ENCERADO Y PARAFINADO EN FRUTAS Y HORTALIZAS

RESUMEN
En esta práctica se realizó el parafinado en yuca a 80, 110 y 130°C y se enceró manzana y mango, en
la actualidad son muchos los mercados que exigen frutas y hortalizas a las que se les ha aplicado
tratamientos donde mejoren la calidad del producto además alargar la vida útil del mismo, por eso este
informe tiene como objetivo observar el comportamiento de la yuca, la manzana y el mango
encerados comparándolos con un producto sin esta operación, obteniendo como resultado para la yuca
mayores pérdidas de peso para las parafinadas a 110 y 130°C debido a condiciones iniciales del
producto afectaron que se mantuviera la calidad, además para la manzana y el mango se presentó que
el encerado es efectivo pero cuando hay buen lavado y desinfección y que el producto no esté en la
fase de senescencia, finalmente como conclusión se evidenció que un mal procedimiento afecta la
calidad e inocuidad del producto, estas operaciones especiales para mayor conservación en los
productos son efectivos siempre y cuando se realicen de la mejor forma y que el producto
inicialmente esté en óptimas condiciones, la calidad se mantiene no se mejora.
ABSTRACT
In this practice the paraffin was made in cassava at 80, 110 and 130 ° C and apple and mango were
encycled, at present there are many markets that demand fruits and vegetables to which treatments
have been applied where they improve the quality of the product also to extend the useful life of the
same, so this report aims to observe the behavior of cassava, apple and mango waxed compared to a
product without this operation, obtaining as a result for cassava greater weight losses for paraffin 110
and 130 ° C due to initial conditions of the product affected that the quality was maintained, also for
the apple and the mango it was presented that the waxing is effective but when there is good washing
and disinfection and that the product is not in the senescence phase Finally, as a conclusion it was
evident that a bad procedure affects the quality and safety of the product, these special operations for
greater conservation in the products Effective as long as they are carried out in the best way and the
product is initially in optimal conditions, the quality is not improved.
