Historia
La humanidad existe desde hace unos 2,5
millones de años, pero los cereales se
introdujeron en la dieta hace unos 10.000
años, durante la revolución neolítica y el
desarrollo de la agricultura. El ser humano
pasó de una alimentación basada en la
caza y la recolección a una dieta con un
alto contenido en cereales.[15] [16]

En la alimentación humana …
Los cereales más empleados en la
alimentación humana son el trigo, el arroz
y luego el maíz. La cebada se utiliza
fundalmentalmente en la fabricación de la
cerveza para hacer la malta.

provocan son ciertas bacterias intestinales y el
gluten,[13] tanto en celíacos como en no
celíacos.[97] [98] Esto permite el paso sin control de
sustancias al torrente sanguíneo, con el consiguiente
posible desarrollo de enfermedades autoinmunes,
inflamatorias, infecciones, alergias o cánceres, tanto
intestinales como en otros órganos.[13]

reactions to gluten, and the chemical
manipulation of this protein has been
suggested to result in a substance

failed to show symptoms of the
