Wineology

INTELLIGENCE FOR THE WINE CONSUMER

BY LEN NAPOLITANO

How do I start a wine collection?

You may have started to think about building a collection of wines
as you discover new favorites. Like every other hobby, you can go at it
with a budget that is tight or unlimited, or somewhere in the middle.
What matters more than the amount you spend on a wine collection
is the diversity of wines in the collection.
A wine cellarany space you devote to wine storagedoes not
have to include expensive, rare or even old vintage wines. It first has
to satisfy your own taste preferences and enable pairing with your
most frequent choices of dishes. Also, stock up on safe wines that
have wide appeal to many palates. This makes it easy to please guests
whose wine preferences are unknown.
Build your collection around popular wine styles. It doesnt matter
whether you spend an average of five dollars or fifty dollars a bottle to
start the collection; whats important is to have each of the categories
below represented so you have wines available to address any
situation. The number of bottles your cellar includes for each style
depends on your budget, how often you have wine and entertain, and
your available space.
Sparkling Wines: French Champagnes and California sparkling
wines complement some of the most difficult dishes for pairing, like
those high in salt, heavy cream and fried foods. Also, sparkling wines
are good to have at hand for an impromptu celebration.
Sauvignon Blanc or Riesling: For Riesling, look for appellations
in Washington and New York. These white wines contain bright fruit
and usually moderate alcohol, which together work well when paired
with salads and vegetarian dishes. A good, dry Riesling is always a
pleasant surprise for guests who have grown tired of Chardonnay.
Add Chardonnay to this category if you wishit works well as an
apritif. For Sauvignon Blanc, look for appellations in Sonoma as well
as New Zealand, Washington, and Oregon.
Pinot Noir, Sangiovese or Tempranillo: While Pinot Noir

is sometimes considered the red wine for white wine drinkers,

Sangiovese and Tempranillopopular Italian and Spanish grape
varieties, respectivelyare reds that all red wine lovers appreciate.
A kiss of acidity in all three of these winesalong with moderate
alcohol and minimal oak influencehelps any one of them pair with
a variety of foods. For Pinot Noir, focus on the California appellations
of Sonoma, Monterey, and Santa Barbara and Oregons Willamette
Valley. Sangiovese and Tempranillo do well in warmer climates,
including Paso Robles and Southern Californias Temecula Valley.
Cabernet, Merlot, Malbec or Meritage: If you enjoy beef or
lamb on a regular basis, any one of these wines is a must-have in a
wine collection. Malbec, a blending grape in classic red Bordeaux is
produced by fewer than 5% of American wineries. However, its a
major variety in Argentina, where an abundance of quality Malbecs
are made and sold here at affordable prices. Look for Cabernet,
Merlot and Meritage blends from Napa, Sonoma and Paso Robles in
California and from Washington. Merlot also does well on Eastern
Long Island and the Okanagan Valley in British Columbia.
Syrah, Zinfandel or Petite Sirah: These hearty, rich, dark-fruit
wines tend to have higher than average alcohol but, when balanced
with a bold fruit component, they create nice accompaniments to
grilled foods, stews, and strong firm cheeses. Look for California
appellations of Napa, Sonoma, Paso Robles, Lodi and Livermore, as
well as appellations in Australia, where Syrah is known as Shiraz.
Dessert Wines: A possible 5% of your collection to a variety of
sweet dessert wines. Dessert wines are consumed slowly, helping you
slow down and savor life after a fine meal. Include in your collection
Late Harvest Riesling or Moscato and Port-style wines.
One way to research and identify the most popular wine producers
in each of the above categories is with the help of cellartracker.com.

Winegrowing Decisions

BY JOSH STEIN

Is a barrel by another name as oaky?

Were Master Shakespeare to have included a winemaker
in one of his plays, the famous phrase might have become
To oak or not to oak? That is the question, and that would
have been a spot on assessment, for few things bring on more
questions, anxieties and myths than the discussion of oak
usage and winemaking. Were they able to offer comment
themselves, I imagine a towering oak offering something
along the lines of Chill out and just enjoy because, as with
many other aspects of winegrowing, the discussions tend
to complicate and obscure the reality from the winemakers
perspective.
For whites, the decisions come down to the degree, if any,
of oak influence. Many white varieties do not benefit from
oak exposure, and even neutral barrels (barrels used long
enough that oak tannin is no longer perceptible in wines
stored therein) can cause a stylistic miscue since barrels play
host to Oenococcus oeni, the bacteria responsible for malicto-lactic acid conversion. Unless extraordinary and expensive
precautions are taken, most winemakers would combine
separate lots of filtered oaked and unoaked whites to arrive
at a blend with the desired level of oak influence rather than
hoping to arrive at an ideal middle through chance in the
barrel.
Red wines, though, present a bit of a different set of options.
Oak is useful throughout the production process, so some
folks will be using toasted or untoasted oak shavings at the
crusher in cooler harvests to alleviate any underripe green
aromatics or flavor compounds from methoxypyrazines, which
contribute cigar or tobacco at low levels and green pepper or
grassy, herb-y notes at higher levels. Winemakers can ferment
in barrels either by removing the heads and punching down
into upright barrels or through reassembling the barrels and

using a rotation system to keep the cap wet by spinning. They can
use larger puncheons to give more subtle, rounder notes to the wine
without giving as oaky a presence liquid volume to surface area
matters a lot; the larger the vessel, the less the influence, everything else
being equal.
Post-pressing, most reds are aged either in barrel or in tanks
with some kind of oak adjunct inserted; as with barrel options so go
the adjuncts: winemakers have choices that range from oak source
(American, French, Hungarian, blends and beyond), to toast level, to
toasted or untoasted heads in barrels, and a slew of options for creating
oak effects sans barrels including beans, cubes, spirals, blocks, sticksin-chains to fit into barrel bungholes, and staves of various shapes and
sizes for tank inserts. Think back to your first visit to a big toystore as a
kid; now picture an adult kid and you know how winemakers feel about
their oak options. Its great to have choices, but there are lots of options,
and one is not necessarily better than another.
At the end of the day, oak is like every other part of the winemaking
process: a series of decisions through which the final wine is realized,
and the key thing winemakers must come to terms with in order to
do their best work is that making a particular decision, or refusing
to make it, will have an impact on that final bottling either way.
Winemakers grow and cook with grapes, and once the process starts,
the vessel in which the fermentation takes place absolutely has an
impact but you must start with the best ingredients possible. Just
like cooking. Enjoy!
Josh Stein has been in the Napa wine business for more than a dozen years,
and, in addition to being owner/winemaker of the Stein Family Wine Group,
which produces a nationally and internationally distributed portfolio of wine
brands and donates a percentage of its sales, he regularly consults for wineries
and organizations throughout the North Bay and Coast via their subsidiaries,
Discrete Wine Support Services and Napa Valley Writing Services.

