DISCUSSION:
As Restaurant Technologies continues to make progress into non-commercial foodservice and
hospitality (for example hotels, casinos, grocery stores) we are faced with challenges of trying to
pump oil over longer distances and with elevations. The purpose of this Technical Bulletin is to
update the Recommended Maximum Distances guide for line lengths, as found in the RT Install
Manual, and to introduce new charts for determining maximum allowable elevations for known
line lengths. This information will be included in the next update to the RT Technical Manual.

HOW THIS INFORMATION AFFECTS YOU:

The revised Recommended Maximum Distances guide found on Page 2 should be used for
all installs. If the equipment (tanks, fill box, fryers) in the install will be located on the same
floor, the information in this guide is all that is needed.

The charts on Pages 3 thru 8 should be used in addition to the Recommended Maximum
Distances guide for all installs where any of the equipment (tank, fill box, fryers) is located
on different floors. In other words, the Recommended Maximum Distances guide always
applies to every install, with the charts on Pages 3 thru 8 providing additional limitations
whenever elevations are involved.

The information in this Technical Bulletin applies to all systems and fryer types, and all fryer
pump speeds including 8 GPM fryer pumps. Any installation that requires hose lengths or
elevations that exceed the maximum recommendations presented in this Technical Bulletin must
be approved by the Director of Engineering prior to installation.
IMPORTANT UPDATE: Fryer bundles that exceed 120 feet in length must use the 1 ID
black hose assemblies for both fresh and waste hoses. These are available for order from the
corporate warehouse and are provided with 1 NPT ends crimped on. Refer to ECN-097 for
more information.

Recommended Maximum Distances: All equipment located on same floor

The following maximum distances are taken directly from the RT Install Manual, with updates
shown in red. The information in these tables still applies to installs where tanks, fill box and
fryers are on the same floor. For installs where elevations are involved, where equipment is
located on different floors, the information on pages 3 thru 8 should also be used.

INDOOR TANKS
Distance from fill box to delivery truck back panel.
Length of hose from fill box to fresh oil tank.
Length of hose from fill box to waste oil tank:
Fill box on same floor as waste tank, or lower.
Fill box one floor above waste tank.
Highest point of waste hose (fill box to waste tank) as measured
from bottom of waste tank. Can be the fill box itself if thats
the highest point.
Length of fresh oil hose from fresh oil tank to fresh oil pump.
Length of fresh oil hose from fresh oil pump to fryer.
Length of waste oil hose from fryer to waste oil tank.
Height increase from fill box to top of fresh oil tank.
Height increase from top of fresh oil tank to fresh oil pump.

OUTDOOR TANKS
Distance from fill box to delivery truck back panel.
Length of 3 PVC conduit from tank to heated part of
restaurant.
Length of fresh oil hose from tank to fresh oil pump.
Length of fresh oil hose from fresh oil pump to fryer.
Length of waste hose from fryer to waste oil tank.
Height increase from top of tank to fresh oil pump.

RECOMMENDED HOSE AND CABLE SIZES

Fresh oil pressure hose fresh oil pump to fryer.
Waste oil hose waste oil tank to fryer.
4-conductor cable tanks to fryer (BI-3F, BI-2W).
4-conductor cable tanks to fryer (all roll-up systems).
2-conductor cable tanks to fryer.
Fresh oil hose fresh oil tank to fill box.
Waste oil hose waste oil tank to fill box.
2-conductor cable tanks to fill box.

NOTES:
1) Exceeding the elevations/line length combinations in this chart will result in:
a. Poor flow rates for fresh oil. The longer the line, the slower the oil flow.
b. Problems disposing of waste oil.
c. Nuisance trips of the thermal overload on the Add Pump. With long lines, Add
Pumps must work harder and for longer durations, leading to thermal overload
trips.
All of these conditions can combine to create a poor overall system performance that
negatively impacts both the customer and Restaurant Technologies.
2) Use portable tanks if elevations/line lengths exceed the chart.
3) IMPORTANT: Elevation of a fryer bundle is measured from the Add Pump to the point
on the fryer where the bundle connects. See the diagram on the next page.

Cut-away view of a 2-story building showing how to properly measure fryer bundle elevation

Example # 1: I have a potential customer that will require a 180 foot fryer bundle. The tanks
will be on the first floor and the kitchen is on the second floor. The elevation from the Add
Pump to where the bundle connects to the fryer is 30 feet. Will this work?
Answer: From the guidelines in the RT Install Manual (see pg. 2), any fryer bundle greater
than 120 feet in length must use the large hose size. Looking at the chart on Page 3, a 180
foot fryer bundle with 30 feet of elevation falls below the line for the large hose size.
Therefore, this will work if using the large hose size.
Example # 2: I have a potential customer that will require a 90 foot fryer bundle. The tanks will
be on the first floor and the kitchen is on the third floor. The elevation from the Add Pump to
where the bundle connects to the fryer is 50 feet. Will this work?
Answer: Looking at the chart on Page 3, a 90 foot fryer bundle with 50 feet of elevation
falls above the line for the standard hose size, but below the line for the large hose size.
Therefore, the standard hose size will not work but the large hose size will.

NOTES:
1) This chart is based on the fresh oil hose (worst case scenario) and is to be used in
situations where the tanks are located above the fill box, for example on a higher floor.
2) Exceeding the elevations/line length combinations in this chart will result in longer
delivery times and possibly the inability to get fresh oil into the fresh tank.
3) Use portable tanks if elevations/line lengths exceed the chart.
4) IMPORTANT: See the diagram on the next page for how to measure the elevation of the
fill box bundle.

NOTES:
1) This chart is based on the waste oil hose (worst case scenario) and is to be used in
situations where the tanks are located below the fill box, for example in a basement.
2) This chart assumes no booster pump for waste oil.
3) Exceeding the elevations/line length combinations in this chart will result in longer
delivery times and possibly the inability to get waste oil out of the waste tank.
4) Use portable tanks if elevations/line lengths exceed the chart.
5) IMPORTANT: See the diagram on the next page for how to measure the elevation of the
