This unit enables learners to gain understanding of human resource management, employee

Scenario
Since the middle of the twentieth century, in spite of many economic ups and downs, the leading
developed nations of the world have seen many fundamental and far-reaching changes within society.
The major one, with little doubt, must be a vast improvement in economic wealth, which, in turn, has led
to considerable improvements in standards of living for the majority of the people living and working in
these countries. These changes have involved improved productivity and a redistribution of the
workforce away from the primary and secondary sectors into service industries and, increasingly
symbolic of the twenty-first century, into knowledge (information) industries and occupations. From the
hospitality industrys perspective, there are many accompanying societal changes with great

significance for the industrys operators. These include increased disposable incomes, more time for
leisure although it is reported that this trend is reversing in some countries, easier and cheaper travel
and, as a consequence of improved lifestyles and medical services, increased longevity, resulting in
increasing populations and demographic restructuring. Alongside this, the media in their many different
forms are informing and shaping peoples behaviour as never before. The UK hospitality industry, with
its ever-developing range of products and services, has seen vast growth in recent years. The high
streets of towns are now as much a forum of branded restaurants and coffee houses as they are for
general retailers. Admittedly at the top of the scale, some highly skilled workers such as chefs, who are
in short supply, can command very high incomes, but at the other end of the scale, kitchen porters and
cleaners, for example, would earn considerably higher wages for broadly similar work in other
employment sectors. This is in spite of efforts being made by some of the larger companies in the
industry to improve conditions.

Task 1
As you can see from the scenario, the hospitality industry does suffer from poor conditions and
lack of planning in this sector. Therefore, analyse the role of HRM in hospitality industry in
reducing some of the issues that the industry is facing. Also, justify the importance of HRM
planning based on supply and demand and discuss the factors that might impact HRM planning
such as government legislation, economic trends, demographic changes and technological
developments (AC 1.1 and 1.2)

Task 2
Employee relations in hotels and catering is about the management of employment and work
relationships between managers and workers and, sometimes, customers, it also covers
contemporary employment and work practices.
Assess the current state of Employment Relations in Hospitality industry and support your
research by academic references. Consider the role of unionisation eg collective bargaining,
negotiation, consultation; employee participation, involvement and conflict management,
grievance procedures, disciplinary procedures etc. Covering (AC 2.1)
Discuss how employment law affects the management of HR in the hospitality industry. You are
required for this task to take current examples and provide references. Consider relating to
latest employment Acts and think about elements such as Retirements, maternity and paternity
rights, redundancies, terminations etc. (Covering AC 2.2)
Task 3
The Lensbury is a four-star Hotel and Conference Centre and private members club, set within
25 acres of landscaped grounds by the banks of the River Thames at Teddington Lock. The
Lensbury has full leisure and sports facilities including a gym, 25 metre heated pool, 19 tennis
courts and a Water sports centre. They are looking for a pro-active, experienced Hotel
Receptionist to offer exceptional customer service to their members and guests.

Create and discuss a job description and a person specification for the Lensbury Hotel.

Now compare the selection process of different service businesses in hospitality industry
(hotel and leisure & sports facility manager ) using the above job description for the Lensbury
Hotel and highlight some of the obstacles in selecting the right candidates for both hotel and
leisure & sports facility (Covering AC 3.2)

Scenario
Five-star boutique, Dukes Hotel is a large hotels employing a large number of staff. However,
they have recently have had problems among staff in terms of diversity and equal opportunities
where some staff have even been called for disciplinary procedures. They have contacted you
to prepare a plan, go to their premises and deliver a two-day training in order to educate their
staff about the importance of diversity and equal opportunities.
In groups of not more than four, prepare a 15 minutes presentation to assess the contribution
of training and development activities to the effective operation of Dukes Hotel and
demonstrate the two days plan or agenda of what the training should cover in the presentation
at the Dukes Hotel. This can be done in bullet points but you need to explain during your
presentation.
The plan can consist a workshop, seminar, presentation, role play or anything that will make
this training effective. You are required to be as creative as possible. Present the Plan in class
on the deadline given to you. (Covering AC 4.1)