San Simeon Wines Launches Super Premium Stormwatch

After years of focusing on quality, single-varietal wines, San Simeon
Wines will add its first Bordeaux-style blend to its
portfolio.
After more than 30 years of winemaking experience
in the Paso Robles region of California, the Riboli family
is proud to debut its first super premium red Bordeaux
blend, Stormwatch, under the San Simeon brand (www.
sansimeonwines.com).
The Riboli familys estate vineyards in the renowned
El Pomar District of Paso Robles showcase steep hillsides
and rocky soils, which produce wines with intense
aromas and flavors. The cooling afternoon breezes of the Templeton
Gap make the El Pomar District ideal for premium grape growing.
Stormwatch is a rich, complex wine that reveals ripe flavors of
blackberry, dark cherry and raspberry. Hand-selected French oak barrels
contribute spice and vanilla, and structured tannins provide texture
and depth with a lengthy finish. Grapes are hand-harvested to ensure
the highest quality. Stormwatch is a blend of 47% Cabernet Sauvignon,
21% Merlot, 16% Malbec, 11% Petit Verdot and 5% Cabernet Franc. It
is perfectly balanced between power and finesse.
The San Simeon brand was launched in the mid-1980s with the
vision of showcasing premium varietal wines from the two diverse
California wine regions of Paso Robles and Monterey. Our familys
mission is to produce artisan wines of the highest quality. The San
Simeon collection is selectively crafted in small lots to showcase the
terroir from which the grapes are sourced, says Anthony Riboli, fourth
generation winemaker. After years of focusing on high-quality, singlevarietal wines under the San Simeon brand, my family is excited to
release Stormwatch, the first Bordeaux blend of this award-winning
collection.
Riboli Family Wine Estates:
The Riboli family began its legacy of winemaking in 1917, when
San Antonio Winery was established in downtown Los Angeles. Since
its inauguration, Riboli Family Wine Estates portfolio has grown to
include multiple different brands. As founding winery of Riboli Family
Wine Estates, San Antonio Winery continues a proud heritage of
winemaking in Los Angeles and Paso Robles that spans four generations
of the Riboli family. The familys commitment to producing awardwinning wines has included investing in vineyards in Californias most
prestigious regions, including the Rutherford AVA of Napa Valley, Santa
Lucia Highlands and Arroyo Seco AVAs of Monterey County and the
El Pomar District and Creston AVAs of Paso Robles. Most recently the
Riboli family has been committed to growing its presence in the awardwinning Paso Robles wine region, opening a state-of-the-art winery
in 2016. Follow Riboli Family Wine Estates on Facebook, Twitter and
Instagram, or visit SanAntonioWinery.com. The award-winning wines
in the Riboli Family Wine Estates portfolio can be enjoyed at their three
tasting rooms located at: 2610 Buena Vista Drive in Paso Robles; 737
Lamar Street in Los Angeles; 2802 S. Milliken Avenue in Ontario.

Mistura
A Peruvian Epicurean Adventure in Paso Robles
Chef Nicola Allegretta has established a Peruvian foodies utopia in Paso Robles,
on the Central Coast. Allegrettas mission is to explore the multicultural personality
of the Peruvian people and society through creative, innovative cuisine reflecting
the diversity of a culture built upon its Inca, Italian, Spanish, Chinese and Japanese
heritage. Chef Nicola and his amazing staff do by creating a bold, exciting menu
that stimulates the guests sense of smell, taste and sight.

Slightly off the Beaten Path

Mistura is a short five minute drive from downtown Paso Robles, located in the
clubhouse of the Paso Robles Golf Course. The restaurant, bar and patio look over
the golf course and surrounding hills, but that is where local ends. Executive Chef
Nicola Allegretta along with Chefs Marco Sturken, Jordan Howard and Kevin Slane
have created dishes and flavors that will transport you halfway around the world
taking you on a gastronomic tour of Peru.

Crafting a Culinary Experience

The dining setting is casual, relaxed and laid back, perfect for the adventure you
are about to begin. You dont come here to just eat or dine; you come to experience
the vibrant cornucopia of the Peruvian peoples personality, expressed through their
food. Focusing on organic and sustainably locally grown produce and vegetables,
sourcing meats and poultry that are free range and organically raised, the emphasis
is on fresh, pure and imaginatively prepared food.

definitely not your typical tasting room, and thats a good thing. Bubbly, dessert
wines and 239! Thats part of what awaits you when you visit the tasting room on
Industrial Way in Buellton.

The Evolution of Wine

Winemaker Mike Brown describes the wine and experience of Helix as
the evolution of wine. Tasting at Helix is meant to be fun, experimental and
experiential. There is no set tasting menu, but you will always be offered three estate
sparkling wines, two dessert wines and a 239 experience! And just WHAT is 239?
Its a fortified white wine (from Grenache Blanc grapes) that adds a new dimension to
creating a wine cocktail. Use it as you would gin, vodka or rum. Mix 239 with your
favorite tropical juice or sparkling soda. It will put a grin on your face.

