Maillard Reaction
What gives cooked meat that tantalizing
appearance, irresistible aroma, and unmatched flavor? When meats are cooked
at high temperatures, a chemical reaction
occurs that produces these desirable
results. The name for this science behind
the flavor is the Maillard reaction.
The Maillard reaction is the result of
basic elements of the food combining,
which yields the distinctive brown color.
