A UFCD de Língua inglesa - serviço de mesa e bar na restauração e hotelaria tem como
objetivo orientar a aprendizagem de conhecimentos básicos, ao nível da conversação
em inglês, essenciais para o bom desempenho profissional.

Partindo do vocabulário mais corrente da língua inglesa, passando pela terminologia


específica do âmbito profissional da restauração e finalizando com exemplos de
conversação, este manual facilita um apoio indispensável para todos os formandos que
desejem iniciar uma carreira no setor de hotelaria e restauração ou simplesmente
adquirir conhecimentos para uma conversação elementar em inglês.

► Maitre

No que diz respeito ao restaurante, é como se fosse um anfitrião para os clientes. Deverá
distinguir-se pela sua educação, boas maneiras e cortesia. Ele supervisiona e controla
todo o trabalho executado no restaurante, garantindo a qualidade do serviço. Cabe-lhe
receber o cliente na entrada do restaurante, observar e indagar do cliente, durante a
refeição, se tudo corre a seu gosto, atender a uma reclamação. Despede-se do cliente à
saída deste, ao fim da refeição.

► Sommelier ● Wine steward

É o que apresenta a carta de vinhos e sugere ao cliente, na faixa de preços desejada,


qual poderá ser o melhor para acompanhar o prato que foi escolhido. Cabe-lhe
esclarecer dúvidas e atender as reclamações pertinentes à bebida. Assiste à degustação
do vinho pelo anfitrião e serve as taças depois daquele aprovar a qualidade do vinho
escolhido. Se o sommelier se apresentar com a tastevin o anfitrião pode pedir que ele
experimente e aprove o vinho, em seu lugar.

► Chefe de fila ● Chef of rang

Tem um papel de supervisão com atenção voltada mais para o desempenho da equipa,
enquanto o maitre tem a atenção mais voltada para o cliente. Está subordinado ao
maitre e pode substituí-lo, exercendo as duas funções simultaneamente.

► Empregado de mesa ● Waiter

Acomoda o cliente, inclusive juntando mesas ou providenciando cadeiras, ajudado pelo


commis. Anota os pedidos dos clientes e serve os pratos escolhidos; é quem apresenta
a conta quando solicitado, ao final da refeição. É parte do trabalho do empregado de
mesa esclarecer o cliente sobre os pratos constantes do menu. O cliente não deve recear
pedir informações sobre cada item que lhe interessar, seja um prato, ou um vinho.

► Commis ● Waiter Staff

É o auxiliar do empregado de mesa no serviço aos clientes, principalmente na sua


acomodação, na chegada. Limpa as mesas vazias, troca as toalhas, junta mesas para
grupos maiores de pessoas, transporta a comida da cozinha até o guéridon (mesinha ou
carrinho colocado junto ao cliente para facilitar o serviço).