Martian Ranch
Martian Ranch is the creation of Massachusetts native Nan Helgeland, who
found her inspiration in the vineyards and wines of Santa Barbara County.
After years searching for the perfect property, she purchased this 102-acre
parcel on Alisos Canyon Road in 2006, and named it Martian Ranch the
combined childhood nickname of her two sons: Martin and Ian.
While attending Hancock College, Nan decided to farm the ranch
Biodynamically upon the combined counseling of Peter Sischel, her East
Coast neighbor and Alfredo Koch, department head of viticulture and
enology at Hancock where Nan attended. Both gentlemen farm their
family vineyards Biodynamically in France and Argentina respectively.
After three years of diligence and care, Martian Ranch & Vineyard
became a Demeter Certified, Estate winery in 2015 with 20 acres of
vines planted to 10 different grape varietals, each perfectly suited to the
Mediterranean climate of the ranch. The vineyard was planted in 2008,
with the first Estate vintage in 2011. Estate varietals are a combination of
Rhone, Iberian, Beaujolais and a touch of Bordeaux. Albario, Grenache
Blanc, Viognier, Clairette, Gamay Noir, Mourvdre, Grenache Noir, Syrah,
Cabernet Franc, and Tempranillo - approximately 2 acres planted of each.
Martian Ranch is known for carefully farmed, vibrant and lower-alcohol
wines, with Eric Bolton at the helm as winemaker. Eric graduated Fresno
State University as an Enology major with a minor in chemistry. He honed
his skills throughout California and abroad, bringing a truly unique and
diversified profile to the wines here at Martian Ranch.
Biodynamic principles, which take organic farming to the next level,
strive to create a diversified and balanced ecosystem while focusing on the
health and fertility of the soil Being a closed system, the ranch grows its
own livestock feed and is home to four Irish Dexter cows, Pearl, Petunia,
Louise and Lola, whos manure is used to create healthy compost for the
vineyard. Lunar, solar, and cosmic rhythms are followed for all farming

practices, which create an optimum environment for the vines.
Each part of the growing process revolves around four elements:
root, leaf, flower and fruit. Together, these elements dictate what
will be done in both the vineyard and the cellar and create the
highest expression of harvest. While these farming methods
may be more labor intensive, the quality shows in each bottle,
carefully crafted between the earth and the cosmos.
The tasting room has been open since October 2014 and
offers a wide selection of estate wines. Each wine is named after
a celestial notion, from the Stellar Viognier to Area 52 Grenache
Noir and Mothership Grenache Blanc. Currently there are 14
wines of various vintages being poured in the tasting room
including Down to Earth Ros of Mourvdre, Local Group
GSM and Trente-Duex Late Harvest Viognier.
The most recent addition to the estate is a nature trail walk led
by Nan Helgeland herself through the old oaks of the property as
she shares her knowledge with guests, ending at the picturesque
pond in the vineyard. Separately, a guided meditation at the pond
will be taking place, while you soak up the serenity of the vines
and have the opportunity to enjoy wine after!
Featured in the New York Times, SF Chronicle and Jon
Bonns book, The New California Wine. Experimental and
eclectic, Martian Ranch & Vineyard is dedicated to the journey,
from sky to ground to grape to barrel to bottle and straight into
your glass.

TERRAVANT:

The Winery Restaurant

Your Food and Wine Adventure Begins At The End Of The Road
Is this a winery, tasting room, beer bar, or restaurant? Actually, its all of that plus
a whole lot of fun. Terravant, located at the end of the road on Industrial Way in
Buellton, offers a unique wine tasting and food pairing experience. Whether you come
for lunch, dinner, tapas, elegantly prepared epicurean delights, wine tasting or wine
pairing, Terravant is a true foodie and wine lovers haven. Opened in 2007 as a custom

Its About Wine

wall, this is where your wine adventure begins. Using a chip enabled wine card,
simply select from the 52 wine choices available and pour yourself a taste, a half glass
or a full glass: Pour, sit, sip and savor!
The working winery has over 40 winemakers producing wine here, most of them
being small lot artisan producers, however some labels are more well-known, such as
Dragonette Cellars, Lucas & Lewellen, Coquelicot and Hitching Post to name a few.
Although the on-site emphasis is mostly on the Santa Barbara area, you will also find
select wines from Napa Valley, Paso Robles, the Sierra Foothills, Lodi and other regions.
There are over 15 different varietals to choose from and a range of enticing blends.
The unique pick and pour wine wall puts you in the drivers seat to create a personal
tasting flight, or selected food and wine pairing, course by course. Nowhere in the
surrounding area are so many wines so readily available for tasting and comparing.

EOS WINERY
Be Seduced
Opened in the mid-1980s and acquired by Proprietor Bill
Foley in 2010, Eos has been building a stunning reputation for its
complex whites, bold reds and succulent dessert wines that are fruit
forward, balanced and both readily delicious and approachable.
Eos is named for the Greek goddess of dawn. The myth
concludes with Aphrodite cursing Eos for having an affair with
Ares and her punishment was an insatiable appetite for young men.
At the winery, Eos has an insatiable appetite for great wines, but
unlike the myth, one can hardly call this passion a punishment.
The Eos Winery Hospitality Center is conveniently located
right off Highway 46 East and Airport Road and is appreciated for
its accessibility, expansive tasting room and charming gift shop of
unique gifts and scrumptious snacks. The casual yet educational
environment coupled with picturesque views of the Estate Cabernet
Sauvignon vineyards and rolling hillside makes Eos one of the most
enjoyable stops for wine lovers in Paso Robles.
Eos provides several tasting options to meet the needs and
desires of all guests. The first two options include a tasting
experience of five Eos wines guided by tasting attendants. The
tasting room host will describe each wine as it is poured to help
identify the aromas, flavors and unique personality of each wine.
The Public Tasting is available at the tasting bar for $10 and the
Private Tasting moves guests to either the barrel or banquet room
for a more intimate experience for $15. Eos also offers a Wine &
Cheese Pairing experience for $15 which includes a selection of five
wines hand selected to pair with five delicious cheeses made locally
and internationally. The pairing attendant will give a description of
each wine and cheese to guide through the pairing.
For an elevated experience, Eos offers a Private Tasting and
Lunch perfect for special events or meetings. This includes the
private tasting of five Eos wines, a dedicated tasting attendant
and seated lunch for $35, or guests can select buffet style for $45.
Advance reservations are required for each of these lunch options.

