TOP SPANISH DISHES
COCHINILLO ASADO (ROAST SUCKLING PIG)
The cochinillo asado is cooked and served all over Spain, but is very famous in Segovia. It is a
roast baby pig. Its fatty outside is crisp and perfect for those who like pork rind, while its meat is
tender and juicy.

PULPO A LA GALLEGA (GALICIAN OCTOPUS)
Pulpo a la gallega is Galician's signature dish. The octopus is boiled and the garnished with
paprika, rock salt and olive oil. Sometimes it is also served with boiled potatoes.

PAELLA (SPANISH RICE DISH)
Paella is a saffron rice dish combined with seafish and meat or vegetables. You can eat Paella
in Valencia, particularly in the village of El Palmar, where it is said that paella was invented.

TORTILLA ESPAOLA (SPANISH OMELET)
It is a typical Spanish dish consisting of a thick egg omelette made with potatoes fried in olive
oil and usually onions. There are also many variations. The tortilla may be eaten hot or cold; it
is commonly served as a tapa or picnic dish throughout Spain.

GAZPACHO (COLD TOMATO SOUP)
"Gazpacho" is cool, refreshing and flavorful start to a meal on a hot summer day. It is made
from tomatoes, peppers, potatoes, onions, olive oil and salt. This soup is eaten often in the
southern part of Spain called Andalusia, the region from which is originates. Eat gazpacho from
a soup bowl, or drink it from a glass.

HORNAZO
Hornazo is a meat pie or bread made with flour and yeast and stuffed with pork loin, spicy
chorizo sausage and hard-biled eggs. In Salamanca, it is traditionally eaten in the countryside
during the "Lunes de Aguas" festival.
