Olive Oil–Butter Spread

Use it as a spread instead of plain organic butter or in cooking in place of plain


organic olive oil.

1 pound organic butter, softened 1 cup extra-virgin olive oil

If necessary, heat the butter a little bit to facilitiate the blending of the ingredients.
Mix well.

Store in refrigerator, and use sparingly as a spread. Makes 48 servings of 1


tablespoon each.

Substitutions

Instead of olive oil you can use flaxseed oil or another high-omega-3 oil, but if you
do, avoid heating it to high heat, such as for stir-frying vegeta-bles. For stir-frying,
just use olive oil or coconut oil.