Il Cortile Ristorante Earns Wine Spectator Restaurant Award in 2016 for Third Consecutive Year

Mamas Meatball: Fine Italian Restaurant &

Catering inSan Luis Obispo
Ask locals or somebody in the restaurant businessa bartender,
a waiter, even a bus boywhat they think of Mamas Meatball in
San Luis Obispo and their eyes roll towards the heavens as they
breathe a deep sigh; that is how good Mamas Meatball is. Set in a
small courtyard off of one of the towns main streets in a place called
the Old Creamery, Mamas Meatball is actually divided in two. On
the right is the takeout where people line up to get their orders of
meatballs and more. To the left, fronted by a huge-trunked tree and
a water fountain, is the intimate restaurant with its mural of the
Mediterranean across the back.
Meatballs aside, the restaurant, under owner and chef Nicola
Allegretta, offers a wide range of authentic Italian dishes. Among
them are half a dozen soups, a long list of salads (including grilled
salmon and a refreshing pear and gorgonzola), some wonderful
antipasto choices, both hot and cold paninis (including, of course,
one made with meatballs) and plenty of pasta dishesthe Ravioli
di Pollo all Vodka, homemade ravioli filled with chicken and served
in a vodka sauce, cannot go unmentioned. There is also a heady
selection of meat and fish dishes as well as any number of traditional
and specialty pizzas, and some far too-tempting desserts.
For a visit to the most authentic fine Italian restaurant in town,
head to Mamas Meatball, located in the Old Creamery plaza at 570
Higuera Street in San Luis Obispo.

Wine Tasting in San Luis Obispo County

ts no wonder the people here call

it SLO. No one is in any hurry in
the cafes or on the sidewalks, and
certainly no one is in any rush to leave.
Strangers are genuinely friendly, always
ready to talk about their favorite hiking
trail or barbecue joint, or to point the
way to the winery with the best Pinot
Noir. Its all part of the SLO life, that
combination of good stuff that makes
visiting here so nourishing to the soul.
San Luis Obispos unusual natural
beauty, along with its gentle climate,
first attracted the Spanish padres to the
area in the 1700s. In 1772 they built
the fifth of Californias 21 missions
here, on the banks of San Luis Creek,
and named it Mission San Luis Obispo
de Tolosa. Today, many consider this
the most beautiful of the Spanish
missions.
More than 200 wineries produce
critically acclaimed vintages in Paso
Robles, Edna Valley and Arroyo Grande
Valley. Visitors can head out along the
gorgeous country roads to sip their way
through the vineyards.

Good to Know Before

Heading to the Wineries
BY CHARLES NEAVE
For the most part, going wine
tasting is about the easiest thing in
the world, especially in California
where wineries and tasting rooms
abound. Mostly, wine tasting is a
matter of doing a little research and
planning your day. Here are some
tips that have proven to be helpful
and are designed to help make the
sensory adventure of wine tasting
all the more enjoyable.
Before you start off, pack a few
essentials. Water (plenty of
water) and something to snack
oncrackers or a baguette.
Many wineries have picnic areas
and there are plenty of delis and
bakeries that can make up a lunch
for you, or make your own.
Be sure to nibble during the day and
make time for lunch. Two tips: drink
at least twice as much water as
you do wine, and remember that
you dont have to drink everything
poured into your glass.
Dont be afraid to ask questions.
Time again I have heard
knowledgeable winery workers
say that there is no such thing as
a stupid question, and they mean
that.
You can drink what you want, in the
order you want. If you like reds, say
so; if you dont like sweet wines,
speak up. But the idea of starting
with whites, then going on to reds
and then sweet wines is a good
guide.
If there is a particular wine you want
to try and it is not on the list, ask. Most
tasting rooms are happy to pour a
little if you show enthusiasm.
Look for tasting rooms in towns.
Many of these are cooperative
tasting rooms, where in one place
you might find wines from a
dozen or more small-to-medium
premium producers.

Alapay Cellars
Heavenly Wines from the Central Coast
Avila Beach, long known for being an oceanfront destination,
where the relaxation is key, has been the home for Alapay Cellars
since 2001. Owners Rebecca and Scott Remmenga founded Alapay
(which translates to heavenly or world-above in the Chumash
Native Americans Samala language) and set upon a course in
crafting limited-production wines which highlight the vast flavor
profiles of the vineyards of the Central Coast.
A visit to the Alapay Tasting Room offers guests an opportunity
to peruse the wide selection of whimsical wine gifts and accessories,
all while enjoying tastes of the winerys menu of wines. With more
than ten wines to choose from, guests can taste through the Limited
Release menu of seven wines or add on the Reserve wine tasting
which includes three additional wines.
A tasting experience at Alapay is an adventure of discovering the
terroir of the Central Coast wine growing appellations. The journey
includes both a 2014 Central Coast Chardonnay and a 2015 Bien

Nacido Reserve Pinot Noir. For Rhone enthusiasts a single varietal

Cinsault offers beautiful notes of cherry, strawberry and spice. The
Reserve Syrah is a long-standing favorite of Scotts and the recipient
of the 2016 Double-Gold at the San Francisco Chronicle Wine.

Sinor-LaVallee: A Story of Terroir

Sinor-LaVallee, founded in 1997 by Mike Sinor and Cheri
LaVallee-Sinor, is a chapter in an adventure which began when they
met while attending Cal Poly San Luis Obispo. What started out
as college jobs at local wineries, soon became their passion as they
became more immersed in the craft of winemaking and studying
the art of Pinot Noir. This led to travels abroad, where the couple
not only married in France, but continued their appreciation of the
magnificent terroir of Burgundy and its acclaimed wines. Known
for his determination and enthusiasm, Sinor is recognized as one of
the Central Coasts most highly rated and recognized winemakers
and the recipient of the acclaimed Winemaker of the Year award
for San Luis Obispo County in 2012. Self-taught in the craft of
winemaking, Sinor is winemaker who truly believes great wines
begin in the vineyard.

Bassi Vineyard
Throughout the years Sinor-LaVallee has sourced fruit from
many acclaimed vineyards such as Talley-Rincon, Byron and
Aubaine properties. With the commencement of vintage 2013,
all of the winerys offerings are derived from the estates Bassi
Vineyard. With its close proximity of 1.2 miles from the Pacific
Ocean, the Bassi Vineyard in Avila Valley is paradisiacal. A hilltop
seascape of San Luis Bay to the west welcomes the morning
coastal fog as it casts its maritime influence, combined with
oceanic soils to tell a story of the land -- rich in history, with
viticulture influences which result in complex wines that intrigue
and delight with their layers of aromas and taste, inviting you to

discover more. Organically farmed with biodynamic inputs, the

Bassi Vineyards plantings of Chardonnay, Pinot Gris, Albario,
Syrah and the iconic Pinot Noir, have limited yields lending to a
natural intensity that is a true expression of the location. Sinor
feels that Our wines naturally reflect their pronounced coastal
terroir, as well as the impassioned viticulture handwork that we
bring to our vines and soils. The effect of these elements is highly
local and personalthe hallmarks of Sinor-LaVallee. Our focus
is in learning the story (Terroir)of our Estate vineyard and telling
that story through our wines. The message is the vineyard; the
messenger is the wine.

