Acids Aacc Method 04-14 Page 1 of 1 Sulfuric Acid—Quantitative Method Final approval May 5, 1960; Reapproval November 3, 1999 Objective To determine the sulfate content, expressed as sulfuric acid, in baking powders and baking chemicals. Sulfate compounds, including sodium aluminum sulfate, calcium sulfate, and aluminum sulfate, may be used in baking powders and baking chemicals as leavening acids and diluents Apparatus 1 Hot plate, rapid-heating, 2 Filter paper 3 Dropper 4. Gooch crucible or ashless filter 5. Balance Reagent Barium chloride solution. Dissolve 100 g BaCl,2H3O and make to 1 liter Procedure 1. Boil 5 g of sample 15 hr with mixture of 300 ml water and 15 ml concen- trated HCl 2. Filter, wash filter thoroughly with hot water, cool combined filtrate and washings, and dilute to 500 ml. 3 Take aliquot of 100 ml, add water to make to about 200 ml, and add HCI to make about 0.5 ml of free acid present Heat to boiling and add 10 ml 10% barium chloride solution dropwise with constant stining, Continue boiling about 5 min and let stand 5 hr or Jonger in warm place 4, Decant liquid through ashless filter or ignited and weighed Gooch crucible. 5, Treat precipitate with 15-20 ml boiling water, transfer to filter, and wash with boiling water until filtrate is free from chlorine. 6 Dry precipitate and filter, ignite, and weigh as BaSO, Calculation ‘Multiply result by factor 0.4202 and report as percent H,SO, Reference AOAC International 1995 Official Methods of Analysis of AOAC Intemational, 16th ed Method 920 461 The Association Arlington, VA | i
