albumin and saliva, for Sakaguch the samples of (arginine, milk, albumin
and saliva) were positive, for the Hopkins-Cole reaction it was positive the samples of
(Tryptophan, milk, albumin and saliva), for, -SH gave positive (systemine, milk, albumin
and saliva), for Xanthoprotein it gave positive (Tryptophan, Phenylalanine, Albumin
(diluted), Saliva (diluted) and phenol). As proteins are made up of amino acids, they are
positive for the ninhydrin reaction which is positive for a free amino group, they are
positive for the xanthoprotein reaction which identifies amino acids with the phenyl group,
they are positive for the Hopkins-Cole reaction as it identifies amino acids with tryptophan.