Tasting Experience
The Sinor-LaVallee Tasting Room is located in picturesque
Avila Beach, a short one block from the beach. With its sunny
location and panoramic view, the tasting room is the perfect
sojourn for wine enthusiasts. An impressive selection of wines
by-the-glass or a $10 Tasting Flight of the winerys White label,
Black (Reserve) label and SLO Estate series are available, along
with a limited quantity of library selections. Wines include a
Chardonnay, Albario, Pinot Gris, Pinot Noir, Syrah and Cuvee.
You can also enjoy a delicious cheese plate from Fromagerie
Sophie, thoughtfully paired with Sinor-LaVallee wines.
Sinor-LaVallee is located at 550 1st Street, Avila Beach. The
tasting room is open ThursdayMonday 12-6pm, with extended
hours in the summer. You may call (805) 459-9595, email: www.
sinorlavallee.com and or check them out on Facebook.

Wine Tasting in Santa Barbara County

38

A Spirit and Passion for Winemaking

O

n the southern end of the Central Coast appellation, lies Santa Barbara Countys historic
wine growing region. The first vineyard production in these rolling coastal hills dates back to
1782, when Junipero Serra planted vines on Mission land. About a hundred years later, there
was 260 acres of luscious vineyards and seventeen winemakers in Santa Barbara County. Sadly,
the Prohibition Era destroyed many of these historic vineyard sites and mostly put an end to
winemaking in the regionas was the case in many of the beautiful winegrowing regions across
the state. With that being said, the spirit and passion for winemaking never left Santa Barbara
County, and this wine growing region is alive and well today. Talented winemakers are producing
outstanding and pure terroir driven wines from the five American Viticultural Areas (AVAs), planted
mostly to Burgundian, Rhne and Bordeaux grape varieties.
Although the movie Sideways is said to have put San Barbara Countys wine growing region on
the map in 2004, especially the Santa Maria Valley AVA, it is the high quality of the wine across
the county that has continued to uphold this bountiful regions reputation. Sprawling vineyards
and gently rolling hills create a picturesque scene for visitors and locals alike, who visit the many
wineries, tasting rooms and wine bars in the area. In the five AVAs, wine tasters will find a nice
range of wine styles amongst the Burgundian, Rhone and Bordeaux varietals that are produced.
In the more northern region, cool climate Burgundian varietals reign, such as Pinot Noir and
Chardonnay, due to the maritime influence. This ensures a long temperate growing season which
the Burgundian varietals crave. With ample amount of sunlight, the grapes ripen very slowly
perfect for producing terroir driven wines with pure varietal characteristics. In the southern region,
there is more of a diurnal shift with warmer nights and cooler days. This area sees less fog and has
different soil types than what is found closer to the coast. The Bordeaux and Rhine varieties flourish
in this warmer climate and the sandy soils with limestone and chalk impart a wonderfully desirable
minerality in the wines.
The wineries in Santa Barbara County boast a concentration of incredibly passionate and talented
winemakers; join them year round at their many events, celebrations and festivals, as well as in
their tasting rooms.

Wine Bar Tasting

The most common tasting

experience is a Wine Bar Tasting.
You step up to the bar where
typically a list of wines being
poured is displayed. Expect to
pay a tasting fee between $10$40. Some tasting bars will offer
you the option to taste a library
or reserve wine. Exercising this
option increases the fee, but will
allow you to taste very unique,
old or rare wines.

Sit Down Tasting

A Sit Down Tasting usually
requires an appointment, and
there may be a slightly higher
fee than a wine bar fee. Seated in
an elegant room, you are poured
several wines by your winery
host. Expect your host to describe
the unique characteristics of each
wine and how it was made.

Walk Around Tasting

8 8
8

A Walk Around Tasting is

a combination of a tour and a
tasting. Your host brings along
several bottles of wine on your
tour, and may take you to a
garden area of the winery to pour
the first round. Then you move to
another place within the winery
to sample the next wine. This
experience continues until all the
wines are tasted.

Barrel Tasting

Another popular tasting

experience that can be part of a
tour or a Walk Around is a Barrel
Tasting. Your guide takes a wine
thief, a special siphon placed
into a hole in the top of a barrel
to extract tasting samples of a
maturing wine. The sample allows
you to taste what the wine is like
in the middle of developing its
full potential.
Why make an appointment?
Some wineries are so small
that they need to know when you
are coming so someone will be
there to greet you. Others have
sit-down tastings that start and
end at specific times. Its always
a good idea to schedule your
appointments well in advance.

Santa Maria
Costa de Oro Tasting Room
Costa de Oro Tasting Room is located right off of Highway 101
in Santa Maria. This site pays tribute to the history behind Costa De
Oroit was the strawberry stand for Gold Coast Farms, the parent
company of Costa De Oro, which has been farming Santa Maria since
1978. Gold Coast Vineyard was planted to 20 acres of Pinot Noir and
10 acres of Chardonnay in 1989, and these grapes were sold to the
areas best wineriesincluding Au Bon Climat. Gary Burk, Costa de
Oro Co-Owner and Winemaker, was fortunate to work in the winery
with Jim Clendenen from 1994-2002, and during this time he began
to make his own wine. Gary started with just one barrel of Chardonnay
and one barrel of Pinot Noir.
Today, Costa de Oro produces over 6000 cases featuring
Chardonnay and Pinot Noir from the estate Gold Coast Vineyard.
The best place to experience the wines is at the tasting room, where
guests can taste five wines for only $10. In addition to regular tasting
room hours (normally 11:00 a.m. to 6:00 p.m. daily), each Friday
evening, Costa de Oro hosts Friday Night Wine Downs featuring
live music from local musicians. Another facet to the Costa de Oro
portfolio is their Wine on Tap. Kegged wine, wine stored and shipped
inside five gallon kegs instead of bottles, has been gaining popularity
throughout the past several years. Costa de Oro started kegging wine

for high-end accounts, like Roys Hawaii. Now these wines, a white and
a red are available in the tasting room by the glass and by the growler
(these can be refilled). Have it read "Costa de Oro Wine Club Members

