A. Nc dng rau/c:
Nc dng rau c l loi nc dng cho b trong giai on
u b n dm. Nu nh giai on u trong n dm truyn
thng th cc m ngy xa hay dng ng quy bt.
Tuy nhin, giai on ny m X trum s dng ma (l loi
ng t nhin nht v c rt nhiu cht) kt hp vi rau c
va gip ngt nc, va rt lnh cho b trong giai on

5. Cch bo qun hoc tr ng:
Phn nc dng cho vo khay tr ng c chia nh sau:
Nu giai n u tp n, th chia nc dng vo cc khay
vin 25ml. mi ln cho b n ly ra 1-2 vin. Mt vin lm
nc ung trng ming hoc cht nc cho b thm nhp
khi n cho d nut. Nu vin rau, c xay qu kh c th cho
thm 1 vin nc dng cho long ph hp vi b.
Khi b ln hn th bn cho nc dng vo khay 50ml hoc
b hp 4c (70ml) hoc 3c (120ml) (ty cc m).
6. Cch s dng:
Khi n bn ly nc dng ra. quay ln cng rau c, c th
trn chung hoc ring ri cho bt n dm n lin vo
cng (sau khi quay xong cn m 50-60 ) hoc trn chung

B. Nc dng dashi t to b (kombu) v c bo
(katsuo)
Dashi c xem l linh hn ca cc mn n Nht, v c
bit v dashi c ch bin em li v ngt m t nhin (t
c bo) v to b (nhiu axit amin) c cc m Nht s
dng cho b ngay t khi b bt u n dm.
Tc dng ca tng loi nguyn liu:
- To b (Kombu): cha nhiu axt glutamin thin nhin v
cc cht vi lng khc nh st v can xi. Ngoi ra, kombu
cn cha nhiu i-t t nhin rt cn cho no b ca b pht
trin..
- C bo (katsuo) l c ng i dng kh, khi cho vo
nc c v ngt m ca bin.

2. Chn nguyn liu:
Hai nguyn liu chnh lm nc dashi l c bo v to b
(to b khc rong bin vn hay c s dng nu canh

nc dng dashi cho 6 ba mi ba khong 150ml
nc dng cho b ln 8-10m hoc 8 ba mi ba khong

Khong 500ml nc lc
2 ming kombu ( mi ming c chiu di gn 1 gang tay,
rng khong 3-5cm)
1 chn c ng bo kh nh (khong 10g)
3. Cch ch bin:
B1: Lau sch l kombu kh (bng khn m, hoc nhng qua
vo bt nc sch cc m nh khng ra k nh, v lp
phn bn trn b mt kombu c cha cc k nhiu cht
nh.
B2: Ngm trc vo 1 bt nc sch khong 2-3h cho to
b n ra.

B3: Ly Kombu ct khc nh hoc si cho ra ht cht (v


sau c th tn dng lm canh miso rong bin cho c nh
lun).
B4: Cho to b ct nh cng vi 1lit nc vo ni nc
ri bp ln bp. un la va nhit thch hp l 60-90
C. Nu nhit nc thp hn 60oC hoc cao hn 90oC th
nc dashi thu c c mi tanh tanh v cc cht amino
acid khng chit ra c nn nc dashi s mt ngon.
B5: Khi un khng y np, khi thy thnh ni c nhng ht
bong bng nc th lc ny nhit nc ln ti 60oC,
(nu nh ko c bp t bit c bao nhiu cc m c khi
thy ln tn si th cho la nh liu riu trn bp thi) Vy khi
nc ln ti 60oC hy vn la nh ti a.
B4. un nh la cho n khi nc si, cho c bo vo khy
nh nhng, nu c bt ni ln th ta ht ht bt. Ri un nh
la khong 8-10ph na th tt bp.
B5. Dng ry lc ly nc b b s c nc dashi.