FOXEN LANE

ST

Bell Street Farm is an acclaimed eatery and market in the heart

of wine country in historic Los Alamos. A must-see destination for
residents and visitors alike, the country chic setting offers a warm
and inviting atmosphere to enjoy a meal, snack, regional beers or
to sample local wines.
I work with local artisans, food purveyors, winemakers and
farmers to create a distinct dining and retail experience at Bell
Street Farm, says Jamie Gluck, owner of Bell Street Farm. The
space is an expression of my lifelong passion for fine foods and we
use only the freshest ingredients found along the California Coast.
The eatery was designed in 2011 and reflects elements found
from the original 1916 building with a modern charm. Gluck
scoured the area to find materials and design elements that would
work with the design. He works with California artisans and
manufacturers to create Bell Street Farm pottery (Los Alamos
ceramicist Ramona Clayton), hand moisturizer and soap (custom
blends from California Baby Organics), extra virgin olive oil and
red wine vinegar, granola, chicken rub (house-made) and many
other select products.
Listed by Yelp as #28 among the countrys Top 100 restaurants,
Bell Street Farms menu offerings include sandwiches with locally
made breads and California cheeses, farm fresh salads with
vegetables and greens from local farms, renowned crispy houseroasted porchetta, rotisserie Red Bird Farm chicken, unique salads
and house-made cookies, pots de creme, sweets and coffee drinks.
All retail offerings are carefully selected to reflect the local area
experience and include picnic baskets, table cloths, candles and
more. Bell Street Farm also offers custom-designed picnic baskets
for groups of two to 200 and holds 3rd Saturdays suppers and
custom dinners and parties, both on-site and at unique locations.

A Historical Site
Founded in 1972, Firestone was the first major estate winery
established in this pastoral Central Coast AVA. Over the past 40
years it has evolved into one of the regions most popular and
successful producers thanks to a portfolio of wines that offer
serious quality at reasonable prices.

Estate Vineyards in the Santa Ynez Valley

Although not a household name, the Santa Ynez Valley actually
has the greatest concentration of wineries in Santa Barbara County.
Prior to Prohibition, the valley had roughly 5,000 acres under
vine. It took until nearly four decades after repeal for commercial
viticulture to reestablish itself. Santa Ynez Valley was granted AVA
(American Viticultural Area) status in 1983 and today boasts more
than 7,500 acres devoted to vines.

The viticultural highlight of Firestone is its 340 acres of estate

vineyards set along a series of mesas composed of sandy loam with
rocky sub-soils. These well-draining soils minimize vine vigor,
which leads to great concentration, accuracy, balance and structure
in all of the wines.
The combination of a long growing season and low-nutrient
soils allows the estate to cultivate an astonishing range of wines.
Firestones reds include Cabernet Sauvignon, Merlot, Malbec,
Cabernet Franc, Syrah and Pinot Noir from the Sta. Rita Hills.
The whites consist of Chardonnay, Sauvignon Blanc, Riesling and
Gewrztraminer.
Firestone boasts one of the most popular tasting rooms in Santa
Barbara County. The lovely visitors center has an expansive island
bar backed by a large picture window that looks out on the vines.
They recently celebrated the release of their new 2014 Santa Ynez

displays flavors of black cherries, lilac, and vanilla all laced with
spice tones of nutmeg and clove.

The Foxen Canyon Wine Trail

Every wine region has that one specific place, an area that clearly
defines the whole of the region in terms of how it best expresses
and interprets the wine. In Santa Barbara County that wine region is
Foxen Canyon. The Foxen Canyon Wine Trail is home to 15 tasting
rooms along its languid path, all of which are flanked by row upon
row of vineyards, which is one of the reasons people flock here, to get
the full wine country experience.
But unlike other wine trails, Foxen Canyon is still agriculture
driven. You wont find any stores, gas stations, restaurants or
shopping. What you will find are bucolic lazy roads which undulate
into flat valleys and ascends to hilltops where the views of open land,
roaming cattle, quail and turkey vultures, verdant vineyards, mature
oak trees and blue skies beckon; a postcard to the past of what
California used to be like. The beans and barley plantings of older
times have been replaced by grapevines but there are still pockets of
bell peppers and other row crops along this country road.
The Foxen Canyon area seems unremarkable in terms of its
diversity however this 30 mile long road shows various micoclimates and topography along the way, and there is a stunning array
represented here. The multitude of wineries have planted a bevy of
grapes including Grenache, Pinot Noir, Chardonnay, Syrah, Cabernet
Sauvignon and Viognier.
The south of the trail, closer to the tasting room hotbed of Los
Olivos, is dominated by full bodied Rhone style wines where the

Follow us on Twitter @WineCountryTW

inland climate is much warmer and where you will find Syrah,
Grenache and Viognier and some of the first Santa Barbara plantings
of Cabernet Sauvignon and Syrah in the early 1970s. In the northern
part of the canyon, leading towards Santa Maria, the Burgundian
styles are more readily available, where the cooler maritime influence
creates a climate perfect for Pinot Noir and Chardonnay. And often
you can see the clouds from the beach just ten miles away. This is
however, California, and that means a greater cornucopia of other
varietals such as Sauvignon Blanc, Negrette, Sylvaner, Sangiovese
and Cabernet Franc which can also be found on the tasting lists
showcasing the assortment of grapes that thrive here.
Most of the wineries have picnic areas; some large and open and
some small and secluded you just need to take your pick. When
visiting the trail its advisable to bring water with you and food as
there are no restaurants and many of the wineries are spread out. By
visiting this unique wine trail youll get in touch with the exceptional
wines of Santa Barbara and at the same time, step back into historic
California.

the fall and spring. Membership will offer many special benefits.
In addition to complimentary tastings members will have the
opportunity to set up private tastings with the vineyard manager
or winemaker. An annual summer BBQ is planned, and pick up
parties at the vineyard will offer club members the opportunity to

meet the Miller family and winemaking team. As the Bien Nacido
team gets to personally know the members and their interests, more
specifically focused wine events will be organized.

A Step Above
A forty year commitment to the community and environment
has garnered an unparalleled reputation for Bien Nacido &

Grapes and produce are farmed, enabling the family to keep
workers employed year round.
Consistent recognition by the wine press: Jeb Dunnick (The

2013 releases; and Antonio Galloni gave high praise to the 2012
Bien Nacido Syrah (96 points) as well as the 2013 Bien Nacido and

Andrew Murray Vineyards
Winery & Visitor Center
Arriving at Andrew Murray Vineyards, you instinctively know a
special treat awaits.

A Passion for Rhones

Andrews wine epiphany happened at the age of 15, while
tasting a Viognier in Vezelay, France, while on vacation with his
parents. This experience began a never ending love affair with
Rhone varietals, leading to 26 years of producing exceptional,
highly respected Rhone wines.
The visitors center itself is comprised of 4 distinct tasting areas,
each offering its own separate personality and ambiance.

A Selection of Tasting Assortments

There are several tasting flight options for you to enjoy when
visiting Andrew Murray Vineyards. The Rhone Zone flight is a
standard tasting of five current release Rhone wines. If you prefer a
tasting including an in-depth tour of the estate, consider the Grape
to Glass option. There is also a chocolate experience, tasting four
wines specifically paired with handmade chocolate truffles from
Jessica Foster Confections of Santa Barbara; sweet and savory. Or,
choose in-depth exploration of Syrah where you can sample wines
from different soil types, experiencing nuances that make each
region specific. Take advantage of The Wine Country Concierge

service to help plan your visit where you will encounter Rhone
wines artfully created by Andrew Murray, described by Robert
Parker as one of the shining stars in the Santa Barbara firmament.

EllEVEN: The Los Olivos Tasting Room

Whereas the winery is dedicated to only Rhones since 1990,
the Los Olivos tasting room, E11EVEN (pronounced eleven),
is devoted to small lot estate wines that exemplify the natural,
locavore and farm-to-bottle movements.
Producing distinctive wines that people fall in love with is
Andrews goal, stating: I hope that you taste my passion and
experience in every sip! Plan a visit each of these locations to
savor Andrews passion and love, with every sip you take.

Los Olivos
Larner Vineyard and Winery
Larner Vineyard & Winery is a 34-acre estate located in
Ballard Canyon in the Santa Ynez Valley, Santa Barbara. Ballard
Canyon is recognized for its excellent grape-growing potential
and is one of Californias newest quality wine regions. Michael
Larner and his wife Christina manage this family-run, boutique
vineyard. Michael makes the wine and Christina oversees the
family gift shop specialized in local crafts, art and wine.
After winemaking internships in France and Italy, Michael
decided to focus on the Syrah grape that shows exceptional
results in Ballard Canyon. In addition to that French variety,
he farms Grenache, Mourvedre, Viognier and a small block of
Malavasia Bianca, a white grape from Italy. He is co-founder of
the recently established Ballard Canyon AVA, a California wine
region that produces the states best Syrah-based wines.

Boutique Farming
Thanks to organic farming and a hands-on approach, Larner
Vineyard & Winery is able to apply individual farming practices to
the many single parcels that make up the property. This allows for
increased flexibility and versatility during harvest. As a result, the
estate sells fruit to two dozen of the Central Coasts most respected
winemakers. The following brands make wine using grapes from
Larner Vineyard: Herman Story Wines, Tercero Wines, Jaffurs Wine
Cellars and McPrice Meyers among others.

The Los Olivos Tasting Room

You are welcome to visit the Larner Vineyard & Winery tasting

A foodie and wine lover, Kimberly will tell you she would purchase
($50) bottles of wine, and pour them down the drain; they were not exciting
and possessed no personality. Following serious health issues, in 2006
she started taking classes at Alan Hancock College, and was fortunate to
meet Wes Hagen of Clos Pepe. Hagen mentored Kimberly for three years,
encouraging her to make her own wine. The initial Pinot Noir, a 2010
Theron spent 18 months in barrel being released in mid-2012. This first
release won Double Gold at Affairs of the Vine, Pinot Shoot Out. The path
was set for this never intended to be a winemaker passionate woman, and
she has never looked back.

Kimberly is not only passionate about the wine she produces, she is
also a purist. Avoiding blending, she crafts only single vineyard, single
clone wines reflecting the terroir the grape comes from. As Kimberly says,
the wines are ready to bottle when they sing. You will experience these
singing wines when you visit the tasting room. To display the character
of the wine, each wine tasting experience is complemented with a small
charcuterie and gourmet bread plate.

The Wine Club Family

Everyone entering the tasting room instantly becomes part of the family;
joining the wine club you cement your relationship, guaranteeing yourself
an ongoing supply of these small lot production gems. There are different
shipment options to choose from, but the most unique factor is that you pick
the wine you want in the shipment. In addition to free tastings and access to
newly released vintages, Kimberly puts on two blow out parties each year
for club members, opening up her home. Each January she hosts a Paella
and Pinot event, and in August is the annual Pork & Pinot event, which
features a pig roast paired with award winning Pinots. Kimberly describes
Pork & Pinot as hedonism at its best. Sign up for the wine club now so you
dont miss this upcoming happening on August 20th. LaMontagne wines are
mostly available only through the tasting room and wine club. Due to the
small production of these premium wines, the wine club is approaching full
capacity.

Buellton
Mosby Winery & Vineyards: a taste of Italy in Santa Barbara County
Winemaker and owner Bill Mosby bought the winery property
with his wife, Jeri, in 1976. Bill planted grape vines immediately,
including Pinot Noir, Gewurztraminer and Riesling. Even though
these first releases received excellent reviews and established Bill as
one of the early wine pioneers of Santa Barbara County, he wasnt
satisfied with the varietals.
Bill became intrigued by Italian wines in 1975, and began to
cultivate Sangiovese and Nebbiolo; the wines were bright and
fruity with clean finishes, perfect for food pairing, and just what
Bill had hoped for. The number of Italian varietals planted in the
Mosby vineyards continued to grow, and in 1980 the Mosby tasting
room was opened in the old Carriage House on the Mosby Estate.

itself exclusively to Italian varietals. Bill began taking regular trips

to Italy, meeting Italian winemakers and gathering information.
His passion for cultivating new and unusual Italian wine grapes
has continued to include lesser-known varietal gems including
Teroldego, Lagrein, and the first domestically-produced Sagrantino.
The new-release 2012 Mosby Dolcetto earned a Gold medal at the
San Franciso Chronicle Competition this year, and Mosby produces
an excellent sparkling wine, the dry Stelline di Cortese, as well as
Italian-style brandies and a raspberry dessert wine. Not satisfied
with the number of varietals produced in his own vineyards,
Bill expanded his production to include several Italian imports.
Fellow winemaker and friend Marco Cavalieri oversees Bills wines
imported from the Marche region, and Italian sparklers for the
Mosby wine club, made specifically from the Erbaluce and Neretto
grapes of Caluso, are imported from the Piemonte region.
Currently, Mosby Winery produces over 18 award-winning CalItalian varietals. All of the wines are limited releases, and available for
sampling in the small tasting room located on the Mosby estate. Visitors
can expect a cozy ambiance, friendly wine educators and a wine tasting
experience that will bring a new awareness of Italian varietals.

Kalyra Winery
Nestled among hundreds of acres of rolling vineyards is
the original Kalyra Winery. With some of the most sweeping
views in the Santa Barbara wine country, Kalyra Winery offers
a laid-back beachcombers vibe to its tasting room and gift
shop. Winemaker, Mike Brown, an Australian who fell in love
with California, is known far and wide for his amazingly broad
selection of wines which includes red/white and dessert wines as
well as sparkling wine and his newest evolution of wine 239
(a wine mixer like no other). Mike Browns flair is blending the
best of Santa Barbara varietals with Australia, Portugal, France
and Spain to produce value priced wines that wine aficionados
of all levels can enjoy.
Youll be served from the bar featured in the Sideways movie

and enjoy browsing the extensive Kalyra Boutique, located next

Carivints Winery
With a tagline of Blending Wine with Philanthropy, you
know theres something different about Carivints Winery in
Solvang. The winerys name comes from the Latin words Caritas
and Vin. Caritas means charity/philanthropy, and Vin means wine,
of course. Blend the two together and you get Carivints.
The winerys labels are all beautiful paintings of animals and
other wildlife, and profits from sales as well as fundraising
Mon-Fri. events

are donated to various local and national animal rescue
groups.
But dont let the beautiful labels and charitable aspects fool you;
the wine is definitely the focus here. Over the years, the wines
have collected many awards and the 2012 Merlot received 91
points and a Cellar Selection from Wine Enthusiast.

Carivints welcomes newbies to the wine world and happily

shares wine knowledge with their guests to educate them on the
basics. A chalkboard tells the essentialssee, swirl, sniff, sip and
savor. They diverge from traditional tasting rooms in everything
from the unpretentious wine-speak to the amenities: theres stools
and chairs so you wont have to stand, board and card games,
and they always have dog treats and a kid area. When we were
planning the tasting room we asked ourselves what has stopped
us from going wine tasting in the past? It was that we had kids
who would not sit still in a tasting room, or we couldnt take
our dog, or that it was stuffy, says Fleet Hamilton, Owner and
Winemaker. We wanted a place where we would want to hang out.
Another unique feature youll notice are the games, videos
and toys they have provided for children. Kids in a tasting
room? Absolutely! Carivints doesnt want the fact that you have
children to stop you from having a good time, so theyve provided
the entertainment for them while you sip on some Merlot. So
bring the kids and your furry friends and visit Carivints Winery,
Monday through Friday 12:00 to 7:00 pm. and Saturday through
Sunday 11:00 am through 7:00 pm, located at 476 First Street in
downtown Solvang. To learn more, visit www.Carivintas.com.

HERZOG WINE CELLARS
A History of Excellence
The story of Herzog Wine Cellars began in the mid 1800s, when
Phillip Herzog made wine for Emperor Franz Joseph of the AustroHungarian Court. The wines were so respected, that Phillip was
made a baron. Generations later, after emigrating from Europe to
New York and eventually California, the direct descendants of Baron
Phillip Herzog continue the family legacy, producing an assortment
of premium kosher wines that are today, sold worldwide.
A visit to Herzog Wine Cellars, located in Oxnard, is indeed an
experience in history, winemaking, gastronomy and is a total pleasure.

FOUR BRIX WINERY

A Gem in Ventura
Three wine-loving couples one day decided to make wine their
livelihood as well as their love. We had a few glasses one night and
the next day it was, oh my god, we have a business! jokes Karen
Stewart, C.O.O. of Four Brix. Her husband, Gary Stewart, is the
winemaker, along with their good friends, are the heart of blending
sessions. We feel the six of us are representative of our varied
customer base. We all have different tastes and tasting abilities,
says Karen.
Blending is big at Four Brix, as most of the bottlings are
Bordeaux, Rhone or Italian blends. The four in its name relates
to the four regions that reflect its bottlings: Italy, France, Spain and
California. Begun in 2008, the winery is located in Ventura, south
of Santa Barbara.

Tasting Room & Event Space

What a delight! may be the first words you say as you enter the
inviting tasting room of Four Brix Winery, in Ventura. Less than an
hour drive from Santa Barbara or the West
San Fernando Valley, Gary and Karen Stewart have established
a wonderful, warm getaway where you can sit, relax, enjoy
wonderful wines, and pair them with a variety of mouthwatering
flatbread pizzas or a gourmet build your own cheese platter.
Big News: A recent expansion, a doubling in size- not only
allows for most wine making space, it also created a place to host
special private and public events. Seating up to 160 guests is now
an option.

winemakers. Their success is evident from their loyal following,

growing from a 750 case producer in 2011 to about 1500 cases
today. The Stewarts and partners are dedicated not only to making
quality wines, but to telling a story at the same time.
Believing California has the best and most diverse terroir,
growing the best grapes in the world, they source over a dozen
varietals from different AVAs, such as Sonoma, Santa Ynez, Paso
Robles and now from their estate vineyard in Ojai.
As they give tribute to wine regions and Californias diverse
grape growing regions, the labels of each wine are individual
tributes also. The story behind each is unique, especially Scosso,
but in order to learn the story behind the name, youll just have to
pay Four Brix a visit!
